LOW-FAT CINNAMON PEACH BANANA BREAD
Succulent fresh summer peaches combine with a low-fat moist banana bread made with greek yogurt and a touch of cinnamon.

Steps:
- Preheat oven to 350 degrees F. Grease a 9-inch loaf pan.
- In a medium mixing bowl, combine flour, baking powder, baking soda, cinnamon and salt together and set aside.
- In a large mixing bowl, whisk together mashed bananas, butter, 1/2 cup brown sugar until well combined.
- Add vanilla and egg and whisk again until well combined. Whisk in diced peaches.
- Add in dry ingredients and yogurt alternatively, folding together well combined.
- Pour batter into loaf pan. Top with thinly sliced peaches and sprinkle 2 tablespoons of brown sugar over the top. Dust lightly with cinnamon.
- Bake for 60-70 minutes, or toothpick comes out almost clean in center.
- Cool for 10 minutes in pan, then remove from pan gently and transfer to wire rack. Cool completely. Cut into thick slices and enjoy!

LOW-FAT PEACH UPSIDE DOWN CAKE
Wonderful old WW Magazine recipe that has far less margarine than other cakes and is huge on flavor. You won't miss the fat.

- Preheat oven to 350 degrees. Pour the melted margarine into an 8 x 8 x 2" baking pan, spreading to coat bottom and sides of pan.
- Arrange peaches in bottom of pan. Place the remaining margarine in food processor; process 10 seconds; add sugar; pulse 20 seconds. Add eggs, vanilla and almond extracts and 2 tablespoons water; process 10 seconds. Scrape down sides of work bowl; add remaining ingredients. Pulse until batter thickens.
- Spread evenly over peaches.
- Bake 25 - 30 minutes, until toothpick inserted in center of cake comes out clean. Cool on rack 2 minutes. Loosen around edges with metal spatula and invert onto serving plate.

LOW FAT BANANA CAKE
This is a spin off of Kittencal's (that genius girl) extreme low fat banana-blueberry muffins. But it was different enough ( I made the muffins a while back), that I decided to post the difference. This cake was wonderful! No one would guess it was low fat with little sugar except the fruit! You can use nonfat sourcream for the yogurt, but I haven't tried that.

- Mix dry ingredients.
- Mash bananas and mix wet ingredients in a seperate bowl.
- Combine wet and dry until dry ingredients are just wet and mixed. Don't overmix.
- Bake at 350 in a 9 x 13 nonstick pan sprayed with Pam for 15 minutes.

This recipe has been in my family (in full-fat version) for years, and one day I decided to try it with alternate low-fat ingredients, and it tasted just as good! Great low-fat, low-calorie, guilt free treat. Frosting is optional.

- Sift together flour, soda and salt.
- Cream butter, sugar and vanilla.
- Add eggs 1 at a time, and bananas.
- Stir in sifted ingredients alternately with sour cream.
- Pour into greased and floured 8x8x2" pan.
- Cook at 350 degrees for 45 minutes.
- Frost when cool with butter frosting flavored with fresh lemon juice.

- Set oven to 350 degrees F.
- Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.
- In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
- In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.
- Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).
- Spread the batter into prepared baking pan.
- Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).
- Cool cake in pan on rack for 10 minutes.
- Loosen sides of cake with a dinner knife or a spatula.
- Invert cake right side up and cool completely.
- Sprinkle lightly with powdered sugar.
