- Thaw spinach and drain very well!
- Heat milk and all spices on med. heat ( do not boil) Reduce heat and simmer Sauté onion and 1 tablespoon butter until translucent about 8 minute.
- Add to milk mixture.
- Melt remaining butter and add flour, making a roux , about 3-4 minutes. Add to milk mixture on low heat Add cheese, except 1/2 cup Montery Jack for topping. Keep on very low heat careful not to burn, stir until melted Remove from heat and cool 15 minutes Drain artichokes and cut into small pieces Add spinach and artichokes to mixture and blend well.
- Finally, add lump crab with large spoon. Fold in gently.
- Pour into 11x9x2 casserole pan and top with remaining Monterey jack cheese. Bake at 350°F 12-15 minutes.
- Serve with tortilla chips warmed in the oven and pico de gallo!

Steps:
- Soften cream cheese at room temperature or in microwave for 30 seconds. Cream cheese should be soft and able to be easily mixed by hand.
- In saute pan, heat butter over medium high heat.
- Add lobster meat and crab meat and cook 2-3 minutes until meat is slightly firm to the touch.
- Add artichoke, combine, stirring gently.
- Remove from heat and add cream cheese. Add Parmesan cheese.
- Mix cream cheese, lobster/artichoke mixture, and Parmesan well until it is completely incorporated.
- Stir in sour cream. If serving immediately, place dip in oven proof dish, sprinkle top with Parmesan cheese and goat cheese.
- Place under broiler on medium heat until top browns. Remember to leave oven door open and watch dip closely, as it will brown quickly. If saving for later, place dip in refrigerator and cover until needed.
- To serve, place dip in oven or.
- microwave proof dish and microwave for 1-2 minutes until warm. Sprinkle top with Parmesan cheese and goat cheese.
- Repeat broiler step #5 above.Garnish with diced tomato.
WARM MAINE LOBSTER DIP
This is a traditionl Maine dip. It is served warm with crackers or whatever you like. This is something you can make in the morning and refrigerate it till you are ready to serve it. Very good.

- Preheat oven to 375°F. In a large skillet, heat oil on medium-high. Cooking in batches if necessary, add garlic and spinach and cook for 1 to 2 minutes, until spinach is just wilted. Transfer to a colander and allow to cool for 2 to 3 minutes. Gently press to drain excess water. Cool to room temperature. Transfer to a large mixing bowl. Set aside. Add mozzarella, yogurt, cream cheese, lemon juice and cayenne to the bowl of a food processor and pulse until thoroughly combined. Using a spatula, scrape cheese mixture into bowl with spinach. This is a pretty tasty recipe for warm lobster dip. Again, as in title, you could substitute with crabmeat, sea legs, or tiny baby shrimp if you like. I happen to mostly use my leftover lobster tail or claw meat when I make this. I have a great 1 qt. chafing server with a tea light beneath it that I usually prepare this in. Serve with pita chips, crackers, baguette slices, or vegetables. You can make this thicker or thinner depending on the amount of half & half and sour cream you use - prepare as you like

- Preheat oven to 350 degrees.
- Chop onion & garlic and put in microwave safe bowl with the olive oil. Microwave 1 minute then remove and add to a large bowl with all the remaining ingredients.
- Stir to combine well & add to oven safe baking dish sprayed lightly with cooking spray for easy clean-up (I use Pam Olive Oil Spray).
- Bake 30 minute covered with foil. Remove foil & bake another 10-15 minute until bubbly.
