Not only is Mac Daddy n' Cheese mad creamy good and the ultimate comfort food, but it's great as a meal or side dish. The only thing that Mac Daddy n' Cheese can't help you with is your low-fat, low-carb diet.

3 c. uncooked large elbow macaroni noodles
2 tbsp. butter
1 1/2 tbsp. olive oil
2 tbsp. flour
1 1/4 c. fat-free milk
1 1/2 c. shredded medium Cheddar cheese
1 c. shredded Monterey Jack cheese
3/4 c. shredded Parmesan cheese

Steps:

  • Boil macaroni noodles until tender (not al dente). Rinse cooked noodles with cold water. Set aside.
  • In a heavy skillet, melt butter and olive oil over medium heat. Add flour to make a roux (see Tips & Techniques below).
  • Lower temperature to medium-low and stir mixture continuously until golden, nutty, and smooth. Be careful not to scorch.
  • Add fat-free milk slowly while stirring. Add 1 cup shredded cheddar and keep stirring. Do not allow the mixture to boil or your cheese sauce will "break." Add 3/4 cup shredded Monterey Jack cheese and keep stirring. Sauce will be thickened and smooth.
  • Turn off the heat on the stove, and turn on your broiler.
  • Add cooked macaroni noodles to cheese sauce and fold to coat noodles. Incorporate 1/2 cup shredded Parmesan cheese into cheese sauce coated noodles. Top with remaining shredded cheese. Stop here for a "stove top" style, or continue to next step if you prefer a baked style.
  • Broil until top is golden brown and crispy.

OLD SCHOOL MAC N' CHEESE



Old School Mac n' Cheese image

This is a completely unpretentious, down-home macaroni and cheese recipe just like my grandma and mom always made. A simple white sauce where you add cheese and a few other flavors with macaroni and a potato chip crust. This recipe makes a lot, I like to make two pans so I can take one to a pot luck and have the other one to keep in the fridge for later. It's an easy recipe to adjust down if you only want to make one pan. If you aren't cooking it right away, just keep the topping separate until you are ready to put it in the oven.

1 ¾ pounds whole-wheat macaroni
¾ cup butter
¾ cup all-purpose flour
6 cups milk, divided
1 tablespoon Worcestershire sauce
1 teaspoon mustard powder
1 teaspoon onion powder
1 teaspoon cayenne pepper
salt and ground black pepper to taste
1 (8 ounce) package shredded Cheddar cheese, divided
3 (8 ounce) packages shredded American cheese
1 (8 ounce) bag potato chips (such as Lay's®), crushed
1 cup shredded Cheddar cheese
⅓ cup grated Parmesan cheese
butter-flavored cooking spray

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes; drain.
  • Melt butter in a large pot over medium-low heat. Slowly add flour to butter, whisking constantly; cook until brown and the mixture no longer smells of flour, about 5 minutes. Pour 1 cup milk into the flour mixture, whisking continually until fully incorporated, about 45 seconds; repeat twice. Add remaining 3 cups milk to the mixture, whisking to incorporate. Stir Worcestershire sauce, mustard powder, onion powder, and cayenne pepper into the mixture; season with salt and black pepper.
  • Reduce heat to low. Cook sauce, whisking frequently, until it begins to thicken, about 10 minutes. Add about half the package of shredded Cheddar cheese; stir continually until the cheese melts completely. Repeat with remaining half package of Cheddar cheese and the American cheese, about 4 ounces at a time. Once cheese is entirely incorporated, remove sauce from heat.
  • Stir drained macaroni into the cheese sauce to coat. Divide macaroni between two 9x13-inch baking dishes.
  • Mix crushed potato chips, 1 cup shredded Cheddar cheese, and Parmesan cheese in a bowl. Top the macaroni with the potato chip mixture evenly. Spray the potato chip mixture with cooking spray.
  • Bake in preheated oven until the crust is golden brown and the sauce is bubbling, 35 to 45 minutes.

This is an adaptation of a recipe that Guy Fieri showed on the show "Guy Off the Hook". We have made it a few times now and each time we are amazed at just how delicious this turns out. But, lets face it, how can you turn down the trifecta of Cheese, Bacon and Heavy Cream?

Number Of Ingredients 14

2 shallots, peeled
3 garlic cloves, peeled
1 teaspoon olive oil
3 pieces bacon, diced, cooked, reserving 1 tablespoon bacon fat
2 tablespoons flour
4 cups heavy cream
2 -4 sprigs fresh thyme
1/2 lb monterey jack pepper cheese, shredded
1/2 lb sharp cheddar cheese, shredded
salt & freshly ground black pepper
1 lb rotini pasta, cooked
1/2 cup panko breadcrumbs
2 tablespoons olive oil
2 -4 sprigs fresh parsley, chopped

Steps:

  • Preheat oven to 350 degrees.
  • Make a little open topped pouch of aluminum foil and place the shallots and garlic in there with a pinch of salt and a bit of olive oil.
  • Roast this for 30-45 min or until tender and just starting to brown.
  • While that is roasting, place the Thyme in a 2 quart saucepan and pour the Heavy Cream on top of it. Place over Medium heat. **Make sure this does not boil, we only want to get it nice and hot.
  • Once the garlic and shallots are done, chop them up and set aside.
  • Reheat the bacon fat in a large saute pan and add the garlic and shallots.
  • Saute for 1 Minute.
  • Add Flour and stir for 1 minute.
  • Grab the Thyme with a pair of tongs and throw it away. Then, pour the hot cream into your large saute pan.
  • Reduce this mixture by about 1/3.
  • Now, stir in your cheeses until the sauce is thick and creamy.
  • Season to taste with Salt and Pepper.
  • Remove from heat and stir in the Pasta.
  • Pour the mixture into a 9x13 baking dish and sprinkle the Bacon, Parsley and Panko over the top.
  • Drizzle the remaining olive oil over the top of everything and bake uncovered until lightly browned and bubbly (about 20-25 min).

4 cups vegetable broth
1/2 cup all purpose flour
2 tablespoons olive oil
6 garlic cloves, Minced
2 pinches dried thyme (crumbled in your fingers)
1/2 teaspoon salt
3 pinches freshly ground black pepper
1/4 teaspoon turmeric
1 1/2 cups nutritional yeast flakes
2 tablespoons fresh lemon juice
2 teaspoons prepared yellow mustard
3/4 lb elbow macaroni or 3/4 lb your favorite pasta
1 lb extra firm tofu
1 teaspoon salt
1 tablespoon olive oil
2 tablespoons fresh lemon juice

Steps:

  • Preheat the oven to 325 degrees F.
  • Bring a large pot of salted water to a boil. Add the pasta and cook according to the package directions. When the pasta is ready, drain and set aside.
  • Meanwhile, prepare the Cheezy Sauce.
  • Whisk the broth and flour in a measuring cup with a fork until dissolved.
  • Saute the oil and garlic in a saucepan over medium-low heat about 2 minutes, stirring often and being careful not to burn the garlic.
  • Add the thyme, salt, and pepper, and cook for about 15 seconds. Add the broth, turmeric, and nutritional yeast, raising the heat to medium. Use a whisk and stir constantly. The mixture will start bubbling and thickening in about 3 minutes; if it doesn't, turn the heat on a bit higher.
  • Once the mixture starts bubbling and thickening, stir and cook for about 2 more minutes.
  • Add the lemon juice and mustard and stir well. The mixture should resemble a thick, melty cheese.
  • Taste for salt (you may need more), turn off the heat, and cover the pan to keep it warm.
  • Now that the sauce is ready, begin assembling:.
  • Crumble the tofu into an 11x13 inch baking dish. Mash the tofu with your hands until it resembles ricotta cheese. Mix in the salt, olive oil, and lemon juice.
  • Add 1/2 cup Cheezy Sauce to the tofu and stir.
  • Add the pasta to the tofu, along with 3 more cups of sauce, and stir well.
  • Smooth the top of the pasta mixture and press it down with a spatula to level it.
  • Pour the remaining sauce over the pasta and smooth again.
  • Bake for 30 minutes; the top of the macaroni should be slightly browned.
  • Let sit for 20 minutes to cool and firm up.

  • For even more comfort food deliciousness, top it with toasted breadcrumbs before going into the oven.
  • Make it even more nutritious with the addition of 4 cups of your favorite greens, chopped small - Spinach is divine.
  • I try to use less fat when I cook. Reducing the oil with the tofu mixture to just a scant teaspoon was still perfectly delicious.

⅔ cup shredded Havarti cheese
¼ cup grated Parmesan cheese
1 ⅓ cups shredded Cheddar cheese

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Place the diced onion in a large pot of lightly-salted water; bring to a boil. Cook the pasta until al dente, 8 to 10 minutes; drain. Transfer the onion and pasta to a casserole dish; season with salt, pepper, and garlic salt. Stir the butter and brown sugar into the pasta mixture until the butter melts. My momma makes the best (and easiest!) deep-dish macaroni and cheese. It's like a baked mac 'n' cheese pie with a combination of smoked Gouda, pepper Jack, mozzarella, cottage cheese, and more. It's one of our family's favorite dishes and a holiday must-have.

3 tablespoons unsalted butter, plus more for greasing
1 teaspoon kosher salt, plus more for boiling
16 oz large elbow macaroni
1 cup sour cream
1 cup cottage cheese
2 cups shredded sharp cheddar cheese, divided
1 cup shredded smoked gouda cheese, divided
1 cup shredded pepper jack cheese, divided
1 cup shredded whole-milk mozzarella cheese, divided
1 can cheese sauce, or cream of mushroom soup
½ cup evaporated milk
½ teaspoon black pepper
¼ teaspoon garlic powder
¼ teaspoon onion powder
¼ teaspoon cayenne
2 large eggs, beaten

Steps:

  • Preheat the oven to 325°F (160°C). Grease a 7 x 11-inch (17 x 27 cm) baking dish with butter.
  • Bring a large pot of salted water to a boil. Cook the macaroni according to the package instructions until al dente, then drain and return to the warm pot.
  • Add butter to the macaroni and stir until melted and the noodles are well coated.
  • In a large bowl, stir together the sour cream, cottage cheese, 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, ½ cup mozzarella, the cheese sauce, evaporated milk, salt, black pepper, garlic powder, onion powder, and cayenne until well combined.
  • Add the sauce to the pot with noodles and mix until fully coated. Season with more salt and black pepper to taste. Stir the eggs until well incorporated.
  • Pour the macaroni into the prepared baking dish and smooth in an even layer.
  • In a medium bowl, toss together the remaining 1 cup cheddar, ½ cup Gouda, ½ cup pepper Jack, and ½ cup mozzarella cheese. Sprinkle the cheese mixture evenly over the noodles.
  • Cover the baking dish with foil. Bake for 30 minutes.
  • Increase the oven temperature to 425°F (220°C). Remove the foil and bake for another 10 minutes, until the cheese is golden brown. Let cool slightly before serving.
