3/4 cup chopped onion
2 garlic cloves, minced
1 tablespoon olive oil
1 (46 ounce) jar Ragu tomato sauce or 1 (46 ounce) jar other pasta sauce
1 lb lean ground turkey
16 ounces part-skim ricotta cheese
12 ounces fat free mozzarella cheese, shredded
1/4 cup parmesan cheese, grated
2 Egg Beaters egg substitute
1 (1 lb) package lasagna noodle, cooked

Steps:

  • In a large saucepan, cook ground turkey, onion& garlic in a combination of the oil and nonstick cooking spray. Add sauce and simmer 15 minutes.
  • In a medium sized bowl, mix ricotta,1 cup mozzarella, all of Parmesan and the eggstirs.
  • In 9x13 baking dish, layer 2 cups sauce, half of noodles, half of remaining sauce, all of ricotta mixture, half of what is left of the mozzarella, remaining noodles & sauce.
  • Cover with foil sprayed with cooking spray and bake at 350 F for 45 minutes or until hot.
  • Uncover, top with remaining mozzarella.
  • Bake 15 minutes.
  • Sprinkle some Parmesan on top, let cool down for 15 minutes, and Enjoy your healthy, yet delectable, meal -- with plenty of leftovers to boot!

12 whole wheat lasagna noodles, dry
1 teaspoon olive oil
2 tablespoons olive oil
3 cloves garlic, minced
1 eggplant, cubed
1 (28 ounce) can Italian herb-flavored tomato sauce
1 cup part-skim ricotta cheese
1 cup low-fat cottage cheese
1 cup shredded part-skim mozzarella cheese
¼ cup shredded Parmesan cheese
½ teaspoon salt
½ teaspoon ground black pepper
1 egg
2 ½ cups frozen chopped spinach, thawed and squeezed dry

Steps:

  • Preheat oven to 375 degrees F (190 degrees C).
  • Bring a large pot of water to a boil.
  • Drop lasagna noodles into water and add 1 teaspoon of olive oil. Cook until noodles are tender but still slightly firm, about 8 minutes.
  • Drain water from the noodles and let cool.
  • Heat 2 tablespoons olive oil in a large skillet over medium heat.
  • Cook and stir garlic and eggplant chunks until eggplant is partially cooked, about 7 minutes.
  • Pour tomato sauce into the skillet and simmer until eggplant is tender, 10 to 15 minutes.
  • Combine ricotta cheese, cottage cheese, mozzarella cheese, Parmesan cheese, salt, black pepper, and egg in a bowl.
  • Mix spinach into ricotta cheese mixture.
  • Spread a layer of tomato sauce mixture into the bottom of a 9x12-inch baking dish.
  • Place 4 noodles on top of the sauce, overlapping if necessary.
  • Spoon 1/3 of the remaining tomato sauce over noodles.
  • Spread 1/3 of the ricotta mixture over the tomato sauce
  • Repeat layers twice more, starting with noodles and following with sauce and ricotta mixture.
  • Top the lasagna with mozzarella cheese.
  • Bake in preheated oven until the ricotta filling is set and mozzarella cheese topping is lightly browned, 45 minutes to 1 hour.

2 boneless skinless chicken breast halves, cooked and diced
2 cups shredded part-skim mozzarella cheese
8 tablespoons freshly grated parmesan cheese
1 (24 ounce) container fat-free cottage cheese
1 small yellow onion, diced
1 tablespoon olive oil
12 lasagna noodles
1 yellow bell pepper, diced
8 basil leaves, julienned
1/2 cup fresh parsley, chopped
1 (24 ounce) jar spaghetti sauce (I like Newman's Own)
1 tablespoon coarse garlic salt
1 teaspoon cayenne pepper

Steps:

  • Preheat oven to 375 degrees.
  • In 1 T olive oil saute the onion and bell pepper until translucent.
  • Add chicken and set aside.
  • Spray a 9x13" pyrex dish with cooking spray and spoon about a half cup of the spaghetti sauce on the bottom.
  • Mix the fresh herbs, garlic salt, and cayenne straight into the container of cottage cheese.
  • Layer 4 uncooked lasagna noodles, 1/3 cottage cheese mixture, 1/3 chicken mixture, 1/3 of the remaining sauce, 1/3 mozzerella and 1/3 parmesan.
  • Repeat this process until finished.
  • Cook, uncovered, for about 45 minutes or until bubbly and golden brown on top.

1 (28 ounce) jar reduced-fat spaghetti sauce (you choose brand)
1 (16 ounce) can fat-free chicken broth
2 eggs
2 garlic cloves, crushed
8 ounces part-skim mozzarella cheese, grated
2 cups low-fat ricotta cheese
1/2 lb lean ground beef
1 (10 ounce) package frozen chopped spinach
1 onion, finely chopped
1/2 lb fresh mushrooms, sliced
1/2 teaspoon soy sauce
1 teaspoon balsamic vinegar
8 ounces lasagna noodles (*any brand, don't boil, they will cook in oven)
salt and pepper

Steps:

  • Preheat oven to 350°F.
  • Lightly oil bottom of baking pan.
  • Stir one cup of the chicken stock into the spaghetti sauce and set aside.
  • Whisk the egg.
  • Stir in ricotta cheese and one cup of the mozzarella.
  • Add garlic, salt and pepper and set aside.
  • Brown and drain the ground beef making sure to break it into very small pieces.
  • Season with salt and pepper.
  • Cook the spinach until it is half done, approximately two-thirds of the time indicated on the microwave directions.
  • Sauté the onion in 1/2 cup chicken stock until it is translucent.
  • Cook the mushrooms in the remaining 1/2 cup chicken stock adding the soy sauce and vinegar.
  • Simmer until all liquid is absorbed.
  • Mix together beef, spinach, onions and mushrooms.
  • Build the lasagna starting with a layer of sauce in the bottom of the pan.
  • *Add one layer of the uncooked noodles followed by more sauce, 1/3 of the cheese mixture and 1/3 of the spinach/beef mixture.
  • Repeat two more times, finishing off with the spinach mixture and the remaining sauce.
  • Bake uncovered for 45 minutes, until liquid around the edges has been absorbed.
  • Sprinkle remaining mozzarella on top and bake for 15 minutes more.
  • To freeze: Bake, cool, wrap well, and label. freeze up to 2 months. *Note: You can assemble and freeze without cooking and cook on the day to be eaten!
  • To serve, defrost overnight and then bake until warmed through, or bake from frozen for 1 hour and a half.

1 (650 ml) jar prepared pasta sauce
2 cups vegetable broth, heated
1 1/2 cups low-fat Greek yogurt
1 1/2-2 cups low-fat cheese, grated
2 -4 large handfulls fresh spinach (5-10 ounces)
1 tablespoon olive oil
salt and pepper

Steps:

  • Heat oven to 400°F.
  • In medium saucepan heat up vegetable broth.
  • Add Greek yogurt and half the cheese to the hot broth.
  • Add spinach gradually to the yogurt/broth mixture. Set aside.
  • Drizzle olive oil on the bottom of a 13X9 inch baking dish. Spread a small amount of pasta sauce on bottom of dish.
  • Add a layer of noodles.
  • Spread sauce on top of noodles.

After alot of experimenting, I'm finally happy with it. It's probably not suitable for Atkins because of the noodles, but for anyone on South Beach or Zone or Body for Life, this is great. Generally, I hate the texture of whole wheat pasta, but because it gets cooked twice, it's fine. I served it to people who aren't low carbing, and they loved it! Obviously, you can substitute ground beef for the turkey.

44 ounces Hunts tomato sauce (1 large 29oz. can, 1 medium 15 oz. can)
1 cup chopped green pepper
1/2 cup chopped onion

Steps:

  • Brown meat in large (>3qt) saucepan, drain.
  • Add pepper and onions, tomato sauce, oregano, parsley, nutmeg, garlic powder, sugar, and Splenda. Simmer for 1 hour. Meanwhile, continue with next 3 steps.
  • Cook spinach according to directions, drain well and let cool a little.
  • Cook lasagna according to package directions, drain. (Separate noodles and lay out flat on wax paper or aluminum foil to keep pieces from sticking together as they cool.).
  • Combine ricotta, romano, 1.5 cups of the mozzarella, egg substitute, spinach, salt and pepper for filling.
  • In a 13"x9" baking pan, pour a thin layer of sauce to cover the bottom. Arrange 3-4 pieces (1/3 box) of lasagna lengthwise over sauce. Spread 1/3 cheese filling over noodles, then another layer of sauce. Repeat layers of lasagna, filling and meat sauce.

1 tablespoon olive oil
1 large onion, chopped
1 red capsicum, diced
2 medium zucchini, diced
1 small eggplant, diced
2 1/2 cups sliced mushrooms
1 (415 g) can Italian-style tomatoes, chopped
1 (140 g) carton tomato paste
1 cup water
1 teaspoon salt (or another seasoning or herb of choice I use basil and LOTS of garlic)
4 tablespoons flour
3 cups skim milk
1/2 cup grated low fat mozzarella
8 sheets lasagna noodles
1/2 cup grated cheese, extra

Steps:

  • Pre-heat oven to 180°C.
  • Tomato Sauce: Heat oil in a large saucepan.
  • Sauté vegetables until tender.
  • Stir through tomatoes, tomato paste, water and salt (or other seasonings) and simmer for 15 minutes, stirring occasionally.
  • White Sauce: Place flour in a saucepan or bowl.
  • Gradually add milk, stirring until smooth.
  • Place over medium heat and stir (or microwave on High 100% for 7 minutes, stirring after every minute) until mixture boils and thickens.

  • Preheat oven to 400°F
  • Boil lasagna strips less than full cooking time on package. Mix vegetables with soup. In 9 x 13-inch glass baking dish, spread small amount of sauce. Put 3 strips of lasagna noodles on top.   • Preheat oven to 350°F.
  • Brown ground turkey and season with 1 T Mrs Dash.

4 2 lb's chicken cutlets or boneless skinless chicken breasts
1 eggplant cut length wise 1/4 " slices
1 1/2 c low fat cottage cheese,, low-fat, or fat free ricotta cheese. you may use as much cheese as you wish
1- 1 1/2 c reduced fat mozzarella cheese,or part skim mozzarella. i use part skim
1 small green or red bell pepper,or half a large diced small pieces
1 medium onion diced small piecesm
2 medium garlic pressed or grated
1 tsp oregano, dried
1 tsp basil, dried
1 bay leaf (optional)
4 c marinara sauce,or your choice of sauce
1/2 tsp black pepper
1 c mushrooms sliced and chopped
3/4 tsp garlic salt
1/4 c parmesan cheese

Steps:

  • 1. Preheat oven to broil chicken
  • 2. Place 1/2 cup of sauce in a pan with the peppers,onion,garlic,and onion. Saute in the sauce stirring frequently until vegetables are wilted. (Skip this step If you prefer to cook the vegetables in a tablespoon of olive oil . Then, add Veggies to the sauce.
  • 3. Add the rest of the Marinara sauce to the pan. Add the seasonings,and leave to simmer.

  • 6. Cut the eggplant length wise in to 1/4 inch wide slices. Place on a oiled sheet pan and broil until lightly browned.Set aside.
  • 7. Mix cottage cheese with a dash of basil,and oregano,1/2 the Parmesan cheese,and pepper. In a 9x13" pan. Lay the 1/2 the Eggplant on the bottom. Top with some sauce.
  • 8. Place half the amount of chicken breast over the sauce. Cover chicken with some more sauce. Add the next layer with the cottage cheese mixture.The Marinara sauce, EggPlant, sauce and chicken on top.

1 (29 ounce) jar Ragu chunky tomato onion & garlic sauce (this sauce is only 3grams of fat per serving and is very good!)
olive oil flavored cooking spray
2 large eggplants

Steps:

  • Preheat oven to 425°F.
  • Slice eggplant about 1/4" thick, spray with non-stick spray.
  • Place eggplant on a cookie sheet and bake for about 15-20 minutes or until nicely browned.
  • This can be done ahead of time, like on the weekend, so this is a lot quicker for a weeknight meal.
  • Spray an 8x8-inch baking dish with the non-stick spray and put a small amount of sauce in the bottom of it.
  • Place a layer of eggplant on top of the sauce.
  • Top the eggplant with the 2 kinds of mozzarella and sprinkle a little parmesan on top.
  • Top with a little bit of sauce and continue layering until either the ingredients are used up or you run out of room in the pan (I usually get 3 layers in).
  • Top off with the rest of the cheeses.
  • Bake in a preheated oven 35-45 minutes or until cheeses are melted and sauce is bubbling.

1/2 lb lean hamburger
8 ounces spaghetti sauce
3/4 cup low fat cottage cheese

Steps:

  • Cook noodles in boiling water until flexible but firm.
  • Meanwhile brown Burger till done and drain. Then add spaghetti sauce. If you like, 1/2 C scallions, 2 cloves of garlic and a pinch of sea salt are a nice touch to add when browning, but not needed.
  • Mix Cottage cheese with Parmesan.
  • Layer a bread pan with tin foil. I like to add quite a bit on sides to make the pan skinnier (about the width of a lasagna noodle).
  • Divide Sauce mix into 3 equal parts, the cottage mixture into 2 and the mozzarella into 2.
  • Layer in this order.
  • Sauce and burger mixture *a noodle *cottage mixture *Mozzarella *sauce *Noodle *Cottage *Sauce *Mozzarella.
  • Cover and bake at 350 for 20 min uncover and bake for 10.
  • ******Savor every bite!*******.
  • Serve with warm dinner rolls with melted butter and sprinkle with garlic salt.

16 ounces tomato sauce
4 ounces tomato paste
1/4 cup diced onion
1/4 cup olive oil
4 minced garlic cloves
1 carrot, shredded
1/4 cup fresh parsley
1/2 tablespoon oregano
1/8 teaspoon red pepper flakes
1/4 teaspoon salt and pepper
12 -16 lasagna noodles
1 -2 lb lean ground turkey
1/2 cup low-fat beef broth
16 ounces low-fat ricotta cheese
2 cups lowfat mozzarella cheese

Steps:

  • Cook lasagna noodles according to package. When done rinse and separate. Best if on wax paper.
  • In pan heat olive oil.
  • Add onion and garlic, saute til brown, then carrot.
  • Add tomatoe sauce and paste.
  • Add all herbs, bring to boil.
  • Simmer for 20 minutes.
  • While sauce simmers brown turkey meat with beef broth. This will keep it nice and moist.
  • Pre heat oven to 400 degrees.
  • In a 9X14 pan put tin foil, and spray with cooking spray.
  • Add half sauce.
  • Take lasagna noodle and put one tbs of ricatta.
  • On top of ricatta add tsb of mozzarella.
  • Add 2-3 tbs turkey meat on top of cheeses.
  • Add 1 tbs of sauce on top of everything.
  • Fold noodle in half then over again.
  • Place all roll ups in pan, then put rest of the sauce on top of noodles.
  • Back at 400 for 20 minutes covered.
  • Take out add rest of mozzarella cheese on top.
  • Bake uncovered for 10 more minutes.

1/3 cup flour
3 cups low-fat milk
1 Tbl butter
1 Tbl chopped fresh thyme
1/4 tsp sea salt
1/4 tsp freshly ground black pepper
2 cups freshly grated Parmesan cheese
1/8 tsp grated fresh nutmeg
cooking spray
2 cups thinly sliced onion
6 garlic cloves, minced
1/3 cup low-fat cream cheese
12 cup half-and-half
1/2 cup chopped parsley
3/4 lb. med. shrimp, peeled,
deveined and chopped
3/4 lb. scallops, chopped
3 large eggs
15 oz. carton fat-free ricotta
12 no-cook lasagna noodles

Steps:

  • 1. Preheat oven 350 2. Place flour in large saucepan. Gradually add milk. Cook, whisking constantly until smooth, about 1 min. Stir in butter, thyme, salt, pepper; bring to boil. Cook 5 min. until thick, stirring constantly. Remove from heatl' stir in 1 1/4 cup Parmesan and nutmeg. Set aside. 3. Heat a large skillet and spray with cooking spray. Add onion; saute 4 minutes. Add cream cheese; stir until cheese is melted. Stir in half-and-half; 1/4 cup parsley, shrimp and scallops. In a food processor, combine eggs and ricotta. Process until smooth. Stir into seafood. 4. Spoon 1 cup cheese cause into bottom of 13X9 baking dish coated with cooking spray. Arrange 4 noodles, top with 1/2 of ricotta mixture. Repeat layers with 4 noodles, remaining ricotta mix and remaining 4 noodles. Pour remainign cheese saucew over noodels, sprinkle with remaining Parmesan. Bake for 45 minutes, or until lightly browned. Remove from oven and sprinkle with remaining parsley. Let stand 10 minutes before serving.

This is a recipe I originally got from Cooking Light magazine in 1995. The only change I made was to omit the 3/4 pound of ground round it called for. You can obviously add it if you wish. The prep time includes the simmer time for the sauce. This is a wonderful tasting and filling lasagna that people won't even realize is low fat unless you tell them!

vegetable oil cooking spray
1 cup chopped onion
3 garlic cloves, minced
1/4 cup chopped fresh parsley, divided
1 (28 ounce) can chopped tomatoes, undrained
1 (15 1/2 ounce) can Italian-style stewed tomatoes, chopped &, undrained
1 (8 ounce) can no-salt-added tomato sauce
1 (6 ounce) can tomato paste
2 teaspoons dried oregano
1 teaspoon dried basil
1/4 teaspoon pepper
2 cups fat-free cottage cheese
1/2 cup grated fresh parmesan cheese
1 (15 ounce) container fat-free ricotta cheese
1 egg white, lightly beaten
12 cooked lasagna noodles
2 cups shredded italian provolone cheese

Steps:

  • Coat a pan with cooking spray.
  • Saute onion and garlic 5 minutes.
  • Add 2 tablespoons parsley and the next 7 ingredients.
  • Bring to a boil.
  • Cover and simmer 15 minutes.
  • Uncover and simmer 20 minutes.
  • Remove from heat.
  • Combine the remaining 2 tablspoons parsley, cottage cheese and the next 3 ingredients in a bowl and mix well.
  • Spread 3/4 cup tomato mixture in the bottom of a 13x9 pan, sprayed with vegetable spray.
  • Arrange 4 noodles over tomato mixture.
  • Top with 1/2 cottage cheese mixture, 2 cups tomato mixture and 2/3 cup provolone.
  • Repeat layers, ending with noodles.
  • Cover and bake at 350 degrees for about 1 hour.
  • Sprinkle with remaining provolone and bake uncovered til cheese is melted, about 10 minutes.
  • Let stand 10 minutes before serving.

6 ounces whole wheat lasagna noodles or 6 ounces enriched lasagna noodles
1/2 cup tomato sauce
1/3 cup onion
1/3 cup pepper
1/3 cup mushroom (a mixture of the 3 vegetables)
1 1/2 cups low fat cottage cheese
2 eggs
1 tablespoon parmesan cheese
3 ounces mozzarella cheese, grated
2 tablespoons parmesan cheese

Steps:

  • Cook lasagna noodles in boiling water until tender.
  • Drain and set aside.
  • Combine tomato sauce and chopped onions, peppers and mushrooms.
  • Mix in separate bowl cottage cheese, eggs and parmesan cheese.
  • Preheat oven to 350 degrees.
  • In a 8" x 8" casserole layer half the noodles, the cottage cheese mixture and grated mozzarella cheese.
  • Top with tomato sauce mix and the rest of the noodles.
  • Sprinkle with parmesan cheese.

  • Preheat oven to 180C
  • Boil the lagasana sheets for about 10 mins or until very soft
  • whilst frying the mince in a pan, when mince has cooked add the bolognase sauce into it.pour then mince into a small baking tin
  • then layer on the sheets and spoon on the white sauce making sure you cover all over the sheets.
  • cook for around 20mins or until the top has become light brown and crisp.

1 (28 ounce) can diced tomatoes
1/4 cup red wine
1/4 cup water, approximately
2 teaspoons olive oil
1 medium onion, minced
salt
3 medium garlic cloves, minced or pushed through a garlic press
1/2 teaspoon dried oregano
1/2 teaspoon dried basil
1/4 teaspoon dried thyme
1/8 teaspoon red pepper flakes (optional)
1 lb lean ground turkey (94% fat-free)
8 ounces rotini pasta
1 (8 ounce) can tomato sauce
1/2 cup grated parmesan cheese
ground black pepper
1 cup fat-free ricotta cheese
3 tablespoons chopped fresh basil
2 tablespoons grated parmesan cheese

Steps:

  • Pour tomatoes and juices into a 4-cup measure. Add wine, and enough water to come up to 4 cups.
  • Heat oil in a 12" non-stick skillet over medium heat until shimmering. Add onion and 1/2 teaspoon salt; cook until onion begins to brown, about 5 minutes. Add garlic and red pepper flake. Crush dried herbs in the palm of your hand and add them as well. Stir well until fragrant, about 30 seconds. Add meat and cook, breaking apart, until no longer pink, about 4 minutes.
  • Scatter pasta over the top but do not stir. Pour diced tomatoes with juices and tomato sauce. Cover and bring to a simmer. Reduce heat to medium-low and simmer, stirring occasionally, until pasta is tender, about 20 minutes.
  • Remove from heat and stir in 1/2 cup Parmesan. Season with salt and pepper. Dot with heaping tablespoons of ricotta, cover, and let stand off heat for 5 minutes. Sprinkle with basil and remaining Parmesan and serve.
