5 pounds mussels
4 tablespoons butter
3 cloves garlic (minced)
1/4 teaspoon onion powder
1/2 cup chicken stock
the juice of one lemon (medium sized)
salt and pepper (to taste)

Steps:

  • Rinse and inspect mussels individually, discarding any that are open or have cracked shells. Remove the beard (short pieces of "hair" sticking out of the shell) if necessary. (Just give it a good tug and wiggle).
  • Set mussels aside and in a large pan or pot, on the stove top bring butter, garlic, and onion powder to a gentle simmer until garlic becomes fragrant. Add chicken stock and lemon juice, then bring back to a simmer.
  • Pour butter and stock mix into a heat proof container and bring the now empty pan up to high heat.
  • Add mussels to the very hot pan, pour butter and stock mix over mussels and cover. Reduce heat to low and cook 5 - 7 minutes (stirring or giving the pan a shake occasionally) until mussels have opened.
  • Enjoy! Preferably with some no knead beer bread or crunchy french bread!

2 tablespoons Unsalted Butter
1 Onion, small, finely chopped
2 teaspoon Fresh Garlic, crushed
1/2 teaspoon Chili Flakes
1 cup Dry White Wine
1 cup Fresh Cream, (whipping cream)
450 grams Half Shell Mussels, ( 1 pound )
Salt and Black Pepper, to taste
1 Lemon, juice and zest
1/2 cup Parsley, chopped

Steps:

  • Melt the Butter in a large skillet (with a lid) - saute the Onion, Garlic and Chili Flakes until soft
  • Add the White Wine and simmer until reduced by two thirds - add the Cream and simmer 2 - 3 minutes
  • Add the Mussels and cover the skillet - over low heat, steam the Mussels until cooked - about 8 - 10 minutes
  • Remove from heat - season to taste with Salt and Black Pepper - stir through the Lemon Juice, finely grated Zest and Parsley

1 lb cooked frozen mussels in their shells
¼ cup heavy cream
1 tbs lemon juice
1-2 cloves garlic, minced or grated
salt and black pepper
chopped fresh parsley

Steps:

  • Melt some butter in a large sauté pan and add the frozen mussels. Place a lid over the pan and steam until all the mussels are open, shaking the pan occasionally. Note: discard any that will not open.
  • Remove the lid and add the cream, garlic, and lemon juice, and continue to cook until the sauce starts to thicken. Test for seasoning and add salt and pepper as required.

1 tablespoon extra-virgin olive oil
1 tablespoon vegetable oil
Salt
1 1/2 tablespoons chopped sweet onions, such as Vidalia
2 teaspoons chopped garlic
2 tablespoons diced fresh tomatoes
1 tablespoon finely sliced scallions
3 large leaves fresh basil, sliced chiffonade-style
2 cups Prince Edward Island (P.E.I.) mussels
Juice of 1 lemon
2 ounces fruity Chardonnay wine, plus more if needed
1 tablespoon chopped fresh parsley
2 tablespoons butter
Toasted bread, for serving

Steps:

  • Heat the olive oil and vegetable oil in a large saute pan on medium heat. When the pan is hot, add a pinch of salt along with the onions and garlic. Sweat until they are a tad past translucent and are just starting to acquire color. Before the garlic starts to brown, add the tomatoes, scallions and basil. Saute so that the flavors blend together, 1 to 1 1/2 minutes more.
  • Add the mussels to the pan. Next, add the lemon juice and then the Chardonnay to deglaze the pan, and then quickly cover with a lid to steam the mussels. Note: Do not open for at least 1 1/2 to 2 minutes so the mussels can steam.
  • Then, lift the lid and add the parsley (checking to make sure that there is enough moisture in the bottom of the pan to continue to steam the mussels). If everything is going properly, the mussels will have almost fully opened and there will be plenty of liquid still in the bottom of the pan to finish steaming the mussels. In that case, quickly cover the pan for another minute and a half. If the wine has evaporated and the mussels have not opened, add a small additional amount of wine, about a half cup more, and then re-cover the pan to cook out the additional raw alcohol taste and allow the mussels to fully open.
  • Once 3 to 4 minutes total have passed since the beginning of the cooking process, all of the mussels should have opened and their natural juices should have leaked out into the bottom of the pan, combining with the fresh herbs and vegetables to create a simmering broth. Reduce the heat to low and stir in the butter until melted.
  • Plate the mussels in a bowl and pour the sauce on top. Serve with your favorite toasted bread.

This is absolutely the simplest way to cook mussels, and perhaps the most satisfying. A big pot of them makes an easy, festive dinner any night of the week.

2 tablespoons extra-virgin olive oil, plus more for toasts
2 garlic cloves, minced, plus 1 or 2 whole garlic cloves for rubbing toasts
Pinch of crushed red pepper
4 pounds mussels, cleaned
1/4 cup white wine or water
1 baguette, split lengthwise, then cut crosswise in half
1 cup roughly chopped parsley

Steps:

  • Heat broiler. Put olive oil in a large heavy-bottomed soup pot or Dutch oven over medium heat. Add the minced garlic and red pepper and let sizzle for 30 seconds without browning. Add the mussels, stir to coat and increase heat to high. Add the wine or water, and put on lid. After 2 minutes, give the mussels a stir, then replace lid and continue cooking until all mussels have opened, 6 to 8 minutes.
  • Paint cut sides of the baguette pieces with oil and place cut side up under broiler to toast. Rub toasts with the remaining garlic cloves.
  • Stir the chopped parsley into the mussels, then ladle mussels and broth into bowls. Serve with the garlic toasts.
