Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease and flour a tube pan.
  • Mix cake flour, baking powder, baking soda, and salt into a large bowl.
  • Beat sugar and butter with an electric mixer on medium speed in a separate bowl until light and fluffy, about 3 minutes. Add eggs, 1 at a time, and beat until well combined. Beat in ricotta cheese, lemon juice, lemon zest, lemon extract, and vanilla extract until well blended. Add flour mixture and mix until batter is smooth. Pour batter into the prepared tube pan.

2/3 cup sugar
1/3 cup lemon juice
1/3 cup butter, cubed
CAKE BATTER:
1 cup butter, softened
2 cups sugar
3 large eggs, room temperature
1 cup ricotta cheese
1 cup buttermilk
1 tablespoon grated lemon zest
1-1/2 teaspoons vanilla extract
1 teaspoon lemon juice
3 cups all-purpose flour
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon salt
SUGARED LEMON ZEST:
6 medium lemons
1/4 cup sugar
FROSTING:
2/3 cup butter, softened
5-1/2 cups confectioners' sugar
1/3 cup 2% milk
1-1/2 teaspoons grated lemon zest
1-1/2 teaspoons vanilla extract
1/8 teaspoon salt
Colored sugar, optional

Steps:

  • For lemon curd, in a small bowl, combine eggs and egg yolks. In a heavy saucepan, cook and stir the sugar, lemon juice and butter over medium heat until smooth. Stir a small amount of hot mixture into eggs; return all to the pan, stirring constantly. Bring to a gentle boil; cook and stir until thickened, about 2 minutes. Cool slightly. Cover and chill until thickened, about 1-1/2 hours or overnight., Preheat oven to 350°. In a large bowl, cream butter and sugar until light and fluffy, 5-7 minutes. Add eggs, 1 at a time, beating well after each addition. Combine the ricotta cheese, buttermilk, lemon zest, vanilla and lemon juice. Combine the flour, baking powder, baking soda and salt; add to the creamed mixture alternately with the buttermilk mixture, beating well after each addition., Pour into 2 greased and floured 9-in. round baking pans. Bake until a toothpick inserted in the center comes out clean, 30-35 minutes. Cool for 10 minutes before removing from pans to wire racks to cool completely., Using a citrus zester, remove zest from lemons in long narrow strips; toss with sugar. Let stand for 30 minutes. (Save fruit for another use.) Meanwhile, in a large bowl, cream butter until light and fluffy. Add the confectioners' sugar, milk, grated lemon zest, vanilla and salt; beat until smooth., Cut each cake in half horizontally. Place 1 cake layer on a serving plate. Pipe a circle of frosting around edge of cake. Spread a third of the lemon curd inside frosting. Repeat layers twice. Top with remaining cake layer. Frost top and sides. If desired, pipe a decorative border of frosting using a star tip, and decorate sides of cake with colored sugar. Garnish with lemon zest strips. Store in the refrigerator.

½ teaspoon salt
½ teaspoon ground cardamom
¼ teaspoon ground ginger
2 cups whole-milk ricotta cheese, at room temperature

6 large eggs, at room temperature
2 tablespoons lemon zest
2 tablespoons lemon juice
2 tablespoons grated lime zest

  • Preheat the oven to 350 degrees F (175 degrees C). Grease and flour a 10-inch fluted tube pan (such as Bundt®).

  • Bake about 50 minutes. Because of the ricotta cake may have a slight wiggle.
  • If you wish, stem and slice strawberries. Add a few tablespoons of sugar and the juice of the remaining lemon. This is a great topping for the cake.

  • FOR CAKE:.
  • Heat oven to 325 degrees. Line a 9 inch spring form pan with foil, coat with non-stick cooking spray.
  • Cream butter and sugar until fluffy.

1 quart whole milk
1 3/4 cups semolina flour
1/2 teaspoon kosher salt

Steps:

  • Preheat the oven to 325. Butter an 11-inch round cake pan.

  • Pre-heat the oven to 1800c, gas mark 4, 1600C for convection oven.
  • Spread some margerine on an 18cm diameter cake tin, and sprinkle flour lightly on it.
  • Sieve the flour and add the baking powder.
  • In a bowl, rub in the butter and sugar, until the mixture becomes creamy. Use an electric beater for good results.
  • Add the egg yolks and beat well until it becomes foamy. Add this to the ricotta. Mix well with your hands.

  • Line a baking sheet with parchment paper.

1 teaspoon butter, melted
1/2 cup sugar, plus 1 tablespoon for pan
1/4 cup all-purpose flour
1 whole egg, separated
2 egg whites

Zest of 2 lemons
2 tablespoons freshly squeezed lemon juice

Steps:

  • Wrap ricotta tightly in fine cheesecloth; place in a colander over a bowl. Place a heavy bowl or cans on top; let drain, refrigerated, for 3 hours or overnight.
  • Heat oven to 350 degrees. Coat a 6-inch springform pan with melted butter and 1 tablespoon sugar; set aside. Steps:

  • Preheat oven to 350 degrees F. Grease a 15 x 5 x 3 inch loaf pan with butter and dust with flour. In a medium bowl sift together flour, baking powder, and salt.
  • Using a stand mixer, cream together ricotta cheese, butter and sugar until light and fluffy, approximately 3-5 minutes. Please not the mixture will be slightly lumpy, no worries. With the machine running, add the eggs one at a time and mix until just incorporated. Add the vanilla bean (I prefer Nielson-Massey's Madagascar Vanilla Bean paste), lemon zest, lemon juice (pulp okay)and mix until well combined. Don't worry if your batter is not smooth - the batter will not end up smooth.
  • Add the dry ingredients 1/3 of a cup at a time and mix until just incorporated until you have added all your dry ingredients. Remove your bowl from the stand mixer and fold in your berries with a spatula. Pour your batter into your prepared loaf pan. (You could use a bundt cake pan if you prefer). Bake your cake at 350 degrees for 45-55 minutes, until a toothpick inserted in center comes out clean and the sides begin to pull away from the edges of your pan. Let the cake cool in the pan for approximately 10 minutes then turn out unto a wire rack to cool completely. Your house should smell lemony good!
  • To serve, slice the pound cake & serve with a dollop of whipping cream or some vanilla bean ice cream and a fresh mint leaf. Enjoy!

This is a beautifully rich gluten-free cake that unlike many GF cakes will stay moist for days. It's based on a cake from the blog Lucullian Delights. The delicate tastes of almond and lemon compliment each other in a really wonderful way. This would taste great with fresh fruit. I prefer the Almond Meal/Flour from Bob's Red Mill, which can be bought at most health food stores or online. Make sure the gluten-free flour mix you use contains xanthan or guar gum! Pamela's works best.

3/4 cup Pamelas ultimate baking and pancake mix
7/8 cup sugar
1/2 teaspoon lemon extract
1 lemon, juice of
1/2 teaspoon lemon zest

Steps:

  • Preheat the oven to 350°F.
  • Whisk eggs and sugar. Add almond meal and butter, and stir well.
  • Pulse ricotta in blender or mash by hand, and then add to batter. Stir thoroughly to combine before folding in Pamela's Baking and Pancake Mix. Lastly, add the lemon zest, lemon juice and lemon extract and mix the batter to blend.
  • Grease 8" round cake pan. Pour batter into the cake pan, and bake for 30 minutes.
  • Cool for 10 minutes before slicing and serving warm. Dust with powdered sugar and/or garnish with fruit.

1/2 cup (1 stick) unsalted butter
1 cup sugar
1 cup ricotta cheese (at room temperature)
3 eggs (at room temperature)
3 teaspoons lemon zest (from 3 lemons)
3 tablespoons freshly squeezed lemon juice (from 1 lemon)
1/2 teaspoon vanilla extract
1 ¾ cup all purpose flour
1 1/2 teaspoons baking powder
1/2 teaspoon kosher salt
For the glaze:
1/2 cup powdered sugar
1/8 teaspoon kosher salt
1 tablespoon freshly squeezed lemon juice (from 1/2 lemon)

Steps:

  • Preheat the oven to 350 degrees F. Butter a 9x5 inch loaf pan and line the bottom and sides with a strip of parchment paper.
  • To a large bowl add the butter, sugar and ricotta cheese. Using a handheld mixer, beat the mixture on medium speed until light and fluffy, about 3 minutes. Reduce the speed to low and add the eggs, one at a time, making sure each addition is fully incorporated before adding the next egg. Add the lemon zest, lemon juice and vanilla extract and beat to combine. Add the flour, baking powder and salt. Using a rubber spatula, fold the ingredients together until just combined. Do not over mix. Bake for 50 to 60 minutes or until a toothpick inserted in the center comes out clean. Remove to a rack to cool for 1 hour.
  • In a small bowl, whisk together the powdered sugar, salt and lemon juice until smooth. Poke a few holes in the cake using a small skewer. Drizzle the top with the glaze and allow to set for at least 15 minutes. Remove from the pan and slice to serve.
  • *Cooks Note: To make this gluten free simply sub in 1 cup all-purpose gluten free flour blend and 1/2 cup almond flour for the all-purpose flour in the recipe.

2 tsp baking powder
1 tsp salt
3/4 cup unsalted butter (room temperature)
1 1/2 cups ricotta cheese
1 1/2 cups granulated sugar
3 pcs large eggs (room temperature)
1 tsp vanilla extract
1 tsp Meyer lemon zest (see note 1)
2 tbsp Meyer lemon juice

Steps:

  • Preheat oven to 350F. Line the bottom and sides of a 9x5 inch loaf pan with parchment paper and generously grease with non-stick cooking spray. Set aside.
  • In a medium bowl, combine 1 1/2 cups flour, 2 teaspoons baking powder and 1 teaspoon salt. Set aside.
  • Using a handheld electric mixer or a stand mixer fitted with the paddle attachment, beat 3/4 cup butter, 1 1/2 cups ricotta cheese and 1 1/2 cups sugar on medium-high speed until incorporated, 2-3 minutes. The mixture will look like scrambled eggs at this point and that's OK!
  • Switch to low speed and add the eggs one at a time until combined. Then add 1 teaspoon vanilla, 1 teaspoon lemon zest and 2 tablespoons lemon juice.
  • Once your wet ingredients are incorporated, add your flour mixture a little a time until just combined. Do not over beat.
  • Transfer your batter into your pan and bake for 50-60 minutes or until a toothpick inserted in the centre comes out with minimal crumbs (see note 2).
  • Cool in the pan for 10-15 minutes then transfer to a wire rack to cool completely.

PLUM, LEMON & RICOTTA CAKE

3-4 plums, halved and stoned
2 tbsp light brown soft sugar
150g unsalted butter, melted, plus extra for the tin
250g ricotta
230g golden caster sugar
2 lemons, zested
3 eggs, lightly beaten
180g self-raising flour
1⁄2 tsp baking powder
40g hazelnuts, chopped
crème fraîche, to serve

Steps:

  • Heat the oven to 190C/170C fan/ gas 5. Arrange the plums cut-side down in a single layer in a roasting tin, sprinkle over the brown sugar and roast for 10 mins until tender but still holding their shape. Leave to cool a little in the tin.
  • Butter the base and sides of a 20cm springform tin and line with baking parchment. Tip the ricotta, caster sugar and lemon zest into a stand mixer and beat for 5 mins, or do this with an electric whisk. Beat in the eggs, one at a time, beating well after each addition. With the motor running, slowly pour in the butter, beating until fully combined. Add the flour and baking powder, and quickly mix just to incorporate - don't over-beat. Spoon into the tin, then press the roasted plums on top, cut-side up, and sprinkle over the hazelnuts.
  • Bake for 50 mins-1 hr, or until a skewer inserted into the middle comes out clean. Leave to cool until just warm, or fully cool. Serve with crème fraîche.
