SUNSHINE PASTA SALAD

1 cup mayonnaise
1 cup sour cream
1/2 cup Dijon mustard
Zest of a lemon
1 tablespoon lemon juice
1/2 teaspoon grated garlic
1/2 teaspoon kosher salt
1/2 teaspoon ground black pepper
1 pound penne pasta
Kosher salt
4 cups red grape tomatoes, halved
4 cups yellow grape tomatoes, halved
2 cups frozen sweet corn, thawed
1 red bell pepper, seeded and cut into strips
1 orange bell pepper, seeded and cut in strips
1 yellow bell pepper, seeded and cut in strips
One 16-ounce jar banana peppers, drained and sliced
1 lemon, sliced, for garnishing

Steps:

  • For the sunshine dressing: Add the mayonnaise, sour cream, mustard, lemon zest, lemon juice, garlic, salt and pepper to a medium bowl and whisk until combined.
  • For the salad: Cook the pasta in salted water according to package instructions. Drain and rinse the pasta under cold water. Allow the pasta to dry slightly before assembling; this will help the dressing really adhere to the pasta.
  • Pour the dressing over the pasta in a large bowl and toss to coat. Add the yellow and grape tomatoes, corn, bell peppers and banana peppers and toss gently until evenly mixed. Arrange the salad onto a serving platter and garnish with the lemon slices.

1 cup confectioners' sugar
2 eggs
1/2 cup lemon juice
1/2 teaspoon salt
1/2 pound spaghetti, broken into 2-inch pieces
1 can (20 ounces) pineapple tidbits
3 medium tart apples, diced
1 carton (8 ounces) frozen whipped topping, thawed
1/4 cup chopped walnuts
Maraschino cherries, halved

Steps:

  • In a saucepan, combine sugar, eggs, lemon juice and salt; cook and stir over medium heat until temperature reaches 160° and mixture is thickened, about 4 minutes. Cool completely. , Cook spaghetti according to package directions; drain and rinse in cold water. Place in a large bowl. , Drain pineapple, reserving juice. Pour juice over the spaghetti; stir in apples. Toss gently; drain. Stir in the egg mixture and pineapple. Cover and refrigerate overnight. , Fold in whipped topping just before serving. Garnish with walnuts and cherries.

3 cups uncooked medium pasta shells
1 can (20 ounces) unsweetened pineapple chunks, drained
1 large navel orange, peeled, sectioned and halved
1 cup halved red grapes
1 cup halved green grapes
1 medium apple, chopped
1 large firm banana, cut into 1/4-inch slices
1 cup plain yogurt
1/4 cup orange juice concentrate

Steps:

  • Cook pasta according to package directions; drain and rinse in cold water. Place in a large bowl; add the fruit. Combine yogurt and orange juice concentrate; pour over salad and toss to coat. Cover and chill for several hours.

1 pound spaghetti pasta
1 1/2 cups grated Parmesan
1 (2 pound) cantaloupe, peeled, seeded, and cut into 1-inch pieces to yield about 4 cups
1 cup heavy whipping cream
1/2 stick (4 tablespoons) unsalted butter, diced into 1/2-inch pieces, at room temperature
1/4 cup whiskey
2 tablespoons fresh lemon juice (from 1/2 large lemon)
1 tablespoon kosher salt, plus extra for seasoning
1/2 teaspoon freshly ground black pepper, plus extra for seasoning

Steps:

  • Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring occasionally, 8 to 10 minutes. Drain and place in a serving bowl. Add the Parmesan and toss well.
  • Place the melon in a food processor and blend until chunky. Set aside.
  • In a medium saucepan, heat the cream and butter over medium heat. Bring the mixture to a boil, reduce the heat, and simmer until the butter melts and the mixture is smooth, 2 minutes. Add the melon, whiskey, and lemon juice. Simmer until the mixture thickens, about 10 minutes. Stir in 1 tablespoon salt and 1 teaspoon pepper.
  • Pour the sauce over the pasta and toss until coated. Season with salt and pepper, to taste, and serve.

1 package Creamette Rings (7 ounce pkg)
1 egg, beaten
1/2 cup sugar
1 tablespoon flour
1/4 teaspoon salt
1 can crushed pineapple drained (reserving liquid) (large can)
8 ounces Cool Whip
1 can mandarin oranges, drained (16 ounce can)
1 cup miniature marshmallows

Steps:

  • Prepare Creamette Rings according to package directions. Drain. Cook together egg, sugar, flour, salt and reserved pineapple juice until smooth and thickened. Blend into cooked rings. Chill 1 hour. Remove from refrigerator. Combine rings, pineapple, Cool Whip, mandarin oranges and marshmallows. Chill before serving. 6-8 servings.
