Number Of Ingredients 9

2-1/2 cups all-purpose flour
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/2 cup unsweetened applesauce
1 cup sugar
3 egg whites
3 to 4 medium ripe bananas, mashed (about 2 cups)
1 teaspoon vanilla extract

Steps:

  • In a large bowl, combine flour, baking powder, baking soda and cinnamon. Combine remaining ingredients; stir into dry ingredients just until moistened. Coat muffin cups with cooking spray or use paper liners; fill cups two-thirds full. Bake at 350° for 20-25 minutes or until muffins test done. Cool in pan 10 minutes before removing to a wire rack.

I am now actually "watching" my diet, and in the process am trying to make my favorites in a "low fat" manner. I took my favorite muffin recipes and combined them, made some adjustments and came up with this great recipe. Hope you enjoy them!

3 large bananas, mashed
1/2 cup white sugar
1 egg, beaten
1 teaspoon baking soda
1 teaspoon baking powder
1 cup flour (you can use whole wheat for a change if you like)
1/2 cup rolled oats (instant is fine)
1/3 cup applesauce
1/2 teaspoon salt
1/2 cup chocolate chips

Steps:

  • Add sugar to mashed bananas and mix.
  • Add beaten egg and mix.
  • In a separate bowl mix all dry ingredients.
  • Add dry ingredients to the banana mixture and mix well.
  • Mix in applesauce.
  • Add chocolate chips and Stir.
  • Spoon into medium size muffin tin (I use paper muffin cups so they won't stick) and fill 3/4's full.
  • Bake for 20-25 minutes at 350.
  • Enjoy!

Steps:

  • Mash bananas.

1/2-3/4 cup sugar (or to taste)
2 teaspoons baking powder

1 cup plain fat-free yogurt (can use low-fat yogurt)
3/4 cup mashed ripe banana
2 tablespoons oil
1 egg
1 1/2 teaspoons vanilla

Steps:

  • Set oven to 350 degrees F.
  • Grease a 8 or 9-inch square baking pan or line muffin tins with paper liners.
  • In a large bowl, combine flour, sugar, baking powder, baking soda, cinnamon and salt.
  • In a small bowl, whisk together yogurt, banana, oil, egg and vanilla.
  • Pour over dry ingredients, and gently stir with a spatula until JUST blended (do not over mix).
  • Spread the batter into prepared baking pan.
  • Bake for about 25 minutes, or until the top of the cake is light brown, and edges begin to pull away from sides of the pan (bake slightly less time for muffins).
  • Cool cake in pan on rack for 10 minutes.
  • Loosen sides of cake with a dinner knife or a spatula.
  • Invert cake right side up and cool completely.
  • Sprinkle lightly with powdered sugar.

3/4 cup granulated sugar
1/4 cup firmly packed light brown sugar
2 1/2 teaspoons baking powder
1/8 teaspoon salt
1 cup chopped fresh strawberries
1 cup skim milk
1/3 cup low-fat banana yogurt
1 mashed banana
1 large egg, lightly beaten
1 teaspoon vanilla extract

Steps:

  • Preheat oven to 400 F.
  • Spray a 12 cup muffin pan with vegetable cooking spray or line with paper cups. Set aside.
  • In a medium bowl, combine flour, sugars, baking powder and salt. Mix well. Stir in strawberries.
  • In a small bowl, combine milk, yogurt, banana, egg, and vanilla. Mix well. Add milk mixture to dry ingredients and stir until just combined without overmixing. Fill muffin cups about 2/3 full.
  • Bake until tops of muffins are firm and golden, about 20 minutes. Place on a wire rack and cool for 5 minutes. Turn muffins out onto rack and cool completely.

1 1/2 c bran flakes cereal
5 to 6 bananas, mashed
2 eggs, beaten
1/2 to 3/4 c walnuts or pecans (optional)

Steps:

  • 1. Mix flour, sugar, baking soda, salt, bran flakes and nuts together.
  • 2. Add beaten eggs to mashed bananas, then add these to flour mixture.
  • 3. Line 12-count muffin tin with cupcake/muffin papers. Pour batter into muffin tin. Bake at 350 degrees for 30 minutes.

1/4 oat bran
1 1/2 teaspoons baking powder
1 1/2 teaspoons baking soda

1/4 cup oats
1/4 cup buttermilk
1 1/2 cups mashed bananas (use very ripe fruit)
1 egg
1/4 cup vegetable oil
1/3 cup sugar
1 teaspoon vanilla
2 teaspoons cinnamon
1/4 teaspoon nutmeg

Steps:

  • Preheat the oven to 350 degrees.
  • Combine the oats and buttermilk in a small bowl; let these sit while you prepare the other ingredients.
  • Mix the dry ingredients (including the cinnamon and nutmeg) together in a medium mixing bowl.
  • Mash the banana until it's nearly smooth--measure once the fruit is mashed, of course.
  • Add the egg, oil, sugar, and vanilla.
  • After stirring those together, add in the oat-buttermilk mixture.
  • Add the wet ingredients into the dry, stirring just until the dry ingredients are absorbed and no large lumps remain.
  • Refrain from over-mixing.
  • Grease twelve muffin cups.
  • Spoon the batter in, filling the cups evenly to about 2/3 or 3/4 full.
  • Bake 25-30 minutes, until the top is slightly springy when gently pushed with a finger.

1 cup all-purpose flour
1/2 cup wheat and barley cereal, nuggets (I substituted 1/2 cup oatmeal here since I didn't have this ingredient)
1/2 cup sugar
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
2 medium ripe bananas, mashed (about a cup)
1/2 cup plain nonfat yogurt
1/4 cup egg substitute (I didn't have these either so I used 1/4 cup of eggs(about an egg and a half)
1/2 teaspoon vanilla extract

Steps:

  • Preheat oven to 350°F.
  • Spray 24 mini-muffin-pan cups with nonstick cooking spray.
  • In medium bowl, mix first six ingredients.
  • In large bowl, with wire whisk or fork, mix bananas, yogurt, egg substitute (egg) and vanilla well; stir in flour mixture just until moistened.
  • Spoon batter into muffin-pan cups.
  • Bake muffins 20 minutes or until tops are golden and toothpick inserted in center of muffin comes out clean.
  • Remove from muffin-pan cups to wire racks.
  • Serve warm, or cool to serve later!
  • Note: I made these in heart-shaped pans I bought at a local grocery store.
  • This recipe only yielded four heart-shaped cakes when I did that, and I baked them for about 45-50 minutes.

2/3 cup artificial sweetener

Steps:

  • Mash bananas.

3 bananas, very ripe, mashed, approx one cup
1/2 cup sugar
1/2 cup yoghurt, 1% plain
1/4 cup butter (melted)
1 teaspoon vanilla extract
1 egg
1 egg white
2 cups all-purpose flour
1 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon salt
1/2 cup semi-sweet chocolate chips

Steps:

  • Preheat oven to 350 F.
  • Mix I - mix all ingredients using a hand blender in a large bowl.
  • Mix II - combine all ingredients and combine with Mix I until just just moist and blended.
  • Fill into muffin pans.
  • Bake at 350 F and bake for approx 20 min, until golden on top.

This is my alteration of a Taste of Home recipe, made with handy ingredients. The result is a moist flavorful muffin, not too sweet, but just right for our tastes. High in fiber and low-fat. What else could you want.

2 cups whole wheat flour
1/2 cup oatmeal
2 teaspoons baking powder
1 teaspoon baking soda
1 teaspoon ground cinnamon
1/4 teaspoon clove
1/4 teaspoon nutmeg
1/2 cup sugar
1/2 cup unsweetened applesauce
1/4 cup egg substitute
1/2 cup buttermilk
3 -4 bananas, ripe and mashed
1 teaspoon vanilla

Steps:

  • Mix all dry ingredients in medium bowl, set aside.
  • Mix all wet ingredients in small bowl.
  • Add to dry ingredients and mix till just wet.
  • Spoon batter into muffin tin, sprayed with cooking spray. Bake at 375 for 15 to 20 mins or till test done. Cool on wire rack in tin for 5 mins then remove to rack to cool completely. Store in airtight container in fridge.
