LORI'S CREAMY PIZZA CASSEROLE
Creamy and delicious you're going to love this casserole! The mix of condensed soup and cream cheese make this so creamy. I used ham, pepperoni and Italian sausage as the meat and loved the combo. I added some mushrooms to the top too. Yummy! But customize the recipe to suit your taste. It's quick, easy and feeds a big crowd.

Steps:
- 1. Preheat oven to 350° F. Combine cream cheese, soup, and Italian seasonings, mix well.
- 2. Add into pasta, coating the pasta and put into a large sprayed casserole dish (I like to use a lasagna pan).
- 3. In a small bowl, combine mozzarella and Parmesan.
- 4. Sprinkle 1/2 on top of the pasta mixture.
- 5. Place meat choices over cheese.
- 6. Spread pizza sauce over the meat mixture.
- 7. Top with bell pepper, onions, and any other toppings. Top with remaining cheese. Bake in the oven until it is bubbly. I place it under the broiler for a few minutes to allow the cheese to turn golden brown.
- 8. NOTE** The fat can be reduced in this recipe without changing the flavor. I use Neufchatel (lower fat) cream cheese, reduced fat/reduced sodium Fit N' Active Cream soup, mozzarella is already one of the healthiest cheeses, and a good healthy sauce. Hunts makes a great naturally low fat spaghetti sauce that is chunky vegetable (with zucchini, tomatoes, onions, peppers, and more). I do add a bit more seasonings. My family usually can't tell the difference when I get those veggies in this way!! To have a really quick dinner, use toppings that don't need to be cooked, like pepperoni, diced ham, real bacon bits.

- Preheat the oven and prepare the casserole dish: Preheat the oven to 375°F. Grease a 9x13-inch casserole dish with cooking spray. Set it aside.
- Cook the pasta: Fill a large pot with water, season the water generously with salt, and bring it up to a boil over high heat. Cook the pasta in the boiling water according to the package instructions, until al dente. Strain the pasta into a colander placed in the sink and set it aside.

Steps:
- Cook and drain ground beef, crumbling as you cook.
- Spray the inside of slow-cooker with vegetable spray to minimize sticking.
- Add mushroom soup, cream of chicken soup, milk, seasonings and cheese to slow-cooker.
- Stir in ground beef and pasta.
- Mix well.
- Cook on low for 4 to 5 house depending on type of pasta used.

LAWRY'S SOUR CREAM TORTILLA CASSEROLE
This recipe is an inexpensive but filling side dish that was served at Lawry's California Center before closing its doors. It's from "Dear S.O.S. Thirty Years of Recipe Requests to the Los Angeles Times". It isn't low cal by any means, but every dieter needs a day off once in a while--and this is a splurge that is worth every bite! Heck, I'll run an extra mile for this!

Steps:
- Saute 1/2 cup onion until tender.
- Add tomatoes, seasoning mix, and chile salsa.
- Simmer 15 to 20 minutes.
- Set aside to cool.
- Fry tortillas lightly in small amount of oil, just until soft.
- Pour 1/2 cup sauce into bottom of 13x9-inch baking pan.
- Arrange layer of 4 tortillas over sauce (tortillas can overlap).
- Top with 1/3 of remaining sauce, 1/3 of remaining onions, and 1/3 of cheese.
- Repeat layering procedure twice.
- Combine sour cream and seasoned salt, spread over cheese to edge of pan.
- Sprinkle lightly with seasoned pepper.
- Bake at 325 degrees for 25 to 30 minutes.
- Cut into squares.
