My daughter saw this dessert on the cover of "Kraft's What's cooking?" magazine and asked me to make it for a special lunch. It is great light dessert that you can make ahead. It looks so elegant and the citrus flavour is out of this world! Cook time is freezer time.

2 cups lime sherbet, thawed slightly
1 (250 g) package cream cheese
1 (12 ounce) can sweetened condensed milk (or make your own with Sweetened Condensed Milk)
1/2 cup lemon juice
1 (1 liter) container Cool Whip
lemon slices (to garnish) or lime slice (to garnish)

Steps:

  • Spread lime sherbet on the bottom of a 9 x 5 loaf pan.
  • Freeze 10 minutes.
  • Beat cream cheese and condensed milk until fluffy.
  • Add lemon juice.
  • Stir in Cool Whip.
  • Spread mixture on top of sherbet layer.
  • Freeze 3 hours or overnight.
  • To serve invert on serving pan and garnish with lemon or lime slices.

This is a favorite at my summer get togethers. This should be prepared and frozen a day ahead, just remove from the freezer about 10 minutes before serving...you are going to love this drink! You can always add in more sugar for a sweeter taste. Although the original recipe states to use freshly squeezed lemon juice, I use half bottled and half fresh for this.

1 (12 ounce) can frozen limeade concentrate, thawed just enough to mix
1 1/2 cups lemon juice
3 (12 ounce) cans white rum (use cans from frozen concentrate)
3 (12 ounce) cans water (use cans from frozen concentrate)

Steps:

  • Combine all ingredients.
  • Transfer to a large plastic container.
  • Place in the freezer overnight.
  • Remove about 10 minutes before serving.
  • Serve in fancy glasses.

3 lemons, chilled
1 cup sugar
2 tablespoons rum
1/4 cup corn syrup
2 1/2 cups very cold water

Steps:

  • Grate the zest from 1 lemon and set aside.
  • Juice the lemons, saving the pulp but removing pits.
  • Stir the sugar, corn syrup, and water together in a mixing bowl until the sugar dissolves.
  • Stir in the lemon juice/zest.
  • (You can also add the rum here, but if you wait until the end, it won't take as long to freeze because of the alcohol.) Transfer to ice cream maker and freeze.
  • Just before it is at sorbet consistency, add rum.

1 tub (8 oz.) PHILADELPHIA Cream Cheese Spread
1 can (14 oz.) sweetened condensed milk
1/2 cup lemon juice
1 tub (8 oz.) COOL WHIP Whipped Topping, thawed

Steps:

  • Spoon sherbet into foil-lined 9x5-inch loaf pan; spread to form even layer in pan. Freeze 10 min.
  • Beat cream cheese spread in large bowl with whisk until creamy. Gradually whisk in sweetened condensed milk, then lemon juice until blended. Stir in COOL WHIP; spread over sherbet layer in pan.
  • Freeze 3 hours. Unmold dessert onto plate just before serving.

Is a daiquiri a daiquiri only if it includes lime? Nope. Even bars in Cuba, the drink's homeland, play pretty fast and loose with daiquiri variations. The lime shortage of 2014 inspired me to try it with lemon instead, and the result is bracing and a little disorienting (in a good way) - like a union between a traditional daiquiri and a Tom Collins. And I like what the distinctive funkiness of rhum agricole adds to the drink. Swap in different fresh, seasonal citrus juices whenever the mood strikes (but adjust the amount of simple syrup accordingly, as other fruits are inherently sweeter than lemons). I'm thinking a daiquiri with clementine juice will hit the spot come winter.

2 ounces rhum agricole blanc (like Neisson)
1 ounce fresh lemon juice
½ ounce simple syrup
Lemon verbena for garnish

Steps:

  • Shake all ingredients except lemon verbena with ice, and strain into a cocktail glass.
  • Garnish with verbena.
