GRILLED SHRIMP AND CORN SALAD WITH HERB LIME DRESSING



Grilled Shrimp and Corn Salad with Herb Lime Dressing image

1/2 cup (1 stick) salted butter
4 cloves garlic, finely chopped
4 ears corn, husked and cleaned
2 cups arugula, chopped
1/2 cup lightly chopped fresh cilantro
1/2 cup olive oil
1/2 cup lightly chopped fresh parsley
2 tablespoons chopped fresh tarragon
1 avocado, pitted and diced
One 14-ounce can black-eyed peas, drained and rinsed
1 jalapeno, diced
1 lime, juiced
1/2 red onion, diced
1 pound large shrimp, peeled and deveined, tails left on (about 16 shrimp)
1 pound large shrimp, peeled and deveined, tails left on (about 16 shrimp)
1 teaspoon paprika
Kosher salt and freshly ground black pepper

Steps:

  • Preheat a grill or grill pan to medium-high heat. In a small saucepan set over medium heat, melt the butter and garlic together. Brush the corn with the butter mixture and reserve the remaining butter for a later use. Grill the corn until slightly charred and cooked through, about 3 minutes per side. Remove from the heat, then cut the kernels from the cobs and place in a large bowl. Stir in the arugula, cilantro, oil, parsley, tarragon, avocados, black-eyed peas, jalapenos, lime juice and onions.
  • Thread the shrimp onto the skewers, 4 per skewer, and brush with the reserved garlic butter. Sprinkle the shrimp with the paprika and some salt and pepper and then grill until pink and cooked through, about 3 minutes per side.
  • Season the salad with salt and pepper, then transfer to a serving plate and place the shrimp skewers on top of the salad to serve.

HERB-ROASTED TURKEY TENDERLOIN WITH MANGO, LIME AND GINGER DRESSING AND ROASTED SWEET POTATOES



Herb-Roasted Turkey Tenderloin with Mango, Lime And Ginger Dressing And Roasted Sweet Potatoes image

2 turkey tenderloins (about 1 pound each)
Salt and freshly ground black pepper
2 teaspoons ground cumin
Olive oil
2 large sweet potatoes, peeled and cubed (2-inch pieces)
2 ripe mangoes, peeled and flesh sliced from seed
1/2 cup fresh mint leaves
1/4 cup fresh lime juice
1 teaspoon Dijon mustard
1 teaspoon minced fresh ginger
1/4 cup plain yogurt

Steps:

  • Preheat oven to 400 degrees F.
  • Season turkey tenderloins all over with salt, black pepper and cumin.
  • In a large skillet over medium high heat, add about 2 to 3 tablespoons olive oil. Once heated, add the turkey tenderloins and saute on 1 side. Add the potatoes to the pan, flip the turkey, when ready and place the pan into the preheated oven. Roast turkey and potatoes for about 15 minutes or until a meat thermometer registers 170 to 180 degrees F. Let turkey stand 10 minutes before slicing crosswise into 1/2-inch thick slices.
  • Meanwhile, in a blender combine mangoes, mint, lime juice, mustard, and ginger. Puree until blended. Add yogurt and puree until smooth. Serve 1/2 of the turkey with all of the sauce spooned over top and all of the sweet potatoes.
  • Reserve remaining turkey for Thai Turkey and Rice.

This lovely dressing may be used to dress salads, or a marinade for steak or vegetables, try it drizzled over rice or soaked up with a crusty bread. Make sure to season well with salt and pepper to enhance all the flavors.

1/2 cup finely minced fresh parsley
2 finely minced, large garlic cloves
1 finely minced, fresh, large red chili pepper
1 tbsp finely minced fresh oregano
1 1/2 tbsp finely minced fresh cilantro
1/2 small sweet red onion, finely minced
2 1/2 tbsp sherry vinegar
1 tbsp sugar
1 1/2 limes juiced + 1/4 tsp lime zest
salt and pepper to taste
1/2 cup virgin or extra virgin olive oil... more if preferred

Steps:

  • 1. In a bowl, combine all ingredients, mix well and set aside on counter until required.

I've been looking forEVER for an herby-lime dressing that rivals Avanti Cafe in Pasadena and this may be it. I haven't tried it yet, but am plopping it down here for safe-keeping.

1 tablespoon chopped marjoram or 1 tablespoon parsley
1/2 cup chopped cilantro (Did you know that some people have a gene that makes cilantro taste like soap to them?) (optional)
2 tablespoons olive oil (optional)
1 jalapeno, finely diced
2 -3 tablespoons fresh lime juice
1/4 teaspoon salt

Steps:

  • Whisk all ingredients together and try to think of something to put for Step 2.
  • Uh -- put it on yer salad? Yeah!
