8 ounces spaghetti (or other pasta)
2 tablespoons olive oil
3 garlic cloves minced
2 pouches 2.6 ounces tuna in olive oil
1 tablespoon lemon juice (plus zest)
Salt & pepper to taste
2 tablespoons capers
2 tablespoons fresh parsley chopped (divided)
Grated parmesan (for serving)

Steps:

  • Bring a large pot of salted water to a boil. Add the pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta cooking water, then drain the pasta. Return to the pot to keep warm.
  • In the wide pan, heat the olive oil at medium heat. Then add the garlic and cook until fragrant, about 30 seconds. Stir in the tuna, lemon juice and zest, salt and pepper, and heat through for 1 minute.
  • Add the pasta, capers and 1 tablespoon chopped parsley, and continue to stir until the spaghetti is well coated. Add as much of the reserved pasta water as needed to thin out the sauce.
  • Garnish with remaining parsley and serve warm.

4 (6 to 8 ounce) tuna steaks
2 tablespoons olive oil
3 tablespoons lemon juice
1/2 teaspoon lemon pepper seasoning
1/2 teaspoon salt
1 teaspoon grated lemon peel

Steps:

  • Gather the ingredients.
  • Combine the oil, lemon juice, lemon pepper, salt, and lemon peel in a small bowl and mix well.
  • Rub marinade into the tuna steaks. Cover and refrigerate the tuna for 1 to 2 hours.
  • Cook on a ​2-sided grill for 2 to 3 minutes per each 1/2 inch of meat thickness, until done as desired. You can also cook on charcoal or gas grill, or on a cast-iron grill pan on the stove, 5 to 8 minutes, turning once, until done as you'd like.

2 tablespoons reduced-calorie mayonnaise
1 teaspoon lemon zest
1 tablespoon fresh lemon juice
1/2 teaspoon black pepper
1/2 small carrot, grated

1 medium shallot, minced
4 slices reduced-calorie whole wheat bread, toasted

4 fresh or frozen tuna steaks, cut 1-inch thick (about 1 pound)
2 tablespoons lemon juice
1 teaspoon reduced-sodium soy sauce
1 teaspoon snipped fresh thyme, or 1/2 teaspoon dried thyme, crushed
1/2 teaspoon salt-free lemon-pepper seasoning
Nonstick cooking spray
2 cups chopped broccoli
1/2 cup packaged coarsely shredded fresh carrots
1 cup reduced-sodium chicken broth
3/4 cup water
2 cloves garlic, minced
1 cup whole wheat couscous
1 tablespoon fresh thyme sprigs (optional)

Steps:

  • Thaw fish if frozen. Rinse fish steaks; pat dry. In a small bowl combine lemon juice, soy sauce, snipped thyme, and seasoning. Brush mixture over one side of steaks. Lightly coat the unheated rack of a broiler pan with cooking spray. Place fish, brushed sides up on broiler pan. Broil 4 inches from the heat for 8 to 12 minutes or until fish begins to flake when tested with a fork, turning once and brushing with lemon juice mixture halfway through cooking. Meanwhile, in a medium saucepan bring broccoli, carrot, chicken broth, water, and garlic just to boiling. Cook, covered, about 3 minutes or until broccoli is barely crisp-tender. Stir in couscous. 2 ahi tuna steaks
kosher salt
crushed black peppercorns
1/2 lemon
1 teaspoon capers
2 tablespoons butter
1 tablespoon safflower oil (whatever kind of oil you have available) or 1 tablespoon olive oil

Steps:

  • Sprinkle salt and black pepper on both sides of the tuna steaks.
  • Squeeze fresh lemon juice over the steaks.
  • Heat 1 tbs of oil in a pan.
  • Add 1 tbs of butter.
  • Turn the heat down low to medium-low.
  • Place the tuna in the pan.
  • Add capers, and squeeze more lemon juice into the pan.
  • Add slices of lemon to the pan and 2nd tbs of butter.
  • Shake the contents of the pan a bit and let cook for about 4 minutes.
  • Turn the steaks over and cook for another 5 minutes.
  • Serve the tuna with the slices of lemon and capers from the pan.

This is very quick and easy but extremely tasty. I sometimes like to substitute the Dijon mustard with Coleman's English Mustard for a really HOT taste. Lemon thyme is also nice used in place of the chives.

4 tuna steaks, 3/4 inch thick
1/2 cup stock
1/2 teaspoon salt
1/2 tablespoon lemon juice
1/2 teaspoon black pepper, coarse ground
1 tablespoon Dijon mustard, country style
1 tablespoon oil
1 tablespoon chives, finely chopped

Steps:

  • Season both sides of tuna.
  • Heat oil in frying pan over medium-high heat.
  • Add tuna; cook for about 8 minutes, until tuna is browned on the outside, but slightly pink on the inside.
  • Remove tuna from the pan.
  • To same pan, add stock and lemon juice and heat the mixture to boiling point.
  • Remove from heat.
  • Add mustard and chives and stir.
  • Pour sauce over tuna.
  • Serve immediately.
