The tattered recipe in my files is a good indication of how popular these doughnuts have been in our family over the years. They disappear in a hurry, so I typically double the recipe.

1 package (1/4 ounce) active dry yeast
1/4 cup warm water (110° to 115°)
1 cup warm milk (110° to 115°)
1/4 cup butter, softened
1/4 cup sugar
1/2 teaspoon salt
1 egg
3-1/4 to 3-3/4 cups all-purpose flour
Oil for deep-fat frying
GLAZE:
1-1/4 cups confectioners' sugar
1 tablespoon brown sugar
1 tablespoon water
1/2 teaspoon vanilla extract
1/8 teaspoon salt

Steps:

  • In a large bowl, dissolve yeast in warm water. Add milk, butter, sugar, salt and egg and 2 cups flour. Beat until smooth. Stir in enough flour to form a soft dough. , Do not knead. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour. , Punch dough down. Turn onto a lightly floured surface; roll into a 12x8-in. rectangle. Cut into 3x1-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , In an electric skillet or deep-fat fryer, heat oil to 400°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine glaze ingredients. Dip tops in glaze while warm.

3 (.25 ounce) envelopes active dry yeast
½ cup warm water
½ cup shortening
1 cup boiling water
1 cup canned evaporated milk
2 eggs, beaten
½ teaspoon ground nutmeg
½ cup white sugar
2 teaspoons salt
8 ½ cups all-purpose flour
1 quart oil for frying, or as needed
¾ cup confectioners' sugar
1 tablespoon water, or as needed

Steps:

  • In a small bowl, dissolve the yeast in 1/2 cup lukewarm water. Set aside until bubbly, about 10 minutes. In a large bowl, dissolve shortening in 1 cup of boiling water. Cool to lukewarm.
  • Mix the evaporated milk, eggs, nutmeg, sugar and salt into the shortening and water. Stir in the yeast mixture and one cup of the flour until well blended. Gradually mix in remaining flour 1 cup at a time until dough is firm enough to remove from the bowl. Knead for about 5 minutes on a lightly floured surface, or until smooth. Let rest for 10 minutes.
  • Roll the dough out on a floured surface to 1/4 inch thick. Cut into strips 1 inch wide and 6 inches long. Place onto waxed paper, and let rise until doubled in size, about 1 hour.
  • Heat oil in a deep-fryer or large heavy skillet to 350 degrees F (175 degrees C). Carefully remove the Long Boys from the waxed paper and place a few at a time in the hot oil. Fry for about 3 minutes per side, or until light brown. Set over wire racks to drain. Drizzle with glaze.
  • To make the glaze, mix the confectioners' sugar with enough water to make it able to drizzle in a long strand. Adjust amounts if necessary.

2 packages (1/4 ounce each) active dry yeast
1/2 cup warm water (110° to 115°)
1/2 cup half-and-half cream
1/4 cup sugar
1/4 cup shortening
1 large egg, room temperature
1 teaspoon salt
1/2 teaspoon ground nutmeg
3 to 3-1/2 cups all-purpose flour
Oil for deep-fat frying
MAPLE FROSTING:
1/4 cup packed brown sugar
2 tablespoons butter
1 tablespoon half-and-half cream
1/8 teaspoon maple flavoring
1/2 cup confectioners' sugar
CHOCOLATE FROSTING:
2 ounces semisweet chocolate, chopped
2 tablespoons butter
1/2 cup confectioners' sugar
2 tablespoons boiling water

  • In a large bowl, dissolve yeast in warm water. Add cream, sugar, shortening, egg, salt, nutmeg and 3 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky)., Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour., Punch down dough; divide in half. Turn onto a lightly floured surface; roll each half into a 12x6-in. rectangle. Cut each portion into twelve 3x2-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes. , In an electric skillet or deep fryer, heat oil to 375°. Fry long johns, a few at a time, until golden brown on both sides. Drain on paper towels., For maple frosting, combine brown sugar and butter in a small saucepan. Bring to a boil, stirring to dissolve sugar. Remove from heat; stir in cream and maple flavoring. Add the confectioners' sugar; beat for 1 minute or until smooth. Frost cooled long johns., For chocolate frosting, in a microwave, melt chocolate and butter; stir until smooth. 1/2 teaspoon vanilla extract
1/2 cup sugar
1/4 cup shortening

3 teaspoons yeast
1 cup boiling water
1/2 cup warm water
1 cup evaporated milk
2 eggs
1/2 teaspoon lemon flavoring

8 1/2-9 cups flour

Steps:

  • Combine shortening and boiling water.
  • Stir in milk.
  • Stir in lemon flavoring.
  • Dissolve yeast in warm water.
  • Stir yeast mixture into shortening mixture.
  • When well blended add remaining ingredients.
  • Add just enough flour to knead well.
  • Knead on floured board for about 5 minutes.
  • Let rest 10 minutes.
  • Roll out 1/4 inch thick.
  • Cut into strips 1" by 6" cover.
  • Let rise 1 hour.
  • Heat deep fat fryer to 375°F.
  • Slip raised side in fat first.
  • When browned, turn. This gives flat side time to raise.

This is such a delicious recipe. and quite simple- you will be delighted with the results too! My dad always liked these filled with cream filling- mom always some of each.

3/4 cup(s) traverse city cherries(black cherries,pitted and mashed
8 medium egg yolks
3 tablespoon(s) cornstarch
1 3/4 cup(s) water
14 ounce(s) can sweetened condensed milk

Steps:

  • Long Johns: In a large saucepan, combine the water,butter, and salt; bring to a boil and then immediately add the flour.(this is just like making cream puff dough). Stir mixture constantly over medium heat for 5 minutes to get a thick dough.
  • Pour dough into a mixer bowl with a paddle; gradually add the eggs while mixing until the mixture becomes smooth. Place mixture into a piping bag with a round nozzle and make 4 to 5 inch long -Long Johns..or just drop batter elongated on a parchment covered baking pan. Brush Long Johns with a beaten egg and bake in a preheated oven at 450^ for 15 minutes then turn oven to 325^ for and bake for another 25 minutes; or until they get a crispy texture and light brown in color.
  • Cherry Custard Filling: Put the cherry puree in a saucepan over medium heat for 10-15 minutes, reduce mixture to half and then set aside to cool.
  • In a bowl, whisk the egg yolks and cornstarch. Boil the water and sweetened condensed milk in a saucepan and then add the egg yolk mixture. Cook over low heat until a firm thick texture appears; add the cherry puree, mix and set aside for 10 minutes, then cool in the refrigerator for 15 minutes.
  • Slice the baked Long Johns in half lengthwise and fill them with the cherry custard. Try your best not to overfill them. Enjoy!

SUNDAY SURPRISE (I CALL THEM LONG JOHNS )

Depending on where you are from these are called many things as children we called them Long Johns, the Amish cut them lenth wise and fill them with whipped cream dust with powdered sugar they call them cream sticks and I have also heard them called Maple sticks for the frosting that you can frost with. This is my Mother's recipe, don't know where she got it but it is at least 50 years old.

  • Pour on to flour ed surface knead dough till no longer sticky about five minutes.
  • Put in greased large bowl let raise 1 hour or till double in size.
  • Remove from bowl put on floured surface roll out till about 1 inch thick. Cut in long strips about 3in. Longx 2 in. Wide.
  • Let raise on greased cookie sheet till double covered.
  • In a heavy pan or a flyer fry till golden brown, drain on paper towels till cool frost with favorite frosting.
  • I fry about 3 at a time

Who didn't love Long John doughnuts growing up? Make them at home and guarantee they're fresh with this stellar recipe.

Number Of Ingredients 15

1 pkg. (1/4 oz.) active dry yeast
1/4 C. warm water (110° to 115°)
1 C. warm milk (110° to 115°)
1/4 C. butter, softened
1/4 C. sugar
1/2 tsp. salt
1 egg
3-1/4 to 3-3/4 C. all-purpose flour
Oil for deep-fat frying
Glaze:
1-1/4 C. confectioners' sugar
1 Tbsp. brown sugar
1 Tbsp. water
1/2 tsp. vanilla extract
1/8 tsp. salt

Steps:

  • In a large bowl, dissolve yeast in warm water. Add the milk, butter, sugar, salt and egg and 2 cups flour. Beat until smooth. Stir in enough flour to form a soft dough.Do not knead. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.Punch dough down. Turn onto a lightly floured surface; roll into a 12-in. x 8-in. rectangle. Cut into 3-in. x 1-in. rectangles. Place on greased baking sheets. Cover and let rise in a warm place until doubled, about 30 minutes.In an electric skillet or deep-fat fryer, heat oil to 400°. Fry doughnuts, a few at a time, until golden brown on both sides. Drain on paper towels. Combine glaze ingredients. Dip tops in glaze while warm.

This is an old recipe from my high school days. When these were served in the cafeteria it was always the busiest day. The aroma would loft through the school so you knew you had to get in line early. I have been making them ever since. They do freeze well but I very seldom had a chance to do so because they are cobbled up so quickly.

2 1/2 pound(s) 80/20 ground beef
1 pound(s) pork sausage
1 1/2 cup(s) plain bread crumbs
2 eggs
1 teaspoon(s) salt
1 teaspoon(s) garlic salt
1 teaspoon(s) celery salt
1 teaspoon(s) oregano
2/3 teaspoon(s) black pepper
1 can(s) 15 oz. thick pizza sauce
2 cup(s) shredded mozzarella
24 hotdog buns

Steps:

  • Preheat oven to 350 degrees.
  • Mix beef,pork,bread crumbs,eggs and seasonings. Mix as you would a meatloaf.
  • Press meat mixture in a 15x10" jelly roll pan. Bake for 25 minutes.
  • Drain grease from pan. Spread pizza sauce over the top and top with shredded cheese.
  • Bake another 10 minutes or until cheese is hot and melted.
  • Let the pan cool slightly and cut into bun size sections. Approx. 24. Place a long john in a bun and enjoy.
