2 cups cooked chicken (chopped)
½ cup mayonnaise
1 stalk celery (chopped)
1 green onion (diced (or chives or red onion))
1 teaspoon dijon mustard
½ teaspoon seasoned salt
pepper to taste
1 teaspoon fresh dill (optional)

Steps:

  • Combine all ingredients in a small bowl and mix well.
  • Season with salt and pepper to taste.
  • Serve as a sandwich or over salad.

1/2 cup reduced-fat mayonnaise
1/3 cup sweet pickle relish
1/3 cup finely chopped celery
1/2 teaspoon sugar
1/4 teaspoon salt
1/4 teaspoon pepper
1 hard-boiled large egg, cooled and minced
2 cups chopped cooked chicken breast
4 slices whole wheat bread, toasted
2 romaine leaves

Steps:

  • Mix the first 7 ingredients; stir in chicken. Line 2 slices of toast with lettuce. Top with chicken salad and remaining toast.

6 c chopped cooked chicken breast
1 c chopped celery
2 Tbsp lemon juice
1 c chopped walnuts
1 1/2 tsp salt
1/2 tsp pepper
1 1/2 c quartered red seedless grapes
1 c mayonnaise
1 1/2 c reddi whip topping

Steps:

  • 1. Combine chicken, celery, lemon juice, walnuts,salt,pepper and grapes. Toss and refrigerate at least 1hour or until well chilled. Mix Reddi Whip topping with mayonnaise until well blended, fold into chicken mixture and serve
  • 2. Once the chopping is completed, this recipe is a breeze. Serve on lettuce garnished with quartered hard-boiled eggs, tomato wedges and olives
