A NEW item on the menu at Outback! It was so delicious I have attempted to duplicate this wonderful salad. The toasted pecans were an optional item on the menu and just makes the salad!! The flavor is AWESOME! For more than 2 servings double recipe.

1/2 head iceberg lettuce, cut into a wedge
1 cup grape tomatoes, cut into halves
1/2 cup red onion, chopped
6 slices cooked bacon, crumbled
1/2 cup blue cheese, crumbled
1/2 cup pecan pieces, toasted
3/4 cup mayonnaise
3/4 cup buttermilk
1/2 cup blue cheese, crumbled
1/4 teaspoon garlic powder
1/4 teaspoon onion powder
1/4 teaspoon black pepper

Steps:

  • Place lettuce wedge on a salad plate. Add grape tomato halves and onion on top of wedge.
  • Sprinkle with crumbled bacon, crumbled blue cheese and toasted pecan pieces.
  • Dressing: Mix ingredients and allow to sit for 30 minutes or more for flavors to meld. Drizzle on top of salad.
  • Enjoy!

4 -6 slices bacon (may substitute with turkey bacon)
1 medium onion, sliced
1 cup buttermilk
1/2 cup sour cream
1 (1 ounce) envelope ranch dressing mix
1/4 cup chopped fresh basil
2 cloves garlic
1 head iceberg lettuce, cut into 4 wedges
shredded basil

Steps:

  • Cook bacon in a large skillet until crisp; remove bacon, drain on paper towels, reserving 1 teaspoon drippings in the skillet.
  • Crumble bacon and set aside.
  • Saute onion in hot drippings in skillet over medium heat for 10 minutes or until tender and lightly browned.
  • Remove onions from heat; cool.
  • Process buttermilk and the next 4 ingredients in a blender or food processor until smooth, stopping a few times to scrape down sides.
  • Stir in onion.
  • Top each lettuce wedge with dressing; sprinkle with bacon.
  • Garnish, if desired with a bit of shredded basil.

1 head iceberg lettuce
1/2 cup mayonnaise
3 tablespoons ketchup
Dash of Tabasco sauce
Dash of black pepper

Steps:

  • Wash the lettuce and remove any damaged or wilted outer leaves. Remove the lettuce core and discard. Cut the head into quarters and set it aside.
  • In a medium bowl, whisk together the mayonnaise and the ketchup. Add the Tabasco sauce and pepper to taste. Place a lettuce wedge on each serving plate. Drizzle with the dressing.

  • Slam the head of lettuce down on a cutting board, core-side down. The core will separate from the rest of the head with a twist and come out easily.

For the Goat Cheese Dressing
4 Ounces Goat Cheese (softened)
¼ Cup Half and Half (or you could use whole milk)
5 Teaspoons White Vinegar
Drizzle of Honey
Pinch of Kosher Salt
A Few Grinds of Black Pepper
For the Salad
1 Head Buttercrunch Lettuce
4-5 Slices of Bacon (cooked and crumbled)
¼ Cup Pomegranate Arils

Steps:

  • For the Goat Cheese Dressing Add all of the ingredients to a bowl and use a fork to thoroughly mix everything. Since the cheese has been softened (I used a log of goat cheese), this doesn't take long. Give the dressing a taste and adjust seasoning. Slip the dressing into the refrigerator to chill while you make the salads. For the Salad Thoroughly rinse the lettuce and remove as much water as possible from the leaves. Slice off the hard part of the bottom (if there's roots attached, remove and throw them away) but leave enough so that the head holds together. Carefully slice the head in half from top to bottom then slice the halves in half the same way. If the core is thick, you can cut a triangle out of it and still have the leaves attached. You want them to stay in a wedge form. Arrange each wedge on a plate. Spoon chilled dressing over each wedge then top with bacon and pomegranate. Serve Notes If you use crumbled goat cheese, you may need to use a food processor or blender to get it smooth and to make sure everything is well blended.

2 cooked,chicken breast i use leftovers,but if you do not have leftovers just season and grill or bake.
4-6 slice bacon
1 onion sliced
1 c buttermilk
1/2 c sour cream
1 pkg ranch dressing
1/4 c chopped fresh basil
2 clove garlic
1 head iceberg lettuce, cut into 4 wedges
shredded fresh basil

Steps:

  • 1. Cook bacon in lg. skillet until crisp, remove bacon and drain off on paper towel,resrve 1 tsp dripping in skillet. Crumble bacon and set aside.
  • 2. Saute onions in hot drippings in skillet over med. heat 10 min. or until tender and lightly browned. Remove from heat and cool.
  • 3. In blender or food processor buttermilk and the next 4 ingredients until smooth, stopping to scrape down sides. Stir in onions.
  • 4. Top lettuce wedge with chicken and dressing; sprinkle with bacon, and top with a little shredded basil.

Ingredients:
Bleu Cheese Dressing
1/8 Tsp salt
1/8 Tsp onion garlic powder
¼ Tsp garlic powder
¼ Tsp ground black pepper
½ Tsp sugar
¾ c mayonnaise
¼ c crumbled bleu cheese
½ c buttermilk
1 c crumbled bleu cheese
1 c diced tomato (from a large tomato
1 head iceberg lettuce

  • Procedure:
  • Put all the bleu cheese dressing ingredients in a medium-sized bowl and mix it using an electric mixer.
  • Cut the iceberg lettuce head into quarters. Do this by cutting though the stem end. Remove the stem from the wedges. Position them on a plate.
  • Scoop about a quarter cup of the bleu cheese dressing and put it on top of each lettuce wedge.
  • Dazzle a quarter cup of the crumbled bleu cheese on top of the dressing.
  • Dazzle a quarter cup of the diced tomato on top. Serve.
