3 tablespoons butter
1 onion, diced
2 teaspoons white sugar
1 pound calves' livers
¼ cup all-purpose flour
1 tablespoon butter
salt and pepper to taste

Steps:

  • In a medium skillet, melt butter over medium heat. Stir in onion and saute until softened. Stir in sugar and continue to cook until onion caramelizes.
  • Rinse liver and remove thin outer membrane. Slice liver into 1/4 to 1/2 inch thick slices.
  • Heat remaining butter in a medium skillet over medium heat
  • Dredge liver slices in flour and brown in melted butter for about 1 to 1 1/2 minutes per side. Remove from heat and season to taste with salt and pepper. Serve liver smothered with caramelized onions.

Raisin bread lends sweetness to a chopped liver sandwich.

3 tablespoons unsalted butter
1 pound beef liver, trimmed
Coarse salt and freshly ground pepper
All-purpose flour, for dusting
1 medium onion, finely chopped
1/4 cup mayonnaise, plus more for spreading
2 hard-cooked eggs, whites coarsely chopped, yolks reserved for another use
8 slices raisin bread, toasted
1 bunch (2 cups) baby arugula or watercress

Steps:

  • Melt butter in a medium saute pan over medium heat. Season liver with salt and pepper, and dust with flour, shaking off excess. Cook liver until golden brown and no longer pink in center, about 4 minutes per side. Transfer to a plate, and let cool; reserve pan.
  • Cook onion in reserved pan until tender, 4 to 5 minutes. Transfer onion to a medium bowl, and let cool completely. Chop liver, and add to onion. Stir in mayonnaise, and egg whites, and season with salt and pepper. Refrigerate 30 minutes (or up to 1 day).
  • Spread mayonnaise on 4 slices of bread. Divide chopped liver and arugula or watercress among bread slices. Sandwich with remaining bread.

2 medium onions, thinly sliced
1 lb beef or veal liver, 1/2 to 3/4 inch thick
All-purpose flour
3 tablespoons vegetable oil or shortening
Salt and pepper to taste

Steps:

  • In 10-inch skillet, melt butter over medium-high heat. Cook onions in butter 4 to 6 minutes, stirring frequently, until light brown. Remove onions from skillet; keep warm.
  • Coat liver with flour. In same skillet, heat oil over medium heat. Cook liver in oil 2 to 3 minutes on each side or until brown on outside and slightly pink in center, returning onions to skillet during last minute of cooking. Don't overcook or liver could become tough. Sprinkle with salt and pepper.

This recipe will turn liver haters into converts. Very simple! The three things that will set your liver above all others are: 1) soak in milk, 2)turn liver as little as possible and 3) don't overcook!

2 pounds sliced beef liver
1 ½ cups milk, or as needed
¼ cup butter, divided
2 large Vidalia onions, sliced into rings
2 cups all-purpose flour, or as needed
salt and pepper to taste

Steps:

  • Gently rinse liver slices under cold water, and place in a medium bowl. Pour in enough milk to cover. Let stand while preparing onions. (I like to soak up to an hour or two - whatever you have time for.) This step is SO important in taking the bitter taste of the liver out.
  • Melt 2 tablespoons of butter in a large skillet over medium heat. Separate onion rings, and saute them in butter until soft. Remove onions, and melt remaining butter in the skillet. Season the flour with salt and pepper, and put it in a shallow dish or on a plate. Drain milk from liver, and coat slices in the flour mixture.
  • When the butter has melted, turn the heat up to medium-high, and place the coated liver slices in the pan. Cook until nice and brown on the bottom. Turn, and cook on the other side until browned. Add onions, and reduce heat to medium. Cook a bit longer to taste. Our family prefers the liver to just barely retain a pinkness on the inside when you cut to check. Enjoy!

My dad and I made up this sandwich one afternoon when I was a kid because we were the only ones in the house that liked liverwurst. Don't eat this if you don't want to offend anyone with your bad breath!

2 slices liverwurst
2 slices onions
1 teaspoon butter
1 teaspoon mayonnaise
1 teaspoon yellow mustard
2 slices bread
salt & pepper, to taste

Steps:

  • Butter both sides of bread and toast until brown in toaster or in a 350 degree oven.
  • Spread mayonnaise on one slice of bread and top with onions and liverwurst. Season with salt and pepper.
  • Spread mustard on other slice of bread and place on top of onions and liverwurst.
  • Smash down and enjoy.

8 slices bacon (about 1/3 pound)
1 large onion, sliced (about 2 cups)
four 1/2-inch-thick slices calf's liver (each about 3 ounces)
1/2 cup all-purpose flour seasoned with 1 teaspoon freshly ground black pepper
1/4 cup water
1/2 cup ketchup

Steps:

  • In a large heavy skillet cook bacon over moderate heat until crisp and transfer with a slotted spoon to paper towels to drain. Pour off half the fat from skillet into a small bowl and reserve. Add onion to skillet and cook over moderate heat, stirring, until golden. Transfer onion with a slotted spoon to a bowl.
  • Rinse and pat dry each piece of liver. Dredge liver in flour mixture, shaking off excess. Add reserved fat to skillet and heat over moderately high heat until hot but not smoking. Sauté liver in batches until crisp and browned, about 2 minutes on each side for medium. Transfer liver with a slotted spatula to a platter and add water and ketchup to skillet, stirring occasionally and scraping up bits. Simmer sauce, stirring constantly, 1 minute.
  • Serve liver with bacon, onion, and sauce.
