1 quart heavy cream
1 cup powdered sugar
1 tablespoon clear imitation vanilla
One 25-ounce package lemon sandwich cookies
One 11-ounce jar raspberry preserves (about 1 cup)
1/2 cup fresh raspberries
One 11-ounce jar blueberry preserves (about 1 cup)
1/2 cup fresh blueberries
1/4 cup fresh mint leaves

Steps:

  • Place the cream, powdered sugar and vanilla in a large bowl and, using a hand mixer, whip until stiff.
  • Spoon one-third of the whipped cream mixture into a 10-inch round springform pan, smoothing evenly with a spatula. Top with half of the lemon cookies. Stir the raspberry preserves and disperse as evenly as possible over the cookies. Sprinkle over half of the raspberries, then top with another third of the whipped cream, followed by the remaining cookies. Stir the blueberry preserves and distribute as evenly as possible over the cookies. Sprinkle over half of the blueberries, then top with the remaining whipped cream and spread evenly. Garnish with the remaining fresh berries. Cover and refrigerate for 6 hours.
  • Run a paring knife around the springform pan and release the wall of the pan from around the cake, leaving the cake on the bottom of the pan. Transfer to a serving platter, top with the mint leaves and slice.

4 lemons
1 cup water plus additional for blanching
1 1/2 cups granulated sugar, divided
1 (14-ounce) can sweetened condensed milk
3/4 cup chilled heavy cream
1 tablespoon confectioners sugar
1/2 teaspoon pure vanilla extract
1 (8- by 4-inch) store-bought all-butter pound cake (3/4 to 1 pound), chilled

Steps:

  • Make candied peel:
  • Remove zest (peel) from 2 lemons in wide strips with a vegetable peeler (see Tips, page 118), then cut lengthwise with a sharp knife into 1/8-inch-wide julienne strips. Reserve lemons for juicing.
  • Fill a 2-quart heavy saucepan halfway with water, then add julienned peel. Bring to a boil and simmer 15 minutes. Drain peel in a sieve and rinse.
  • Bring water (1 cup) and 1 cup granulated sugar to a boil in saucepan, stirring until sugar has dissolved. Add peel and gently simmer until translucent, about 15 minutes.
  • Remove peel from syrup with a slotted spoon, letting syrup drain off into saucepan. Spread out on a sheet of wax paper and cool to room temperature.
  • Toss peel with remaining 1/2 cup granulated sugar, stirring with a fork to coat and separate. Transfer sugared peel to clean dry sieve and shake off excess sugar, then spread out on a fresh sheet of wax paper to dry slightly. Make lemon filling while peel simmers and cools: Grate enough zest from remaining 2 lemons with a rasp to measure 2 teaspoon, then squeeze enough juice from all lemons to measure 2/3 cup. Whisk together zest, juice, and condensed milk. Chill until cold, at least 30 minutes.
  • Whip cream:
  • Beat heavy cream with confectioners sugar and vanilla in a chilled bowl with a whisk or electric mixer until it just holds stiff peaks. assemble cake: Halve cake crosswise, then trim crust from all sides. Cut each block horizontally into 4 (1/2-inch-thick) squares. Halve each square diagonally into 2 triangles.
  • For each serving, layer 2 triangles with lemon filling, offsetting corners. Top cake with whipped cream and candied lemon peel.

1 18.25-ounce-package lemon cake mix
Topping
1 envelope whipped topping mix (2- to 2 1/2-cup yield) or two 8-ounce tubs of Cool Whip
1 3-ounce package lemon instant pudding mix
1 1/2 cups cold whole milk (omit milk if using Cool Whip)

Steps:

  • Dissolve gelatin in 3/4 cup boiling water. Add 1/2 cup cold water and set aside. Mix and bake cake as directed in a 9-by-13-by-2-inch pan. Cool cake 20 to 25 minutes. Poke holes through top of warm cake (still in pan) with a drinking straw. Space holes about 1 inch apart. With a measuring cup with a spout, slowly pour gelatin mixture into holes. Refrigerate cake while preparing topping. Topping In a chilled, deep bowl, mix either by hand or in a mixer the whipped topping mix, instant pudding and cold milk until stiff, 3 to 8 minutes. If using Cool Whip topping, mix in a blender with the instant lemon pudding mix and omit the milk. Mix well, about 5 minutes, scraping down sides of the bowl so the pudding mix is well incorporated. Immediately frost cake and store in refrigerator at least four hours. Cake is best served chilled. Frosted cake may be frozen for a month or refrigerated for up to 2 weeks.

4 cups mixed berries (raspberries, blueberries and/or blackberries; about three 1/2-pint containers)
2 tablespoons granulated sugar
Finely grated zest and juice of 2 lemons
1 8-ounce package cream cheese, at room temperature
1 cup confectioners' sugar
2 teaspoons vanilla extract
3 cups cold heavy cream
2 6-ounce packages lemon cookies

Steps:

  • Toss 1 cup each strawberries and mixed berries with 1 tablespoon granulated sugar and the juice of 1/2 lemon in a medium bowl; set aside to macerate, 30 minutes.
  • Meanwhile, puree 1 cup mixed berries in a blender until smooth. Refrigerate the remaining 2 cups each strawberries and mixed berries for topping.
  • Beat the cream cheese, confectioners' sugar, vanilla, the zest of both lemons and the juice of 1 lemon in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Add the heavy cream and beat until slightly stiff peaks form, 1 to 2 minutes. Transfer half of the whipped cream mixture to a separate bowl and fold in the berry puree.
  • Line a 9-by-5-inch loaf pan with plastic wrap, leaving an overhang on all sides. Spread 1 cup of the plain whipped cream mixture in the pan (refrigerate the rest for topping). Cover with a single layer of cookies. Spread 1 cup of the berry whipped cream over the cookies, then top with half of the macerated berries and another 1 cup berry whipped cream.   • In a medium bowl, beat the cream with a hand mixer until soft peaks form. Set aside.
  • In a large bowl, combine the cream cheese and confectioners' sugar with the lemon juice and zest. Beat until creamy and well blended. Add the raspberries and use a rubber spatula to smash and stir them into the cream cheese mixture. Gently fold in the whipped cream.
  • Line a 9x3-inch loaf pan with a sheet of parchment paper long enough to hang over the sides (this will act as a sling to lift out the cake when it's ready to serve).

3 cups heavy whipping cream (very cold)
1/4 cup granulated sugar
2 tablespoons lemon zest + 2 tablespoons fresh lemon juice (from about 2 medium lemons)
3 sleeves graham crackers (8 double crackers each)
1 pound fresh raspberries

Steps:

  • Add whipping cream to the bowl of a stand mixer fitted with the whisk attachment, or add to a large bowl and use the whisk attachments on a hand blender. Or whisk by hand, if you're feeling up to it! Whip cream on medium speed until it begins to thicken. Add sugar and lemon juice and continue whipping until soft peaks form. Don't whip until very stiff; it makes the cake too difficult to assemble! With a spatula or wooden spoon, fold in the lemon zest.
  • Smear a little whipped cream on the bottom of a 9-inch x 13-inch baking dish. This will help to hold the first layer of graham crackers in place. Lay a single layer of graham crackers over the whipped cream, breaking a few apart if necessary to make them fit. Add 1/3 of the whipped cream to the graham crackers and smooth. Top with 1/3 of the raspberries - if they're large ones, I like to break them in half first. Top with another layer of graham crackers, another 1/3 of the whipped cream, and another 1/3 of the raspberries. Then add the remaining graham crackers and spread on the last of the whipped cream. Top decoratively with remaining raspberries.
  • Carefully cover with plastic wrap and refrigerate for at least 4 hours, up to 36 hours.
  • Remove from fridge, cut into squares, and serve.

What an easy peasy lemon cake recipe. It's sweet, tart, creamy, and refreshing. The hardest part is letting the cake cool before adding the lemony filling. If you like lemon desserts, this will be a big hit.

1 box Duncan Hines French Vanilla cake mix
3 large eggs
1 1/3 c Sprite or 7-up
1/3 c vegetable oil
FILLING
1 can(s) Eagle Brand condensed milk (14 oz)
1/2 c fresh lemon juice
ICING
16 oz Cool Whip
2 can(s) Eagle Brand condensed milk (14 oz each)
1 c fresh lemon juice

Steps:

  • 1. Preheat oven to 350. Spray and flour 2 9-inch cake pans.
  • 2. Mix cake mix and eggs (slightly beaten). Stir in oil, mix in Sprite or 7-up until blended. Beat about a minute more.
  • 3. Pour into greased and floured pans. Cook about 25 minutes or until a toothpick comes out clean... DO NOT OVERCOOK.
  • 4. Let cake cool and slice each half into two layers. This will make 4 layers.
  • 5. To make the filling, combine condensed milk and lemon juice. Put filling between layers, not to let filling seep onto sides. Take each cake piece and place it on top of the filling. You should now have 2 complete layers.
  • 6. To make the icing, mix condensed milk and lemon juice together then fold into Cool Whip.
  • 7. Place a bit of the Icing between the 2 layers.
  • 8. Stack the cake and then ice the rest of the cake.
  • 9. Put a dollop of any leftover icing on each slice of cake.

3 tablespoons fresh lemon zest (from 2 lemons)
9 ounces lemon wafer cookies
20 gingersnap cookies
10 ounces lemon curd
2 tablespoons flaked coconut (optional)

Steps:

  • Whip the cream until stiff peaks form. Fold in sugar and 2 tbsp of the lemon zest.
  • Spread a very thin layer of the cream in the bottom of a 8 x 12 pan. (You can use a 9x13 pan also but the cake will be thinner.) Place the gingersnap cookies in an even layer over the cream, breaking some in half to fill in holes if necessary.
  • Very carefully heat the lemon curd slightly over a pan of boiling water, or microwave it for 10-15 seconds (be very careful or it will burn!) Drizzle some lemon curd over the cookie layer.
  • Spread a layer of cream over the cookies and lemon curd.
  • Repeat each layer with the lemon thins, curd, and cream, ending with a layer of cream on the top. Sprinkle with the remaining lemon zest and coconut.
  • Refrigerate overnight and cut with sharp knife to serve.

1 cup homemade or store-bought lemon curd, divided
16 graham crackers, divided
1 1/2 cups Blueberry-Chia Seed Jam, divided
1/3 cup fresh blueberries

Steps:

  • Line a 9x5" loaf pan with plastic wrap, leaving overhang on all sides. Using an electric mixer on medium-high speed, beat mascarpone, powdered sugar, and lemon zest in a large bowl until fluffy, about 4 minutes. Reduce speed to low; gradually add cream. Increase speed to medium as mixture thickens; beat until medium peaks form. Transfer two-thirds of mascarpone mixture to another large bowl and fold in 1/2 cup lemon curd. Cover remaining mascarpone mixture; chill until ready to unmold and cover cake.
  • Place a single layer of graham crackers over bottom of prepared pan, breaking as needed to fit. Using a small offset spatula, evenly spread a quarter of lemon cream over graham crackers. Dollop 1/2 cup jam over top, then gently spread evenly over lemon cream. Drizzle 1/4 cup lemon curd over. Spoon a third of remaining lemon cream over curd and top with another layer of graham crackers. Repeat layering process with half of remaining lemon cream, 1/2 cup jam, and remaining lemon curd. Finish with a final layer of lemon cream, then graham crackers. Cover with plastic wrap; freeze at least 6 hours. Cover and chill remaining jam until ready to serve cake.
  • Uncover cake and invert pan onto a platter. Using the plastic overhang to help you, unmold cake; peel off plastic. Spread top and sides of cake with reserved mascarpone mixture (if mixture looks a little loose, whisk until soft peaks form before using). Chill in freezer at least 15 minutes.
  • Just before serving, mix blueberries into reserved jam and spoon over cake.

3/4 c vegetable oil
1 can(s) crushed pineapple in juice (small can)
4 eggs
1 dash(es) salt
1 c powdered sugar
1/2 c fresh squeezed lemon juice
2 Tbsp butter, softenend

Steps:

  • 1. CAKE: Pre-heat oven to 350 degrees. Mix the first 6 ingredients together, low speed for about 30 seconds in incorprate then for about 2 minutes on a medium speed until well mixed. (Note: Use these ingredients in place of the ingredients listed on the cake mix box. Also use the entire can of crushed pineapple, including the juice.)
  • 2. Pour into a greased Pyrex 9 x 13 pan. Bake for 40 minutes. While the cake is baking, prepare the Glaze by stiring together the powdered sugar, lemon juice and butter. The butter will not break down entirely, small lumps of butter is ok.
  • 3. After removing the cake from the oven and while it is still very warm, poke holes all over is a fork. Then pour the glaze over the top. The warm cake will melt the little lumps of butter as the glaze soaks in to the cake. Refridgerate until well chilled. Serves 8 -12 people depending on their appetite. Around my house I am lucky if it serves 6.

3 cups chopped strawberries (about 1 pound)
4 cups mixed berries ( raspberries, blueberries and/or blackberries; about three 1/2-pint containers)
2 tablespoons granulated sugar
Finely grated zest and juice of 2 lemons
1 8 -ounce package cream cheese, at room temperature
1 cup confectioners' sugar
2 teaspoons vanilla extract
3 cups cold heavy cream
2 6 -ounce packages lemon cookies

Steps:

  • Toss 1 cup each strawberries and mixed berries with 1 tablespoon granulated sugar and the juice of 1/2 lemon in a medium bowl; set aside to macerate, 30 minutes. Meanwhile, puree 1 cup mixed berries in a blender until smooth. Refrigerate the remaining 2 cups each strawberries and mixed berries for topping. Beat the cream cheese, confectioners' sugar, vanilla, the zest of both lemons and the juice of 1 lemon in a large bowl with a mixer on medium-high speed until fluffy, about 4 minutes. Add the heavy cream and beat until slightly stiff peaks form, 1 to 2 minutes. Transfer half of the whipped cream mixture to a separate bowl and fold in the berry puree. Line a 9-by-5-inch loaf pan with plastic wrap, leaving an overhang on all sides. Spread 1 cup of the plain whipped cream mixture in the pan (refrigerate the rest for topping). Cover with a single layer of cookies. Spread 1 cup of the berry whipped cream over the cookies, then top with half of the macerated berries and another 1 cup berry whipped cream. Repeat with another layer of cookies, berry whipped cream and the remaining macerated berries and berry whipped cream. Top with another layer of cookies (you may have some left over). Cover with plastic wrap and refrigerate at least 6 hours or overnight. Before serving, toss the remaining 2 cups each strawberries and mixed berries with the remaining 1 tablespoon granulated sugar and juice of 1/2 lemon in a large bowl; set aside to macerate, 30 minutes. Uncover the cake and invert onto a platter; remove the plastic. Cover with the reserved plain whipped cream. Top with the macerated berries.

1/2 teaspoon lemon peel, plus more for garnish
1/2 teaspoon vanilla extract
1/8 teaspoon no-calorie sweetener
6 full sheet low-fat whole-grain graham crackers,
broken into halves

  • 1. Line 8 1/2" by 4 1/2" loaf pan with plastic wrap, leaving overhang on two long sides. 2. In bowl, stir yogurt, syrup, lemon peel, vanilla, and sweetener to blend. 3. Line bottom of loaf pan with 3 graham cracker halves. Spread one-third of yogurt mixture over crackers. Repeat layering twice. Top with remaining 3 crackers. 4. Using plastic overhang, wrap cake. 1/4 cup (56 g) unsalted butter, very soft
3 cups (720 ml) cream
1/2 cup (50 g) powdered sugar
1/4 teaspoon salt
2 large lemons, zested and juiced (about 2 tablespoons zest and 1/3 cup / 75 ml juice)
25 to 30 graham crackers, from about 4 sleeves
1 cup (240 ml) Lemon Curd (store-bought or homemade - see our tutorial here), slightly warmed, divided

Steps:

  • In the bowl of a stand mixer (or use a large bowl and a hand mixer), whip the butter until very soft. Gradually whip in the cream. When it has been smoothly combined with the butter, add the sugar, salt, and lemon zest. Whip until the cream forms firm peaks, then slowly beat in the lemon juice. Continue beating until completely combined. The cream should still hold soft peaks. Smear a small spoonful of the lemon cream in the bottom of a 9-by-13-inch (23-by-33-cm) baking dish. Lay down a layer of graham crackers and spoon 3/4 to 1 cup (180 to 240 ml) of the whipped cream over the top. Drizzle with 1/4 cup (60 ml) of the lemon curd. Repeat three more times, finishing with a top layer of whipped cream. (You will have four layers of graham crackers, and four layers of whipped cream.) Drizzle the final 1/4 cup (60 ml) lemon curd over the top of the cake in three straight lines, then draw a knife through these lines perpendicularly, creating a streaked checkerboard pattern. 1 (8 ounce) container Cool Whip
3 cups whole milk
1 (16 ounce) package graham crackers
1/2 cup butter, softened
2 cups powdered sugar
2 tablespoons milk
2 tablespoons lemon juice

Steps:

  • Line a 9x13 inch pan with parchment paper or aluminum foil (to help get cake out after freezing).
  • Cover pan completely with one layer of graham crackers, breaking the grahams into smaller pieces to fill gaps.
  • In a large bowl, combine pudding packets, Cool Whip, and milk. Pour half the mixture evenly over the graham crackers.
  • Add another layer of graham crackers, top with remaining pudding mixture, and one final layer of graham crackers.
  • In a separate bowl, combine softened butter, milk and lemon juice to make frosting. Start with 1 cup of powdered sugar, mix completely. Continue to add more powdered sugar until the frosting is at the desired consistency.
  • Spread frosting evenly over the cake. Cover and freeze for at least 4 hours, or overnight.
  • Remove from freezer. Slice, serve and enjoy!
