TARRAGON CHICKEN WITH LEMON

1 tablespoon extra-virgin olive oil
4 skinless chicken legs, skin removed (about 2 1/4 pounds)
Kosher salt
Freshly ground black pepper
2 tablespoons dry white vermouth
1 cup chicken broth, low-sodium canned, or homemade
1 teaspoon cold water, more if needed
1 teaspoon cornstarch
Finely grated zest of 1 lemon
2 teaspoons freshly squeezed lemon juice
3 tablespoons minced fresh tarragon leaves

Steps:

  • Preheat the oven to 375 degrees F.
  • Heat a medium-large skillet over high heat. Add the olive oil. Season the chicken all over with salt and pepper, and lay the pieces in the pan rounded-side down first (the side that had the skin). Cook the chicken, turning only once, until golden brown on both sides, about 5 minutes. Transfer chicken to an oven-proof dish, reserving the skillet. Place the chicken to the oven and bake until an instant-read thermometer inserted into the thickest part of the chicken registers 170 to 75 degrees F, about 15 minutes.
  • Meanwhile, pour the vermouth into the reserved skillet, scraping up any browned bits that cling to the pan with a wooden spoon, and cook over medium heat until the liquid reduces by about half. Add the chicken broth and continue to cook until slightly thickened.
  • In a small bowl whisk a teaspoon or so of cold water with the cornstarch, then whisk the mixture into the broth and bring to a full boil. Remove from heat and add the zest, lemon juice, and tarragon. Season with salt and pepper, to taste.
  • Remove the chicken from the oven. Pour any pan drippings from the chicken into the sauce and stir to combine. Divide the chicken pieces between 4 plates. Pour the sauce over the chicken and serve.

1 whole chicken (3 1/2 to 4 pounds), rinsed, trimmed of excess fat, and patted dry
1 garlic bulb, halved horizontally
2 sprigs fresh tarragon, plus 1 tablespoon chopped tarragon leaves
3 tablespoons unsalted butter, softened
1 shallot, finely chopped
Coarse salt and freshly ground pepper
2 lemons (1 halved, 1 thinly sliced)
5 red onions (2 large and 3 small), peeled
4 long, thin carrots, peeled (halved or quartered lengthwise if large)
3 stalks celery
6 small red potatoes, halved (or 3 russet potatoes, cut into thirds)
1/2 cup dry white wine
1/2 cup homemade or low-sodium store-bought chicken stock

Steps:

  • Preheat oven to 400 degrees. Rub chicken inside and out with one garlic half. Place both garlic halves and the tarragon sprigs in cavity. Stir together butter, shallot, chopped tarragon. Season with salt and freshly ground pepper. Loosen skin of chicken near cavity with hands; spread butter mixture under skin all over flesh.
  • Squeeze juice from lemon halves over chicken; place in cavity. Season with salt and freshly ground pepper.
  • Halve the large onions horizontally at an angle. Arrange in the middle of a 9-by-13-inch roasting pan to form a square. Position halves so that the slanted ends of each pair face each other, inward, and almost touch. Place chicken, breast side up, on onion "rack."
  • Quarter the small onions; arrange with carrots, celery, and potatoes around bird. Tuck lemon slices between wings and breast, and legs and breast. Pour wine and stock over vegetables.
  • Roast chicken and vegetables, basting 2 or 3 times with pan juices, until an instant-read thermometer inserted into thickest part of chicken thigh registers 165 degrees and juices run clear, 1 to 1 1/2 hours.
  • Remove pan from oven, and let chicken stand 10 minutes. Carve chicken. Arrange chicken and roasted vegetables (including rack onions) on a platter. Spoon pan juices over meat.

1 tablespoon extra-virgin olive oil
Sea salt and cracked black pepper
10 small sprigs tarragon
1 tablespoon finely grated lemon zest
3 cloves garlic, sliced
2 fennel bulbs, trimmed and sliced
1/2 cup dry white wine
1/2 cup chicken stock
Lemon wedges, to serve

Steps:

  • Preheat oven to 350°F. Heat a heavy ovenproof pot or Dutch oven on a stovetop over high heat. Score the chicken skin at regular intervals, drizzle with the oil, sprinkle with salt and pepper and toss to coat. Add to the pot and cook for 6-8 minutes on each side or until well browned. Remove from the pot and set aside. Add the tarragon, lemon zest, garlic and fennel to the pot and cook for 2-3 minutes or until golden. Return the chicken to the pot with the wine and stock and bring to a simmer.
  • Transfer to the oven and roast for 20-25 minutes or until the chicken is just cooked through. Serve with the lemon wedges.

POACHED CHICKEN WITH LEMON & TARRAGON SAUCE

Poached chicken with lemon in a deliciously creamy tarragon sauce - serve simply with rice or potatoes

300ml dry white wine
1 small fennel , sliced or 2 sticks celery, sliced
1 large carrot , cut in sticks
2 sprigs each thyme , rosemary and tarragon
2 large bay leaves
about 100g/4oz smoked bacon pieces or rinds
½ tsp whole black peppercorns
1 tbsp bouillon powder or 2 stock cubes
1 whole chicken , about 2kg/4lb 8 oz
1 onion , quartered
2 egg yolks
142ml pot double cream
handful fresh tarragon , chopped
1 tsp cornflour
juice of 1 lemon

Steps:

  • Put the wine, vegetables, herb sprigs, bay leaves, bacon, peppercorns and stock powder or cubes in a large pan. Bring to the boil, then simmer for 10 mins.
  • Remove any excess fat from the chicken and push it into the liquor.
  • Return the liquor to the boil, then turn heat down. Cover and cook for 11⁄4 hrs until chicken legs feel tender when pierced. Remove from heat, stand for 15 mins, then lift onto a plate. Strain the liquor into a bowl and pour 500ml into a pan. Boil to reduce by half.
  • Pull and cut the bird into neat portions, discarding skin, wing tips and backbone. Put on a plate and cover.
  • Beat together the yolks, cream and tarragon in a jug. Ladle in a quarter of the liquor, mix, then pour back into the stock and turn the heat down. Mix the cornflour with a little water and add. With a wooden spoon, stir for 3-5 mins until it begins to thicken.6 Remove from the heat, then stir in lemon juice to taste. Pour some sauce over the chicken and put the rest in a jug. Serve with boiled long grain rice.

Steps:

  • Bring large saucepan of salted water to boil. Add chicken breasts; reduce heat to medium-low, cover and simmer until chicken is just cooked through, about 12 minutes. Transfer chicken to plate; cool.
  • Mix celery, 1/2 cup mayonnaise, onion, tarragon, lemon juice, and lemon peel in large bowl to blend. Cut chicken into 1/2-inch cubes; stir into mayonnaise mixture. Season with salt and pepper. (Can be made 4 hours ahead. Cover; chill.)

This is yummy, quick and easy. I got the recipe from Publix Apron's Simple Meals series. I used flour instead of cornstarch and added a little bit more wine because I had a little more chicken. You can also use fresh tarragon if you have it. I served this with orzo with chopped sun-dried tomatoes and broccoli. I just added the sun-dried tomatoes and broccoli to the water that the orzo was boiling in. Very easy side dish.

1 lemon (rinsed)
4 fresh garlic cloves
5 -6 sprigs fresh parsley
3 tablespoons diced green onions
2 teaspoons dried tarragon leaves
1/2 cup white wine

Steps:

  • Prepare sauce by adding the following to food processor: 2 strips lemon peel (remove with vegetable peeler or zester) and juice of lemon (2 TBSP), garlic, parsley, green onions, tarragon, wine, cornstarch, and sugar. Process 20 seconds until well blended.
  • Season both sides of chicken with salt and pepper. Preheat large sauté pan on medium-high 2-3 minutes.
  • Place oil in pan; swirl to coat. Add chicken, and cook 2-3 minutes on each side.

  • place the chicken pieces,skin-side up in a roasting dis.separate the garlic cloves but do not peel them.use a rolling pin or the side of a knife to squash the garlic and scatter round the meat.
  • cut the lemons in half and squeeze over the chicken and garlic.season with salt and pepper,then drizzle over the olive oil and place in the preheated oven for about 30 minutes or until the juices run clear and the chicken is golden.
  • scatter the tarragon over the chicken,baste with the juices and return for about 10 minutes.

4 chicken breasts
1 red onion, peeled and finely chopped

Steps:

  • Heat the oil and butter in a heavy based frying pan over a medium-high heat. Sauté the chicken breasts for 2-3 mins on each side or until golden brown. Transfer to a plate.
  • In the same pan in the remaining butter mixture, gently fry the onion and garlic over a medium heat until really soft, about 10 minutes.
  • Add the wine and simmer for a few minutes Then add the broth, bring to the boil and simmer for a minute before whisking in the cream, lemon juice, mustard and half of the fresh tarragon.
  • Bring back to the boil and whisk thoroughly.

1 head garlic, left unpeeled and halved horizontally
1/4 cup mild honey
1 tablespoon olive oil

kitchen string; an instant-read thermometer

Steps:

  • Put oven rack in middle position and preheat to 425°F.
  • Finely grate enough zest from 1 lemon to measure 1 tablespoon, then squeeze enough juice from same lemon to measure 2 tablespoons.
  • Stir together butter, tarragon, zest, 1/2 teaspoon salt, and pepper.
  • Put chicken, breast side up, in a small roasting pan. Starting from neck cavity, work your fingers gently between skin and flesh of breast to loosen skin all the way to thighs without tearing. Put one fourth of tarragon butter under skin of each breast, then rub skin from outside to spread evenly.

  • Whisk together honey, lemon juice, oil, and remaining 1/4 teaspoon salt. Roast chicken 30 minutes, then brush pan juices and half of honey mixture over chicken and roast 10 minutes more. Brush chicken again with pan juices and remaining honey mixture and continue to roast until thermometer inserted in fleshy part of a thigh (do not touch bone) registers 170°F, about 20 minutes more.
  • Transfer chicken to a cutting board and let stand 10 to 15 minutes before carving. Skim fat from pan juices and serve juices with chicken.

4 chicken breast halves, skinless and boneless
1 Tbsp tarragon, dried
1 Zest from 1 whole Lemon
1/4 c lemon juice, fresh
1/4 c olive oil, extra virgin
2 clove Garlic, thinly sliced
1/4 tsp black pepper
1 tsp tarragon, dried
1 dash(es) sea salt (to finish before grilling)

Steps:

  • 1. Rub chicken breats with the dried tarragon, place in a plastic bag or non-metal container.
  • 2. Combine lemon zest, lemon juice, olive oil, white wine vinegar, garlic, & pepper; pour over chicken. Make sure all chicken is coated with marinade. Cover & let stand at least 1 hour minimum, 4 to 8 is recommended in the refrigerator.
  • 3. Sprinkle chicken lightly with sea salt. Grill on a medium-high flame or use a grill pan. You can baste with the remaining marinade if needed. This recipe can also be baked in the oven or broiled on low.
  • 4. Serve with rice & a tossed salad. Your whole family will love this.

1 tablespoon olive oil
6 fluid ounces vegetable stock
1 lemon, juice of
1 fresh lemon rind, of grated
1 tablespoon white wine vinegar
1 clove garlic, peeled and crushed
1 teaspoon Dijon mustard
1 tablespoon soft brown sugar
6 fluid ounces olive oil
salt & freshly ground black pepper
2 tablespoons chopped fresh tarragon
4 ounces green olives
fresh tarragon leaf
grated fresh lemon rind

Steps:

  • Preheat the oven to 350*F.
  • Arrange the chicken breasts, skin side up, in a deep ovenproof dish that is not too large, so that they remain closely packed.
  • Brush the skins wih olive oil.
  • Pour in enough vegetable stock to cover partially but not submerge them.
  • Bake in the oven for 30 to 35 minutes, then remove and allow to cool in the stock before refrigerating.
  • To make the dressing: combine the lemon rind and uuice with the vinegar, then add the garlic, mustard, sugar and oil.
  • Season with salt and pepper, mix well and then add the chopped tarragon leaves.
  • Lift the chicken breasts from the stock and remove the skins.
  • Slice the meat diagonally or shred with a fork.
  • Place the pieces in a bowl, pour over the dressing and marinate in teh refrigerator until serving time.
  • To serve, arrange the chicken pieces in a shallow serving dish and scatter with olives, tarragon leaves and grated lemon rind.

1 (10 ounce) can cream of mushroom soup
1 (8 ounce) container sour cream
1 cup dry white wine
1 teaspoon garlic salt

1 dash lemon pepper
4 cups white rice (already prepared)

Steps:

  • Preheat oven to 350. Place chicken breasts in baking dish and sprinkle with lemon pepper and tarragon.

1/3 cup finely chopped onion
1/3 cup finely chopped celery
3/4 cup finely crushed seasoned corn bread stuffing mix
8 tablespoons olive oil
4 tablespoons fresh lemon juice
1 tablespoon chopped fresh tarragon
1 teaspoon grated lemon peel
1 teaspoon salt
3/4 teaspoon freshly ground pepper

Steps:

  • Using fork, blend chicken, onion, celery, 1/4 cup stuffing, 2 tablespoons oil, 1 tablespoon lemon juice, tarragon, lemon peel, salt, and pepper in large bowl. Form mixture into eight 1/2-inch-thick patties. Sprinkle with 1/4 cup stuffing, pressing to adhere. Turn over and repeat.

I really love a good roasted chicken seasoned with tarragon and chicken. So when I had a hanker for just such a dish but didn't want to heat up the oven and only had chicken breasts on hand this is what I came up with. This is so easy and so yummy. The whole family loved it!

1/4 of a preserved lemon, rind only
2 teaspoons garlic powder
1 tablespoon tarragon
1/4 cup white wine
8 ounces cream cheese
2 (10 1/2 ounce) cans cream of chicken soup
pasta, of choice

  • Put chicken in crockpot and add garlic, tarragon and white wine.
  • Mince lemon rind and add to crock pot.
  • Cook on low 5-6 hrs or high 2-3 depending on the thickness of your breasts.
  • shred the chicken.
  • microwave the cream cheese until it's soften.
  • add cream cheese to soup mix well add to shredded chicken in crock pot.
  • Cook pasta to desired doneness and toss with sauce.

1 (3 1/2-4 lb) roasting chickens, cut into quarters
3 tablespoons unsalted butter, very soft
1/2 teaspoon grated lemon zest
1 large lemon, juice of
2 teaspoons dijon-style mustard
2 teaspoons chopped fresh tarragon leaves
1 1/2 teaspoons coarse salt
fresh ground black pepper
1/2 cup canned low sodium chicken broth

Steps:

  • Heat the oven to 425°F Rinse the chicken and pat it dry with paper towels. Cut away any excess fat and tuck the wings behind each breast.
  • In a small bowl, mash the soft butter, lemon zest, 1 Tbs. of the lemon juice, the mustard, and the tarragon until well blended and smooth. Stir in 1 teaspoons of the salt and pepper to taste.
  • Loosen the skin from each chicken piece to create a pocket. Be careful not to tear the skin or peel it away completely. Spread an equal amount of the flavored butter under the skin of each piece. Use your fingers to massage the butter around so that it spreads out as evenly as possible under the skin. Pull the skin back in place over the butter.
  • Arrange the chicken in a shallow baking pan that can safely go on the stovetop. (An enamel-coated cast-iron pan such as a Le Creuset or a stainless-steel pan would work well.) Sprinkle with the remaining 1/2 teaspoons salt and more pepper. Bake, basting at first with the remaining lemon juice and then the pan juices, until the chicken is browned and cooked through, 55 to 60 minute.
  • Remove the chicken from the pan and loosely cover it with foil. Pour off the pan juices into a small measuring cup and let them settle until they separate. Spoon off the fat and discard it. Meanwhile, set the baking pan over medium-high heat and add the chicken stock and 1/2 cup water. Bring to a boil, scraping the bottom and sides of the pan to loosen the browned bits. Continue boiling until the sauce is reduced by half. Add the reserved pan juices, taste, and adjust the seasoning. Spoon a little sauce over each piece of chicken before serving.

Involves one of my favorite marinades for chicken because I love lemon. The preparation time does not include several hours of marinating.

1 chicken, cut in parts
1/3 cup light corn syrup
1 teaspoon grated lemon, rind of
1/3 cup lemon juice
1/4 cup corn oil
1/4 cup fine-chopped onion
1 1/2 teaspoons dried tarragon or 1 tablespoon fresh tarragon
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Place the chicken in a shallow dish.
  • In a small bowl stir together the remaining ingredients and pour over the chicken.
  • Cover and refrigerate several hours.
  • Remove the chicken from the marinade, reserving marinade.
  • Grill 6 inches from the source of heat until tender, turning and basting often with the marinade.

ROAST CHICKEN WITH TARRAGON-LEMON PAN SAUCE

1 Tbsp kosher salt
1/2 tsp pepper
3.5-4 lb whole chicken
1 Tbsp EVOO
1 shallot, minced
1 C chicken broth
2 tsp Dijon mustard
2 Tbsp unsalted butter
2 tsp minced fresh tarragon
2 tsp lemon juice
pepper

Steps:

  • Place rack in middle of oven; place 12-in oven-safe skillet on rack, and heat oven to 450. Combine salt and pepper in bowl. Pat chicken dry with paper towels. Rub entire surface with oil. Sprinkle last mixture evenly over surface of chicken, then rub in mixture with hands to coat evenly. Tie legs together with twine and tuck wing tips behind back. Transfer chicken, breast up, to preheated skillet in oven. Roast until breast registers 120 and thighs register 135, 25-35 min. Turn oven off and leave chicken in oven until breast registers 160 and thighs 175, 25-35 min. Transfer chicken to carving board and let rest, uncovered, for 20 min. Carve and serve. While chicken rests, remove all but 1 Tbsp fat from skillet using large spoon, leaving any fond and jus in the skillet. Place skillet over med-high heat, and shallot, and cook until softened, about 2 min. Stir in broth and mustard, scraping skillet bottom with wooden spoon to loosen fond. Simmer until reduced to 3/4 C, about 3 min. Turn off heat, whisk in butter, tarragon, and lemon juice. Season with pepper to taste, cover and keep warm.

GRILLED CHICKEN BREAST WITH TARRAGON-LEMON SAUCE

Skinless chicken breast marinated in mustard, then basted with a tarragon-lemon sauce while grilling. I use bone-in breasts, so reduce the cooking time if you use boneless breasts. Prep time does not include the 2 hour marinating time.

2 teaspoons Dijon mustard
4 chicken breast halves, Skinned
1/4 teaspoon black pepper, freshly ground
1/3 cup butter
1 teaspoon dried whole tarragon
2 teaspoons lemon juice
1 garlic clove, minced (sometimes I use 2, depending on the size of the clove)
1/4-1/2 teaspoon salt (depending on size of your chicken breast halves)

Steps:

  • Spread mustard on both sides of the chicken and sprinkle with the black pepper. Cover and refrigerate 2 to 4 hours.
  • Prepare your grill for cooking the chicken over medium coals.
  • Melt the butter in a small saucepan over low heat; stir in the remaining ingredients. Cook, uncovered, over low heat for 5 minutes, stirring occasionally. Remove the sauce from the heat.
  • Baste the chicken with the sauce. Grill over medium coals for 50 to 55 minutes or until done (if your fire is too hot, it will dry out your chicken.) Turn and baste the chicken every 10 minutes with the remaining sauce.

(Marinade: juice of 3 lemons, 1 cup white wine, chopped garlic, tarragon or rosemary)
1 5-6 lb. roasting chicken
Sel de gris avec herbes des provences
Freshly ground black pepper
1 bunch of fresh tarragon or fresh rosemary
3 whole lemons, cut into quarters to base, but left whole
Several cloves of garlic
2 T. butter

Steps:

  • Marinate the chicken for at least 4 hours with the white wine marinade. Preheat oven to 350 degrees. Remove the giblets and rinse the chicken inside and out. Rub the outside only with extra virgin olive oil and sprinkle the inside and outside with sel de gris. Stuff the lemons with crushed garlic cloves and then fill the cavity with the garlic filled lemons, pieces of butter and bunches of fresh tarragon or rosemary. Underneath the breast skin insert pieces of butter, more sprigs of the tarragon or rosemary, crushed cloves of garlic and thin slices of lemon. Close the cavity of the chicken using toothpicks or skewers and place the chicken breast side down in the roasting pan. Pour a cup of water into the pan and roast for about 1 ½ hours, basting constantly (check for doneness by inserting a fork into the chicken the juices should run clear.) Let the chicken sit for 20 mins and then carve. Serve with roasted new potatoes (add these to the roasting pan in the last ½ hr of cooking, making sure to brush with olive oil first) and snow peas or asparagus.
