This Healthy Alfredo Sauce is creamy, delicious, and full of flavor without all the extra fat and calories! Made with almond milk, this Alfredo Recipe is the perfect way to enjoy your favorite pasta dinner on the 21 Day Fix.

4-5 cloves of garlic, minced
1/2 tsp of olive oil or olive oil spray
4 tsp butter, vegan butter, or ghee
4 tsp gluten free or whole wheat flour
1 3/4 cup original unsweetened almond or cashew milk
1/4 cup freshly shredded white cheddar cheese, packed in tight
1/3 cup freshly shredded Parmesan Reggiano cheese, packed in tight
2 T Pecorino Romano cheese (or just sub extra Parmesan cheese)
Fresh ground pepper
1/4 tsp salt + more to taste
a dash of nutmeg and fresh parsley for garnish (optional)

Steps:

  • Heat a ceramic or stainless steel pan over medium low heat. Add in olive oil and garlic. Stir until fragrant, then add in butter.
  • Slowly whisk in flour until well combined with the butter and garlic.
  • While whisking, slowly add in 1 ½ cups of almond milk. Increase heat to medium and allow milk and flour to thicken for several minutes.
  • Once your roux is thickened, reduce heat to low and add in all the cheese, stirring well until the sauce is creamy.
  • If your sauce is too thick, stir in the additional milk. Remove from heat.
  • Add in ¼ tsp of salt (or to taste) and a sprinkle of pepper. Serve with noodles, veggies, and or your favorite protein and top with extra parmesan and garnish with fresh parsley and a pinch of nutmeg.

This lighter version of alfredo gives you all the creaminess of the original without loads of heavy cream and butter.

1 tablespoon unsalted butter
1 clove garlic, minced
1 teaspoon grated lemon zest
2 teaspoons all-purpose flour
1 cup low-fat (2%) milk
Kosher salt
2 tablespoons Neufchâtel or low-fat cream cheese
3/4 cup grated parmesan cheese, plus more for topping
3 tablespoons chopped fresh parsley
12 ounces fresh fettuccine
Freshly ground pepper

Steps:

  • Make the sauce: Melt the butter in a skillet over medium heat. Add the garlic and lemon zest and cook until the garlic is slightly soft, about 1 minute. Add in the flour and cook, stirring with a wooden spoon, 1 minute. Whisk in the milk and 3/4 teaspoon salt and cook, whisking constantly, until just thickened, about 3 minutes. Add the Neufchâtel and parmesan cheese; whisk until melted, about 1 minute. Stir in the chopped parsley.
  • Meanwhile, bring a large pot of salted water to a boil. Add the fettuccine and cook until al dente, 2 to 3 minutes. Reserve 1 cup cooking water, then drain the pasta and return to the pot. Add the sauce and 1/2 cup of the reserved cooking water to the pasta and gently toss to combine, adding more cooking water as needed to loosen. Season with salt. Divide among bowls and top with parmesan and pepper.

Just a remake of one that is already on here... Excellent restaurant quality recipe, just a little less calories and fat. Seems like a lot of calories and fat, but it is a quarter of both the original and tastes the same. Enjoy! PS I like to add Cajun seasoning to make it spicy!

1 (12 ounce) can evaporated skim milk
2 tablespoons grated nonfat parmesan cheese
3 tablespoons butter-flavored sprinkles
1/4 teaspoon white pepper
6 tablespoons grated nonfat parmesan cheese
1/4 cup sliced scallion (garnish)
2 tablespoons chopped fresh parsley (garnish)

Steps:

  • In a saucepan, combine the evaporated skimmed milk, 2 tablespoons grated nonfat Parmesan cheese, 3 teaspoons butter-flavored sprinkles and 1/4 teaspoon ground white pepper.
  • Stir well. Cook on med-low til sauce is heated through.
  • Gently stir in 10 oz of cooked, drained fettuccine pasta.
  • (Add a little more milk if it seems too dry.) Remove pot from heat and add the remaining 6 tablespoons grated nonfat Parmesan and toss.
  • Garnish with scallions and parsley.
  • Serve immediately.

This sauce is lower in fat than traditional Alfredo Sauce but full of flavour. Great as a side with grilled chicken or double it for a meal with meat filled pasta.

1 cup 1% low-fat milk (skim may be used, but creates a thinner sauce)
1 1/2 tablespoons butter
1 1/2 tablespoons flour
3 tablespoons parmesan cheese
1/2 teaspoon minced garlic
1 dash pepper

Steps:

  • The key here is patience, add all ingredients gradually!
  • Melt butter in sauce pan on stove top with medium heat.
  • Gradually whisk in flour.
  • This will create a yellow paste.
  • Gradually add milk, whisking until incorporated and no lumps are present.
  • Continue to whisk until hot.
  • Usually 3-5 minutes.
  • The longer you cook the base (without the cheese) the thicker the sauce will be.
  • Add parmesan slowly, again whisking until incorporated.
  • Add crushed garlic and pepper.
  • Cook for 2 minutes or until cheese is melted.
  • Remove from heat.
