Number Of Ingredients 7

1 can (8 ounces) crushed pineapple
1 package (3 ounces) lime gelatin
3 tablespoons water
2 packages (3 ounces each) cream cheese, softened
1 cup chopped walnuts
1 cup miniature marshmallows
1 cup heavy whipping cream, whipped

Steps:

  • Drain pineapple, reserving juice; set the pineapple aside. In a saucepan, combine gelatin, water and reserved juice. Cook and stir over low heat until gelatin is dissolved. Refrigerate until syrupy, about 30 minutes., In a small bowl, beat cream cheese until fluffy. Stir in gelatin mixture, walnuts, marshmallows and reserved pineapple. Fold in the whipped cream. , Transfer to a 1-qt. serving bowl. Cover and refrigerate for 2 hours or until set.

My mom used to serve this every Christmas on a bed of lettuce, crispy iceberg, and surrounded with green and red grapes. Pecans can be substituted for walnuts.

1 (6 ounce) package lime flavored Jell-O® mix
¾ cup boiling water
¼ teaspoon salt
¾ cup cold water
1 cup shredded cabbage
½ cup grated carrots
½ cup chopped walnuts

Steps:

  • Dissolve gelatin mix in boiling water. Stir in salt. Stir in cold water. Chill until slightly thickened.
  • Fold cabbage, carrots, and nuts into thickened gelatin. Pour mixture into an 8 inch mold that has been sprayed with a non-stick spray. Chill until firm.
  • Set mold in a sink of hot water for a few seconds when ready to unmold. Place serving plate on top of mold, and turn over. Lift off mold.

Another Jello dish that is popular at holidays in my hometown, especially with my Tanner friends. They just call it "The Green Stuff." My Southern friends call it "Lime Nut Congealed Salad." We just call it "delicious." =^..^=

1 large (6 oz.) package of lime jello mix
2 c boiling water
1 1/2 c cold water (or use the pineapple juice as part of this)
8 oz block of cream cheese
20 oz can of crushed pineapple, well-drained
1 c walnut pieces

Steps:

  • 1. Boil 2 cups of water. In a medium-sized bowl, stir together the boiling water and the lime Jello mix. With a fork, blend the cream cheese into the hot mixture until it's in tiny pieces.
  • 2. Add the cold water, drained pineapple, and walnuts. Mix well.
  • 3. Pour into a 8 x 8" pan and refrigerate until set.

1 (6 ounce) package lime Jell-O gelatin
1 1/2 cups hot water
cold water
8 ounces cream cheese, softened
12 ounces Cool Whip
20 ounces crushed pineapple, drained but save juice
1 cup chopped walnuts

Steps:

  • Combine jello and hot water; stir until jello is dissolved.
  • Add enough cold water to pineapple juice to equal ½ cup and stir into the jello. Chill until partially set; then whip with a mixer. Set aside.
  • In another bowl, beat the cream cheese. Add pineapple, beating briefly.
  • Fold in Cool whip and nuts - then combine with the jello mixture and chill until firm.

This is my moms recipe, i don't really know where she got it but I have always liked it. I find that I can substitute low fat evaporated milk and low-fat cottage cheese and use sugar free Jello and sugar free pineapple to make this fit into my diabetic diet plan better.

1 cup evaporated milk
1 cup small curd cottage cheese
1 cup crushed pineapple, drained

This is a great recipe my mom got from my aunt. She has made it every year for Thanksgiving. It is a family tradition for us. It can be made a day or two ahead of time, if you like. It looks just beautiful in a cut crystal bowl. Thanksgiving is not the same without it for us! We just 'gobble' it up! Chopped walnuts can be substituted for chopped pecans.

1 cup boiling water
1 (6 ounce) package lime flavored Jell-O® mix
1 (20 ounce) can crushed pineapple, drained with juice reserved
1 (8 ounce) package cream cheese, softened
2 cups heavy cream
1 cup chopped pecans

Steps:

  • In a large bowl, pour 1 cup boiling water over the gelatin mix. Stir until dissolved, then stir in 1/2 cup pineapple juice. Refrigerate until thickened but not set, about 1 hour.
  • Meanwhile, place crushed pineapple and remaining juice in a small saucepan. Bring to a boil, reduce heat, and simmer for about 5 minutes. Remove from heat, and cool to room temperature.
  • In a large bowl, blend softened cream cheese and lime gelatin until smooth. Mix in the cooled pineapple. In a medium bowl, whip cream until soft peaks form. Fold into gelatin mixture. Fold in chopped nuts. Pour into a pretty crystal bowl, and refrigerate for at least 4 hours, or until set.

1 pkg. (6 oz.) JELL-O Lime Flavor Gelatin
1 can (8 oz.) crushed pineapple in juice, undrained
1 pkg. (8 oz.) PHILADELPHIA Cream Cheese, softened
1 cup BREAKSTONE'S or KNUDSEN 2% Milkfat Low Fat Cottage Cheese
1 cup thawed COOL WHIP Whipped Topping
1/2 cup chopped walnuts
1/4 cup chopped maraschino cherries

Steps:

  • Add boiling water to gelatin mix in large bowl; stir 3 min. until completely dissolved. Stir in pineapple. Refrigerate 1-1/4 hours or until slightly thickened.
  • Mix cream cheese and cottage cheese in medium bowl until blended. Gently stir in COOL WHIP with whisk. Gradually add to gelatin, mixing well after each addition. Stir in nuts and cherries. Pour into 6-cup mold sprayed with cooking spray.
  • Refrigerate 4 hours or until firm. Unmold before serving.
