  • Grease a griddle or large pan with nonstick cooking spray or butter and heat over medium heat.

  • Pour approximately 16 mini-cakes onto the hot griddle, and sprinkle each with a few pecans. Cook on each side for only a minute or 2. Serve hot with melted butter or top with a dollop of Low Carb Whipped Cream.

1/2 cup onion (chopped)

Steps:

  • Grate Zucchini.
  • Put in colander in sink and let sit for about 30 minutes to drain.
  • Squeeze out remaining liquid.
  • Transfer grated zucchini to a large bowl.
  • Chop onion and add to zucchini.

My mom invented this recipe a few years ago for our low carb lifestyle. It makes a nice break from eggs. We have often served these pancakes to guests not on a diet and they enjoy them too. It's a great way to get your omega-3's from flax. The recipe is very flexible, and you don't even need to measure the ingredients--just eyeball the proportions, or vary it to suit yourself after you've gotten the idea. I have used sour cream or cottage cheese instead of ricotta, and it works just as well (plain yogurt would be good, too). Cottage cheese makes a very tender, flavorful pancake, but omit the salt because cottage cheese is quite salty compared to the others.

1/2 cup Atkins baking mix
1/2 cup egg substitute or 1 whole egg
1 packet Splenda sugar substitute
1 -4 tablespoon water
1/4-1/2 teaspoon baking powder

Steps:

  • ***Note:I have not tried these as a stack of pancakes with syrup; however, we use them for a bread/bun substitute while on the Atkins diet.
  • Recipe makes 4-5 pancakes; use 2 pancakes to make 1 hamburger bun.
  • ***Mix all ingredients together to form a medium thin pancake batter, adding water to make desired consistency (from thin to medium thick).
  • On medium-hot griddle or frying pan, pour batter to make round pancake the size of your hamburger, or spread batter to desired shape and size.
  • (Make oblong shape for hot dogs, link sausage or bacon).
  • Fry on one side until pancake is cooked enough on the first side to flip it over, about 1-2 minutes.
  • Flip pancake and cook on second side about 1 minute.
  • NOTE: Batter should be rather thin if you plan to use pancakes for wrapping a filling.
  • It should be a little thicker for hamburger buns, but don't make pancakes too thick in relationship to the thickness of hamburger, or you'll have too much bread.

If you do not like to use soy flour, I'm sure you could substitute almond flour in this recipe. I found this on Bob's Red Mill's website. I've modified this recipe to make it low carb and vegetarian. These are not super fluffy and slightly dense. I found these to be very filling and taste great with my Blueberry Pancake Syrup, which is low carb also. ETA: I made this with almond flour and it tasted very good. I needed to add a few spoonfuls of additional coconut flour to thicken the batter.

1 cup soy flour
1/3 cup coconut flour
1 tablespoon baking powder
2 teaspoons cornstarch
1 teaspoon stevia powder (more if you like a sweeter pancake)
2 tablespoons oil
2 eggs
1 1/2 cups soymilk (vanilla)
1 teaspoon lemon juice

Steps:

  • Mix wet ingredients and mix dry ingredients.
  • Pour wet into dry ingredients and mix just until combined.
  • This batter will be thicker than normal pancake batter.
  • Cook in pan/griddle on med heat with oil. (it will not 'bubble' like regular pancakes).
  • Flip when underside is browned.
  • The middle of these pancakes will feel a bit soft on the inside. Once cooled a bit, it will firm up.

I follow the Primal Blueprint eating plan so grain/starch based carbs are a NO NO! Fats, proteins, fruits and veggies however aren't off limits. These use almond meal or almond flour instead of regular flour so they're "meatier" than regular pancakes. These smell like heaven when cooking! ----------------------------------------------------------------------------------------------------------------------------------------------------------------------Top with honey or real maple syrup. Found this recipe on Marksdailyapple.com . Mark notes, "One word of caution on this recipe: I would suggest keeping the size of these almond pancakes on the small side.
