LUMPIA - FILIPINO SHRIMP AND PORK EGG ROLLS
The traditional Filipino egg roll is small in size, but big on taste. More shrimp can be added to your taste, or omitted altogether. They can also be frozen for later consumption. Serve with store-bought sweet and sour sauce or spring roll sauce (available in Asian grocery stores).

- Mix the ground pork, shrimp, onion, carrots, green onions, soy sauce, salt, pepper, and MSG in a bowl until well combined.
- Pull a wrapper off the stack, and cover the remaining wrappers with a damp cloth. Place the wrapper on a work surface. Place a thin line, about the width of your little finger, across one side of the wrapper, 1/2 inch from the edge of the wrapper. Roll the wrapper tightly around the filling, and seal the edges with egg white. Repeat making rolls with the remaining wrappers and filling, and cut the rolls into thirds.
- Heat the oil in a heavy pan or deep fryer to 375 degrees F (190 degrees C). Deep-fry 3 or 4 lumpia at a time, turning once, until the rolls float and turn golden brown, about 3 minutes. Serve hot.

FILIPINO LUMPIA (DEEP-FRIED PORK SPRING ROLLS)

- In a medium bowl, combine the pork with the onion, carrot, garlic, salt, and pepper and mix with your hands until evenly combined. Position 1 spring roll wrapper in front of you like a diamond (so that a point is facing you), and place 1 tablespoon of filling on the diamond's bottom half. Lift the point nearest you and wrap it around the filling. Fold the left and right corners in toward the center, brush the top tip with some of the beaten egg, and continue rolling into a tight cylinder. Transfer to a parchment paper-lined baking sheet and repeat with the remaining wrappers and filling.
- Make the dipping sauce: In a small jar, combine the vinegar, soy sauce, sugar, peppercorns, garlic, and chiles. Shake to mix.
- Pour oil to a depth of 2 inches in a 6-quart Dutch oven, attach a deep-fry thermometer to the side of the pan, and heat to 350°. Working in batches, add the spring rolls to the oil and fry until golden brown and the filling is cooked, about 8 minutes. Using a slotted spoon, transfer the lumpia to paper towels to drain. Season with salt and serve while hot with the garlic-chile vinegar sauce.
APPLE PIE LUMPIA (EGG ROLLS)
Steps:
- For the lumpia: Peel and dice the apples into 1/2-inch pieces.
- Melt the butter in a large saute pan over medium heat. Add the apples and cook until just beginning to soften, 3 to 5 minutes.
- Whisk together the brown sugar, cornstarch, nutmeg, allspice, salt and 1/2 teaspoon of the cinnamon in a medium bowl. Sprinkle the spiced sugar over the apples and continue to cook, stirring occasionally, until the apples have softened and cooked down to half their size and the sauce has a compote-like consistency, about 3 minutes more. Turn off the heat and let cool.
- Beat the egg with 1 tablespoon water in a small bowl. Place 1 egg roll wrapper on a clean work surface, orientated in a diamond shape. Place a heaping 1/4 cupful of the apple mixture onto the lower half of the wrapper. Fold the bottom point up and over the filling, tucking the ends snugly. Fold the side points in towards the center. Brush the remaining top point along the edge with egg wash, and then roll up the filling to completely seal. Repeat with the remaining filling and wrappers.
- Stir together the granulated sugar with the remaining 1/2 teaspoon cinnamon in a shallow bowl or pie plate.
- Line a baking sheet with a wire rack. Add enough oil to come 2 inches up the sides of a heavy-bottomed pot or Dutch oven. Clip a deep-fry thermometer onto the side and heat to 365 degrees F. When the oil has come up to temperature, add the lumpia, 5 or 6 at a time (depending on the size of your pot) and cook until golden brown, rotating halfway through, 4 to 5 minutes. Remove with a spider and drain on the prepared baking sheet. While still warm, toss the lumpia in the cinnamon-sugar to coat, shaking off excess. Repeat with the remaining lumpia.
- For the whipped cream: Add the heavy cream and confectioners' sugar to a chilled large bowl and whip with a hand mixer to soft peaks.
- Cut the lumpia in half and serve with a dollop of sweetened whipped cream.

- In a large bowl, combine pork, garlic, onion, carrot, celery, soy sauce, egg, salt and pepper. Carefully separate the wrappers. To prevent them from drying out as you work, keep a barely damp paper towel over the unused wrappers.
- Lay one wrapper on clean surface. Place 1 heaping tablespoon of the filling diagonally near one corner of the wrapper and gently push the filling into about 4-inch log, leaving a 1½ inch space at both ends. Fold the side nearest to you over the filling, then fold in both sides and roll neatly and tight. Moisten the other side of the wrapper with beaten egg white to seal the edge. Cover the rolls with plastic wrap to retain moisture. Repeat with remaining wrappers. At this point, lumpia can be frozen until ready to use.
- In a deep pan, add the oil to about 1-inch depth and heat to 350°F Make sure the oil is hot enough before adding the wrappers by testing the edge of one. If it sizzles and bubbles, then the oil is ready. Carefully slide the lumpia, a few at a time, into the oil and fry until crispy and golden brown on all sides, 3 to 5 minutes total. Do not overcrowd pan during frying. Remove from oil and drain on paper towels. Ensure that oil is back to 350 degrees before frying the next batch. Serve hot with sweet and sour sauce or other sauce of your choice. Enjoy!
FRESH FILIPINO SPRING ROLLS (LUMPIA SARIWA)
This well-known Philippine starter combines attributes of many of the wrapped foods of other countries. It's filled like an egg roll, has an egg wrapper like a crêpe, and is served warm but not fried. All the components, which can be varied according to what you have in your kitchen, are cooked before assembly.

- 1. Put the oil in a large skillet and turn the heat to medium. A minute later, add the garlic and shallots and cook, stirring occasionally, until fragrant, 15 to 30 seconds. Add the pork and cook, breaking up any lumps and stirring occasionally, until the meat loses its pinkness, about 3 minutes. Add the vegetables and cook, stirring occasionally, until softened, about 5 minutes. Add the salt, pepper, and wine and remove from the heat.
- 2. Lay a lumpia wrapper flat on a work surface and place a piece of the lettuce on top. Line 2 heaping tablespoons of stir-fry mixture on top of the lettuce. Fold in the sides and roll tightly, sealing the seam. If necessary, with a few drops of water spread with a brush or your fingertip. Serve with either or both of the sauces.

- In a large bowl combine the pork, carrot, onion, water chestnut, bamboo shoots, garlic, ginger, soy sauce and pepper.
- Stir mixture until thoroughly combined-at this point you can cover and stick in the fridge over night.
- I lay out about 10 wrappers at a time, roll the meat mixture into cigar shapes about finger thickness-be reasonable-and the length of the wrapper.
- Roll, brush ends with beaten egg and finish the roll to seal.
- Place seam side down on a cookie sheet and repeat until done.
- Bake in a preheated 450 degree oven, turning once for around 20 minutes.
- They should be cooked through and the wrappers are golden brown.
- Serve hot.
- You can make these ahead of time and keep cooked lumpia in the fridge for up to 3 days, or frozen up to 4 weeks.
- To reheat (thaw if frozen) bake on baking sheet in a 450 oven for 10 minutes-turn rolls once.
- Dipping sauce----------------.
- In a 3 quart saucepan mix together the brown sugar, vinegar and soy sauce.
- Stir over high heat until sugar dissolves.
- Mix the cornstarch/water and add to the sugar mixture and stir until mixture boils.
- Remove from heat and stir in ginger.
- Makes 2/3 cup and you can double.

- Place the noodles in a heatproof bowl and pour over boiling water. Leave to soak for 10 minutes (or follow the packet instructions). Once softened, drain and return to the bowl, tossing in a little oil to prevent them from sticking. Set aside.
- Heat 2 tablespoons of oil in a frying pan over a high heat and add the mince. Stirring continuously, fry the ground chicken until cooked through and well browned. Transfer to a bowl and set aside.
- Heat another 2 tablespoons of oil in the pan over a medium-high heat, add the mushrooms and sauté for 2-3 minutes or until cooked through. Add the carrots and bean sprouts and stir for 1 minute, then add the garlic and cook for a further 1 minute. Return the cooked chicken to the pan along with the noodles and spring onions, stirring for a further 1 minute. Finally, add the kecap manis, oyster sauce, fish sauce and lime juice, then continue to cook for a further 2 minutes or until the sauce is clinging to the meat. Taste and adjust the seasoning if necessary. (It is better for the filling to taste fairly strong at this stage because the spring roll wrapper absorbs a lot of the flavor during cooking.) Set aside to cool.
- Lay a clean tea towel over the spring roll wrappers to prevent them from drying out. Line a tray with baking parchment. Cut a chunk of banana with the skin on to use as glue for the spring roll. (Alternatively, you can use beaten egg.) Peel one wrapper off the top of the pile and lay it on a chopping board, facing you like a diamond. Place 1-2 tablespoons of the filling on the bottom third of the wrapper. Roll the bottom corner of the wrapper up over the filling and then continue rolling until you reach the middle. Fold in the left and right corners, then rub the flesh of the banana along the edges of the exposed top corner of the wrapper. (If using beaten egg, brush this on instead.) Finish rolling up the rest of the wrapper and seal the final corner. Place the spring roll on the tray. Repeat with more wrappers until all the filling is used up.
- Fill a deep saucepan one-third full with oil. Heat the oil to 320°F/160°C. (If you do not have a kitchen thermometer, check the oil is at temperature by adding a cube of bread; it should turn golden in 25-30 seconds.)
- Carefully lower 4-6 spring rolls into the hot oil, without overcrowding the pan. Deep-fry for 4-6 minutes or until golden all over. Transfer to a tray lined with paper towels to absorb any excess oil. Repeat with the remaining spring rolls. Serve immediately, with sambal or dipping sauce, if you like.
- Do Ahead: The spring rolls can be frozen in a single layer on a tray, then piled into a bag or container and kept in the freezer for up to 3 months. If cooking from frozen, cook for 6-7 minutes, or until golden. Once cooked they last for up to 2 days in the fridge and can be reheated in the oven for 10 minutes at 325°F/170°C/150°C fan/gas 3.
- Variations
- Vegetable spring rolls: Omit the ground meat from the recipe and instead triple the quantity of carrots, shiitake and bean sprouts. The remaining ingredients should stay the same. If you want to make the recipe vegetarian, replace the oyster sauce and fish sauce with light soy sauce, adding a little at a time until you are happy with the flavor. Once added to the pan, simmer to reduce this extra soy sauce for a couple of minutes.
- Pan-fried spring rolls: Preheat the oven to 400°F/200°C/180°C fan/gas 6. Heat 3 tablespoons of oil in a large pan over a medium-high heat. Gently place the prepared spring rolls in the hot oil, cooking in batches so as not to overcrowd the pan. Continue turning the spring rolls in the hot oil until they are golden all over, about 5 minutes, adding more oil if necessary. Transfer to a tray lined with paper towels to absorb any excess oil, then to a baking tray lined with baking parchment, and finish cooking in the oven for 7-10 minutes.
DEEP-FRIED PORK SPRING ROLLS (LUMPIA)

- Using a serrated knife, cut the square lumpia wrappers in half so that you have two stacks of rectangular wrappers. Place a damp paper towel over the wrappers to keep them from drying out as you work. Combine the pork, garlic, ginger, soy sauce, eggs, and black pepper in a large bowl. Using your hands, or a rubber spatula, mix the filling well so that the seasonings are evenly distributed. Place one of the rectangular wrappers vertically on your work surface with the short edge facing you. Place a heaping teaspoon of the filling on the wrapper about half an inch from the edge closest to you. Grasp the bottom edge of the wrapper and roll it up and over the filling, continuing to roll until 2 inches of wrapper remain. - Heat oil in skillet and saute garlic and onions until tender. Add pork and saute until browned. Add vegetables and cook until tender, yet crisp, about 5-10 minutes. Remove from heat. Season with soy sauce. When mixture is cool, add bean sprouts. Salt to taste. To assemble lumpia: Carefully separate wrappers. To prevent them from drying out, cover unused wrappers with moist paper towel. Lay one wrapper on clean surface. Place about 2-3 tablespoons of the filling near the edge closest to you. Roll edge towards the middle. Fold in both sides and continue rolling. Moisten opposite edge with water to seal. Repeat with other wrappers. Lumpia can be frozen until ready to use. Deep fry at 350 degrees until golden brown, about 3-5 minutes on each side. Drain on paper towels. Serve with sweet sour or vinegar and garlic dipping sauce (recipes below).

- Heat skillet on med-high heat. Add oil.
- Saute garlic and onion.(Till onion turns transparent).
- Add ground beef.Cook till its no longer pink.
- Add chopped carrots,soy sauce and beef bouillion.
- Season with salt and pepper according to taste. When meat mixture is cooked, drain excess oil and let it cool.
- While waiting for the meat to cool down,separate wrappers.
- Put 1 Tbsp -2 Tbsp of filling in the center of the wrapper. And seal the edges with the cornstarch mixture.
- When done wrapping rolls, you can freeze them for later use or deep fry it.
- Heat oil to 350 degrees.
- And 6-8 rolls (depending on the size of your fryer) in the deep fryer,and fry them till they're golden brown.
- Drain on a paper towel.
- Serve with sweet and sour sauce.
- Enjoy!

- Doilies: Combine flour, water and salt to taste and mix thoroughly with a wire whisk to remove lumps.
- Batter should be about the consistency of a crepe batter.
- Add a little water if it is too thick.
- If the batter thickens as it sits, you may have to add more water.
- Heat a 6" crepe pan and wipe out with lightly oiled wax paper.
- Pour on batter quickly to cover the bottom.
- Pour off excess.
- Allow to cook over low heat until the edges begin to curl and pull away from the sides of the pan.
- Remove and place on clean, dry surface.
- Repeat, oiling pan each time.
- Do not stack doilies on top of each other until each has cooled.
- Before filling, put off excess batter to make a perfect circle.
- Filling: Cook pork or beef in a large skillet until pinkness is gone.
- Drain off grease.
- Add shrimp, onions, water chestnuts, bamboo shoots, celery, garlic and carrot; cook until carrot is almost tender.
- Stir in remaining ingredients except the egg white and oil.
- Mix well.
- Cook until bean sprouts are limp.
- Pour mixture into strainer and cool, allowing as much liquid as possible to drain off before filling rolls.
- Use about 1 heaping teaspoon for each doily.
- Place filling near one side.
- Roll doily over filling a couple of times; fold in sides and roll up tightly.
- Seal flap with a little egg white.
- Deep fry in corn oil heated to about 375F degrees, until rolls are golden.
- Drain thoroughly on paper towels and serve with sauce.

This is a recipe that my mom brought back from a military stint in Japan. She has made it for family reunions, and it is always the first thing to go! These can also be prepared ahead and frozen, then deep fried just before you plan to serve!

- Brown beef and pork in a large frying pan with a small amount of oil over medium heat. Drain, place in a large mixing bowl, and set aside. In the same pan, cook the carrots with a splash of soy sauce until tender. Add the vegetables and cook, stirring occasionally, until softened, about 5 minutes. Add the salt, pepper, and wine and remove from the heat.
- Lay a lumpia wrapper flat on a work surface and place a piece of the lettuce on top. Line 2 heaping tablespoons of the stir-fry mixture on top of the lettuce. Fold in the sides and roll tightly, sealing the seam, if necessary, with a few drops of water spread with a brush or your fingertip. Serve with either or both of the sauces.
