Always on the quest to find good low carb meals, this is one that we all love. Adjust the amount of the Chili Garlic Sauce you use depending on how spicy you like this dish. You can always add more at the table but you can't take it out!! :-) If we are able to have Dreamfield's pasta, I serve this over their spaghetti noodles and it is delicious (add 5 grams of digestible carbs for Dreamfield's). OR it is great just like it is for super low carb!

2 (10 ounce) packages frozen chopped broccoli
1 tablespoon olive oil
1 tablespoon minced ginger (or 1 teaspoon ginger paste)
1 teaspoon minced garlic
3 cups cooked chicken, shredded, about 3-4 chicken breasts
1 tablespoon chili-garlic sauce (you know, the stuff in the jar with the seeds by Huy Fong foods, (FOR ME THIS MAKES IT PRETTY SPICY )
1/4 cup low sodium soy sauce
1 cup low sodium chicken broth
1 (1 g) packet Splenda sugar substitute

Steps:

  • In a large skillet, heat oil over medium high then add the broccoli in a single layer. .
  • Saute for 3 - 4 minutes without stirring until broccoli gets lightly browned.
  • Stir broccoli, add garlic and ginger and saute for another minute or two.
  • Stir in chicken. Cover pan and allow to steam for two minutes.
  • Remove lid and stir in the Chili Garlic sauce, soy sauce, chicken broth and splenda.
  • Stir and simmer until sauce reduces a bit and is not soupy.
  • Serve with extra Chili Garlic sauce and soy sauce on the side.

Steps:

  • Preheat the oven to 375 degrees F (190 degrees C). Lightly grease an 8-inch square baking pan.
  • Heat oil in a skillet over medium heat; stir in onion. Cook and stir until the onion has softened and turned translucent, about 5 minutes.
  • Combine onion with shredded chicken, chili powder, garlic powder, black pepper, seasoned salt, red pepper flakes, and cumin. Stir in 1/2 cup Cheddar cheese and green chiles. Spread in the bottom of the prepared baking pan and top with remaining Cheddar.
  • Whisk milk and eggs together in a bowl. Stir in crushed pork rinds and pour over top of the casserole.

1 medium yellow onion, diced
3 cloves garlic, minced

¼ cup Worcestershire sauce

1/2 teaspoon onion powder
1 tablespoon chili powder
1/2 teaspoon cumin

8 ounces cheddar cheese, shredded (divided - 4 ounce go into the topping)
1 dash hot sauce
8 ounces tomato sauce
4 kosher hot dogs, sliced
2 eggs
1/2 cup mayonnaise
1/4 cup heavy cream
8 ounces cheddar cheese, shredded

Steps:

  • Brown the ground beef and season with onion powder, chili powder, cumin salt and pepper.
  • Stir in the mustard, hot sauce, tomato sauce and sliced hot dogs.
  • Spread in a greased large pie plate; stir in half of the cheese.
  • Beat the eggs well; whisk in the mayonnaise then the cream. Beat well until smooth. Stir in the remaining cheese.

2 teaspoons butter, divided
½ pound ground beef
½ pound pork loin, diced

  • Place cauliflower florets in a food processor; pulse into rice-sized pieces.
  • Melt 1 teaspoon butter in a large pot over medium heat. Cook and stir cauliflower "rice" until soft, 3 to 5 minutes. Transfer to a bowl.

Steps:

  • Turn all ingredients, except the sweetener, into a heavy pot.

5 hot dogs, sliced (optional)

Steps:

  • For the "rice", trim leaves and most of the tough stalks of the cauliflower, then coarsely chop into manageable pieces that will fit the feed tube of your food processor.
  • Using the grating disk, process the cauliflower; put in a 2 1/2 quart casserole with a lid.
  • Add 2-4 tablespoons of water, cover and microwave on HIGH 8-14 minutes.
  • Stir every 4-5 minutes and check for doneness.
  • When tender, but not mushy, add some butter; season with salt and pepper to taste.

  • Stir in tomato sauce, tomato paste, mustard, seasonings and water.

1 small (70g) onion, peeled and diced
2 each (6g) garlic clove, minced
1 1/2 lb (680g) whole boneless/skinless chicken breasts (or equivalent thigh meat)
2 each (130g) poblano chillies, seeds removed and diced
2 each (13.33g) jalepeno chillies, seeds removed and diced
1 lb (454g) tomatillos, leafy wrapper removed, washed and diced
2 each (133.33g) fresh limes
2 tsp (4g) cumin seed, ground
1 tsp (2g) coriander seed, ground
1/2 tsp (1.17g) guar gum (optional)
1/2 tsp (1.5g) xanthan gum (optional)
1 bunch (100g) cilantro, washed and chopped
salt and pepper, to taste

Steps:

  • Place a medium soup pot on the stove, over medium heat. Add the olive oil. Add the onions and garlic to the pot. Season with a small amount of salt and pepper. Sweat veggies, until translucent. Lay chicken on top of onions, in the pot. Season with a little salt and pepper. Cover chicken with poblanos, jalepenos and tomatillos. Season with a little salt and pepper. Use a zester or the fine side of a cheese grater to zest the outside of the 2 limes (just remove the green part, not the white part). Place the grated lime skin (zest) into the pot. Juice the limes, removing the seeds, and add the juice to the pot. Cover the pot, lower the heat to "simmer" and allow the contents of the pot mingle, settle and simmer away for 30 minutes. While this mixture simmers, in a small dry bowl, mix together the cumin, coriander, guar and xanthan gums. Add a small amount of salt and pepper. Blend all ingredients evenly (if you use the guar and xanthan gums, these will thicken the chili and give it a "heartier" feel. Mixing them into the spices will help them more evenly distribute in the chili, without causing any clumping). 2 1/2 lbs ground beef
1/2 large onion (chopped)
8 garlic cloves (minced)
2 (15 ounce) cans diced tomatoes (with liquid)
1 (6 ounce) can tomato paste
1 (4 ounce) can green chilies (with liquid)
2 tablespoons Worcestershire sauce
1/4 cup chili powder
2 tablespoons cumin
1 tablespoon dried oregano
2 teaspoons sea salt
1 teaspoon black pepper

Steps:

  • In a skillet over medium-high heat, cook the chopped onion for 5-7 minutes, until translucent (or increase the time to about 20 minutes if you like them caramelized). Add the garlic and cook for a minute or less, until fragrant.
  • Add the ground beef. Cook for 8-10 minutes, breaking apart with a spatula, until browned.
  • Transfer the ground beef mixture into a slow cooker. Add remaining ingredients, except bay leaf, and stir until combined. Place the bay leaf into the middle, if using.
  • Cook for 6-8 hours on low or 3-4 hours on high. If you used a bay leaf, remove it before serving.

2 pounds 80/20 ground chuck, raw (chili grind or hamburger grind)
1 cup onion, chopped
1 1/2 teaspoons paprika
2 1/2 teaspoons ground cumin
1/2 teaspoon dried oregano leaves (extra points for using Mexican oregano!)
2 teaspoons granulated garlic
1/3-1/2 cup chili powder
1 teaspoon cayenne, add to taste in 1/4 teaspoon increments
1 teaspoon fresh ground black pepper
1 1/2 teaspoons kosher salt
1 tablespoon dried onion flakes
8 ounces Hunt's Tomato Sauce
2 1/2 cups water
Toppings Per Serving (Optional)
1 1/2 tablespoons sour cream
2 tablespoons cheddar cheese, shredded
1 tablespoon onion, chopped

Steps:

  • Crumble meat into a heavy skillet or Dutch oven. Add onion, and half of the spices, except cayenne. Sauté over medium high until meat is mostly browned and onion is tender -about 10 minutes.
  • Add tomato sauce and water and second half of spices. Add 1/4 teaspoon of cayenne pepper. Bring chili to boil and reduce to simmer. Cover and cook for 30 minutes to 1 hour or until meat is tender and flavors have developed. If necessary, add a bit of hot water if the chili cooks down too much and exposes the meat to air. You want the meat to be barely covered with water. You may add more cayenne in 1/4 teaspoon increments until you reach the heat level that suits you best.
  • (Optional thickening step: If you need to thicken the chili, add your choice of thickening gums, or corn bran. Oat fiber also works if you can eat oat fiber, as does glucomannan. We like the flavor and texture of this so much as it is, we don't usually bother with thickening it.)

2 lbs ground beef
1 lb ground turkey (can use beef if you do not like ground turkey)
1 small onion, diced
2 (12 ounce) cans tomatoes and green chilies
1 cup chili powder (yes 1 cup)
1 teaspoon garlic salt
1/2 teaspoon black pepper
1/2 teaspoon cayenne pepper (optional)
1/4 cup splenda artificial sweetener (or more to taste)
1/2 green bell pepper, diced
1/4 cup olive oil

Steps:

  • In large pot add olive oil.
  • Add onion and bell pepper.
  • Sauté for about 2 minutes until onions are translucent.
  • Add garlic salt and black pepper.
  • Put all meat in pan and sauté until fully cooked.
  • Drain 3/4 of oil from pan (leave some in for flavor).
  • Add both cans of tomatoes with chilies; mix.
  • Add chili powder; mix.
  • Add cayenne pepper.
  • Add Splenda; mix well.
  • Let simmer on low heat for at least an hour. The longer it cooks, the better it will taste!
