- Mix the gelatin, half of the sugar and the salt in a saucepan. In another pan, beat the egg yolks well. Add the lime juice and water to the egg yolk mixture. Stir the egg yolk mixture into the gelatin mixture. Cook over low heat, stirring constantly, just until the mixture comes to a boil. Remove from heat; stir in grated peel.
- Chill, stirring occasionally, until the mixture mounds slightly when dropped from a spoon.
- Beat the egg whites until soft peaks form. Gradually add the remaining sugar, beating until stiff. Fold into the chilled gelatin mixture. Fold in whipped cream (reserve some for topping, if desired). Pour into the baked crust.
- Chill until firm.

- LIME SAUCE:.
- Combine, in small bowl, remaining 1/4-cup mayonnaise, 1/2-tablespoon mustard, juice from a lime quarter and sour cream. Chill until ready to serve.
- CRAB CAKES:.
- Chop onions into 1/4-inch pieces. Place in large bowl.
- Cut lime in quarters and squeeze juice of one quarter over onions.
- Add 1/4-cup mayonnaise, dressing mix, and 1/2- tablespoon mustard. Mix until well blended.
- Crush seven crackers while adding to mayonnaise mixture. Add crabmeat and mix well.
- Shape into four 1/4-inch thick patties.
- Preheat large saute pan on medium-high 2-3 minutes.
- Crush remaining 6 crackers onto a plate. Lightly coat patties with crackers, then place in saute pan.
- Cook 12-15 minutes turning as needed to brown and heat thoroughly.
- Serve crab cakes with lime sauce and enjoy!

LIME DELICIOUS
This is a great old-fashioned dessert. It just melts in your mouth and is to die for. A winner in our home. You can substitute lemons for limes in this recipe. The pudding is a beautiful lime custard bottom with a light cake topping. Use gluten-free or regular wheat flour.

- Preheat oven to 180°C ( 350°F ).
- Grease a deep 1.25 litre (5 cup capacity) ovenproof dish. Or you can use 6 individual ramekin dishes if desired.
- Beat butter, rind, sugar and egg yolks in a small bowl, until the mixture is creamy. Beat in sifted flour and juice. Gradually beat in the milk.
- In a clean small bowl, beat the 4 egg whites until firm peaks form. Fold the egg whites through the lime mixture.
- Pour mixture into the prepared dish. Place the dish in a larger baking dish with enough cold water to come halfway up the side of the dish.
- Bake for about 40 minutes or until lightly browned and just firm to touch.
- Dust with a little extra sifted icing sugar if desired. Serve immediately.

- Preheat oven to 350 degrees F. Lightly grease four 1 cup ramekins with butter.
- Separate egg yolks from whites. Beat egg whites until soft peaks form; set aside.
- Combine 2 tablespoons butter, sugar, egg yolks, and l tablespoon lime zest. Beat on medium speed until creamy and light, about 4 minutes. Using a wooden spoon fold in flour, baking powder, salt, milk and 1/2 cup lime juice into the sugar and egg mixture. Combine well. Gently fold in the egg whites, 1/3 at a time.
- Divide batter among the ramekins and bake for 30 to 40 minutes until tops are golden and the pudding has set. Serve warm.
DELICIOUS MEXICAN BURGERS WITH CILANTRO LIME DRESSING
An adaption of Rachael Ray's beef and bean burrito burgers with a few extra ingredients and an awesome topping. Hopefully you will find that these are ingredients you have on hand. A family favorite! I like to serve on whole wheat brioche buns or in a pita pocket for fewer carbs :)

LIME BRUSSELS SPROUTS - DELICIOUS!
I was having oven baked chimis this evening and the only thing I had in the frig for a side was brussels sprouts. My husband said that brussels sprouts don't go well with mexican food, so I said I'd add lime to them to give them a mexican feel. He just laughed. Surprisingly we loved them! A zingy fun combination of flavors.

- Wash and trim brussels sprouts. Cut each in half. Place sprouts in a bowl with a teaspoon of water and cover with plastic wrap (leave little hole at along edge of seal for air to escape).
- Cook in microwave on high for 2-3 minutes depends on how tender you like your sprouts. They will cook a little more in the next step but not much.
- Melt butter in skillet over medium high heat to high heat. (Might need more or less butter depending on the overall size of your sprouts). You can use something other than butter, but I do love the flavor of browned melt on the sprouts. I know it's bad for me!
- Add sprouts - cook over medium high to high heat (stirring ever so often)till the sprouts start to get brown.
- Once sprouts have the color of brown you like, add salt and pepper and lime juice to taste I suggest trying a half of teaspoon of lime and if you'd like more than add more. Be careful not to add too much right off the bat because the lime will overpower the sprouts.
