1 large lemon
2 tablespoons olive oil
3 pounds chicken parts
1 medium onion, diced
1 clove garlic, minced
2 packets Swanson® Flavor Boost™ Concentrated Chicken Broth
3 cups fresh broccoli florets

Steps:

  • Grate 1 tablespoon zest and squeeze 1/4 cup juice from the lemon.
  • Heat 1 tablespoon oil in a 12-inch skillet over medium-high heat. Add the chicken and cook until well browned on all sides. Remove the chicken from the skillet. Pour off any fat.
  • Reduce the heat to medium. Heat the remaining oil in the skillet. Add the onion and garlic and cook and stir for 2 minutes. Stir in the concentrated broth and lemon juice. Return the chicken to the skillet. Reduce the heat to low. Cover and cook for 20 minutes or until the chicken is cooked through.
  • Stir the broccoli and lemon zest in the skillet. Cover and cook until the broccoli is tender-crisp.

Kosher salt
8 cups broccoli florets (4 heads)
1/2 pound farfalle (bow tie) pasta
2 tablespoons unsalted butter
2 tablespoons good olive oil
1 teaspoon minced garlic
1 lemon, zested
1/2 teaspoon freshly ground black pepper
1 tablespoon freshly squeezed lemon juice
1/4 cup toasted pignoli (pine) nuts
Freshly grated Parmesan, optional

Steps:

  • Cook the broccoli for 3 minutes in a large pot of boiling salted water. Remove the broccoli from the water with a slotted spoon or sieve. Place in a large bowl and set aside.
  • In the same water, cook the bow-tie pasta according to the package directions, about 12 minutes. Drain well and add to the broccoli.
  • Meanwhile, in a small saute pan, heat the butter and oil and cook the garlic and lemon zest over medium-low heat for 1 minute. Off the heat, add 2 teaspoons salt, the pepper, and lemon juice and pour this over the broccoli and pasta. Toss well. Season to taste, sprinkle with the pignolis and cheese, if using, and serve.
  • To toast pignolis, place them in a dry saute pan over medium-low heat and cook, tossing often, for about 5 minutes, until light brown.

4-2/3 cups uncooked bow tie pasta
12 ounces boneless skinless chicken breast, cut into 1-inch strips
1/2 teaspoon salt-free lemon-pepper seasoning
2 garlic cloves, minced
1 tablespoon canola oil
1 cup chicken broth
1 cup frozen peas, thawed
2/3 cup shredded carrots
1/4 cup cubed reduced-fat cream cheese
2 teaspoons lemon juice
1/2 teaspoon salt
1/3 cup shredded Parmesan cheese

Steps:

  • Cook pasta according to package directions. Meanwhile, sprinkle chicken with lemon-pepper. In a large nonstick skillet, stir-fry chicken and garlic in oil until chicken juices run clear. , Remove and keep warm. Add broth, peas, carrots, cream cheese and lemon juice to the skillet; cook and stir until cheese is melted. Drain pasta. Add pasta, chicken and salt to vegetable mixture; cook until heated through. 1 1/2 pounds chicken cutlets
Flour, for dredging
Beaten egg
Olive oil, for pan
2 tablespoons butter
2 garlic cloves
1 tablespoon Italian seasoning
1 cup marsala
1 can chicken broth
1 small basket mushrooms, thinly sliced
2 plum tomatoes
10 ounces fresh or frozen peas
Parsley, to garnish
1 pound bow tie pasta, cooked

Steps:

  • Clean cutlets and cut into cubes. Dredge them in flour, egg and flour, brown in frying pan with olive oil and butter. As they come out of pan let them rest on paper towels to absorb oil. When all the chicken has been browned, put all chicken back into the same pan without cleaning add garlic, Italian seasoning, marsala, chicken broth, mushrooms, and tomatoes. Cover and bring to a boil, then simmer, for at least 10 to 2 minutes, then add peas and cook until peas are cooked. Serve over bow tie pasta.

3 large chicken breasts, cubed
6 cups broccoli, chopped (including stalk)
5 cups bow tie pasta, uncooked
4 tablespoons lemon pepper
2 tablespoons olive oil
1 teaspoon lemon juice
3 tablespoons butter or 3 tablespoons margarine
3 tablespoons all-purpose flour
1 1/2 cups milk
5 ounces freshly shredded parmesan cheese or 5 ounces freshly-shredded Italian cheese blend
1/2 teaspoon salt
1/8 teaspoon paprika
1/2 teaspoon mustard powder

Steps:

  • Boil pasta to desired firmness and drain.
  • While the pasta boils, fry chicken with oil, lemon juice and lemon pepper until thoroughly cooked. (Flavor will be very strong.) Seat aside.
  • In a medium saucepan, cover the bottom of the pan with water and bring to a boil.
  • Add broccoli, cover and boil 5 minutes, drain well. Set aside.
  • In a medium saucepan, melt butter over medium heat.
  • Stir in flour until smooth.
  • Slowly stir in milk until smooth and hot.
  • Reduce heat and add cheese.
  • When mixture is smooth, add salt, paprika and mustard.
  • Mix pasta, broccoli and cheese sauce in a large pot, then add chicken.
  • Serve immediately, or refrigerate and serve cold.
