1 cup milk

1 teaspoon baking powder
1 dash salt
1 quart cherries or 1 quart blackberry

Steps:

  • Melt the butter in a baking pan.
  • In a bowl, mix together the flour, sugar, baking powder, salt, and milk and pour over butter.
  • Cover the batter with fruit and do not stir. The batter will rise and absorb the fruit flavor.
  • In a preheated 350 oven , bake the pie for 1 hour and serve it warm with whipped cream or ice cream.

This is quick and easy. Great w/ some ice cream. I haven't made this for quite sometime, and my recipe is torn at the bottom, so I approximated the exact cooking time. If you make this before I do again, please let me know if cook time is accurate.

3/4 cup butter
1 cup self-rising flour
1 cup granulated sugar
3/4 cup milk
15 ounces canned peaches, drain but RESERVE juice
1/2 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon brown sugar

Steps:

  • Preheat oven to 350.
  • Place butter in a 8" glass square pan and microwave until butter is melted; evenly distrubute melted butter on bottom of pan.
  • In a small bowl, mix together SR flour, sugar, and milk and evenly pour over melted butter.
  • Place peach slices evenly over batter and pour reserved peach juice over peaches.
  • Combine cinnamon, nutmeg and brown sugar in a small bowl, and evenly sprinkle on top.
  • Bake in 350 degree oven about 30-45 minute or until brown.

This is a tasty, quick, and easy dish to prepare when you have no time to plan for supper. This is so easy to prepare and will please a hungry group of children on a chilly day. You may substitute peas & carrots for the green beans if you prefer. You may also substitute ground lamb for the ground beef, or even leftover minced roasted beef/lamb (in which case just saute the onions alone and mix with the cooked meat). I usually use homemade leftover garlic mashed potatoes in this, but if all you have is instant, well - this is supposed to be a Lazy Mom's dish, so go ahead. I garnish this with a sprinkle of paprika if I am leaving out the cheese. Don't worry about the lack of salt & pepper in the meat - the soup provides all the seasonings and is the "secret" ingredient. Doubles well, and also can be made the day before, chilled and baked the next day for a hot lunch.

1 lb extra lean ground beef
1 small onion, finely chopped
1 (15 ounce) can green beans, drained (or peas & carrots or mixed leftover veggies)
1 (10 1/2 ounce) can condensed tomato soup
3 -4 cups leftover mashed potatoes (or prepare 6 servings instant)
1/8-1/4 cup cheddar cheese, shredded (optional)
paprika, garnish (optional)

Steps:

  • Brown beef and onion together in a large skillet, drain fat.
  • Place meat into a medium greased caserole dish (it doesn't matter what shape- you want to be able to have the meat spread in one layer).
  • Spread the beans on top.
  • Spread the unprepared soup on top of the beans using a spatula.
  • Next spread the mashed potatoes over all, sealing edges.
  • Sprinkle with cheese, if desired (I often omit).
  • Bake, uncovered, in a preheated 350 F or 180 C oven for about 20 minutes, or until bubbling.
  • NOTE:If you like, use a fork to make lines in the mashed potatoes (or, you could also pipe the mashed potatoes on top using a decorating bag with a wide star tip if you aren't feeling quite so lazy).

2 Pillsbury pie crusts
1 bag zesty seasoned frozen vegetables
1 can diced potatoes (or you can dice one, boil it till soft and then use that)
1 can cream of chicken soup
1 bag frozen grilled chicken strips OR 2 packages diced chicken cubes (lunch meat section)

Steps:

  • Preheat oven to 350°F. Line pie pan with one of the crusts. In separate bowl, combine vegetables (as many as you would like), soup and chicken. Stir until everything is coated in soup.
  • Transfer from bowl into crust in pan, cover with other pie crust. Pinch the sides all the way around the pan so it seals the pie.
  • Cook for about 30-40 minutes or until top is golden brown. You can also beat up an egg and glaze the top of the pie if you'd like but it's not necessary. This comes out just like the ones you buy in the store except you know everything that is put in it. Enjoy. :)

My own version of the comfort Sunday roast shepherd's/cottage pie. The laziest way I know besides buying a frozen or delivery service, which is essentially paying a premium for defrosting. So try it out if you will and see if it suits your palate.

250 g minced lean beef
1 1/2 teaspoons Worcestershire sauce
1 tablespoon black pepper
1/2 teaspoon white pepper
1 teaspoon chili flakes
1 teaspoon mixed herbs, Masterfoods
1 1/2 teaspoons barbecue seasoning, Masterfoods
1 teaspoon salt
1 tablespoon ketchup
1 white onion, diced
2 garlic cloves, finely chopped
2 large potatoes
1/2 cup mixed vegetables
2 teaspoons butter
1 teaspoon olive oil
1/2 cup milk
1 cup red wine
2 bay leaves
3 stalks cloves
1 teaspoon parmesan cheese

Steps:

  • Mix the minced beef with the dry herbs and spices and 1 teaspoon Worcestershire sauce, marinate for 20 minutes.
  • While waiting, boil the potatoes. Once a toothpick can go through without resistance, remove potatoes from boiling water and let the steam evaporate.
  • Mix in milk, butter and chopped garlic, mash till fine and set aside.
  • Heat 1 tablespoon of oil in non-stick pan. Saute half the diced onions for about 1 minute.
  • Add in the minced meat with the bay leaves and cloves.
  • Fry and separate up the meat chunks.
  • Add in1/2 cup of red wine, 1 tablespoon ketchup and lower down the flame to simmer for a while.
  • Add in the mixed vegetables (corn,peas and carrots).
  • Add in the 0.5 half cup of red wine and 0.5 teaspoon of Worcestershire sauce. Simmer till fairly dry.
  • Taste to see if it is salty enough. Adjust accordingly.
  • Spoon it into a baking dish and even it out.If possible remove bay leaves and cloves.
  • Spoon the mash garlic potato over the meat and spread it out to cover evenly.
  • Draw criss cross lines over the potato with a fork.
  • Sprinkle some Parmesan cheese over the top.
  • Heat in oven at 200°C for about 5 minutes or till potato starts to brown
  • Serve with salad.

For the egg wash:
2 eggs
2/3 cup (160 ml) milk
2 sheets homemade phyllo or 4 sheets frozen thick phyllo, thawed according to the package instructions
2 cups (240 g) crumbled feta or a combination of feta and ricotta cheese
1/2 cup (50 g) grated Parmesan (optional—for when using frozen phyllo)
2 tablespoons chopped fresh oregano, thyme, or marjoram
1 to 2 teaspoons Mara? pepper or a good pinch of crushed red pepper flakes (optional)

Steps:

  • Preheat the oven to 430?F (225°C). Line a baking sheet with parchment paper and brush with olive oil. Make the egg wash: In a bowl, whisk together the milk and the eggs. If using homemade phyllo: Stretch or crimp one sheet of phyllo as necessary to fill the baking sheet. Brush with olive oil and sprinkle with half of the feta or ricotta. Pour half of the egg wash over the feta or ricotta and sprinkle with herbs and Mara? pepper, if you like. Lay the second sheet of phyllo over the egg wash and brush with olive oil. Crumble more feta or ricotta on top and drizzle with the remaining egg mixture. Sprinkle with more pepper, to taste. Proceed to baking. If using frozen phyllo: Lay one sheet of frozen phyllo on the baking sheet, brush with olive oil, and sprinkle with half the Parmesan, then lay one more sheet on top and brush again with olive oil. Sprinkle half the feta mixture over the second sheet. Place the third sheet on top, brush with olive oil, sprinkle with the rest of the Parmesan, then lay the last sheet on top and brush again with olive oil. Crumble more feta on top and drizzle with the remaining egg mixture. Sprinkle with more pepper, to taste. Proceed to baking. Bake on a rack in the lower part of the oven for 25 minutes, or until golden brown and crisp. Check to make sure the pie is well browned at the bottom. If the top browns too quickly, cover loosely with foil and continue baking. I modified a recipe I got from my sweetie's mother to come up with this "lazy" chicken pot pie. Easily keep all the ingredients on hand in your pantry (except the pie crust which can live in the freezer for extended periods) so you can make it whenever you need some comfort food. It takes an hour to cook, but the prep time is minimal and the result is pretty darn good! Also, if the zombie apocalypse comes, you can skip the crust and just heat everything else together in a pot over a flame of burning zombie parts (or eat cold if desperate since everything is already cooked). ;-D

1 - 4 oz. can mushroom bits
1/4 cup(s) dried minced onion bits
1 - 12.5 oz. can cooked chicken
1 - 14.5 oz can cut green beans
2 - 15 oz. cans mixed vegetables

2 teaspoon(s) ground dried rosemary, poultry seasoning, or savory
2 tablespoon(s) dried parsley flakes (optional)

1 package(s) 2-crust refrigerator pie dough, ready to use

Steps:

  • NOTE: I don't add salt to this recipe because most of the ingredients are canned. Adjust to your tastes accordingly. Open and drain mushrooms, using juice to reconstitute dried onions. (See notes in step #13 for reconstitution instructions if desired.)
  • Remove pie crust from refrigerator/freezer and allow to come to room temperature by step 8. (I have been known to microwave my crusts when I forgot to do this part. Just be careful not to "cook" them. See notes in step #13 for detailed instructions.)
  • Preheat oven to 425° F.
  • Open and drain remaining cans (except the soup which should NOT be drained), discarding juice. *(see note in step #14)
  • Dump all vegetables into microwave safe bowl. Chop chicken and add to bowl.
  • Add rosemary (or other herbs), parsley, black pepper, and re-constituted onion bits and combine gently until thoroughly mixed.
  • Lightly cover bowl and microwave filling until nicely warmed (or even hot) throughout (about 8 minutes, depending on the wattage of your machine) stirring at 4 minutes.
  • While filling is warming, line a deep dish pie pan with bottom crust. Do not trim.
  • When filling is warm, spread evenly over bottom crust, tamping it down to eliminate air bubbles.
  • Top with second crust, tucking edges of top crust under/behind bottom crust. Using fork, press together folded edge of top and bottom crusts around rim of pie pan. Cut or poke holes in top crust to allow venting of moisture.
  • Place pie in oven and tent foil over top. Bake 45 minutes at 425° F. Remove foil and bake additional 15 minutes or until top is toasty brown. (See detailed notes in step #13.)
  • When done, carefully remove pie from oven and allow to rest a minimum of 10 minutes. Slice and serve hot.
  • NOTES: Step 1 => To re-constitute onions, pour juice from mushrooms into cup and stir in onions. Allow to soak until onions have absorbed nearly all moisture, maybe 15 or 20 minutes. Step 2 => If pie dough is still too cool to be flexible by the time you need it, bring it to room temperature by microwaving both packages together for 15 seconds on high; if still too cool, microwave in 5 second intervals until room temperature is reached. Do not allow to crust to become truly warm. If this happens, allow it to cool to room temperature before using, otherwise crust will stretch too easily while you are trying to place it. Step 5 => Cut chicken while it's still in the can, being careful not to dig knife into can (this dulls the blade and can shave bits of the can's lining into your food). Step 8 => When lining the pie pan with the bottom crust, there should be little, if any, crust overhang. If there is, your pan is smaller than mine and you won't have room for all this filling; so don't over-fill your crust when the time comes. There IS a lot of filling and it just fits the pan I use. Step 11 => When tenting foil, be sure none of the crust edges are exposed to direct heat (you don't have to wrap the sides-just make sure the top is covered), otherwise that part will burn. However, if you do accidentally burn a portion of the crust during the first 45 minutes, you can cut it away before returning the pie to the oven for the last 15 minutes. Step 11, part 2 => I use a 9" Pampered Chef deep dish stoneware pie pan; additionally, I bake in my table-top convection oven without pre-heating. Cooking times and temperatures may vary for glass or metal pie pans, so watch this dish the first time you bake it in case you need to make adjustments. Step 11, part 3> "Toasty brown" is slightly darker than golden brown. Of course, you don't have to bake it that dark if you don't like it that way, but I feel the darker color adds an extra depth of savory flavor.
  • Note from step 4: * In the interest of frugality, juice from the canned vegetables can be used in other savory dishes as flavor and salt in place of water. Drain juice into a container and store covered in refrigerator until needed, for up to a week. (Canned vegetables are high in salt [which is why no salt is added to this recipe] which acts as a light preservative allowing the juice to remain viable the entire week.)

When I would make this for just my hubby and me, I'd also add some mushrooms, but since he's gone now, and I'm cooking for my son who doesn't eat mushrooms, I've left them out here - but feel free to add mushrooms, corn, or anything else you might like.

- 2½ cups chicken, cooked, cubed (store bought rotisserie chicken works great)
- 1¼ cups frozen peas & carrots
- ¼ cup butter
- ¼ cup onion, chopped
- ½ cup celery, sliced
- ¼ cup flour
- 1½ cups chicken broth
- ½ cup milk
- ½ tsp. thyme
- ¼ teaspoon sage
- salt & pepper (suit your own tastes or dietary requirements)
- 4 mary b's frozen buttermilk biscuits (thawed)
- grated parmesan and/or romano cheese

Steps:

  • Preheat Oven to 400º F. Butter a 9" square baking dish and set aside.
  • In large skillet, melt the butter; add the onions and celery; cook until tender. Add the flour and stir to make a paste. Slowly pour in the chicken broth and the milk. Add the thyme, sage, ground black pepper and salt, stirring constantly until mixture thickens and comes to a boil.
  • Add the cubed, cooked chicken, carrots and peas; stir to mix and heat through.
  • Pour thickened mixture into baking dish.
  • On a floured board, cut each thawed biscuit in half...roll into a ball and flatten into a disk. Place cut and flattened biscuit dough on top of the chicken-vegetable mixture to form a crust.
  • Sprinkle with shredded Parmesan or Romano cheese.
  • Bake 15 minutes or until crust is golden brown.

During our confinement from the Covid-19, I find I have time to think about experimenting as well as trying out those ideas. Years ago, Celestial Seasons made a delightful cinnamon and banana tea. Since I knew apples and bananas go together and I knew apples and cinnamon go together and (thank you Celestial Seasons) that bananas and cinnamon go together, I thought I'd try this combination in a pie. I figure out would either be horrible or very good. Hubby says is really nice. Let me know if you try it and what you think!

1 can(s) banana creme pie filling (21 ounces)

  • Thaw crust and unroll it.
  • Spray aluminum pie pan with Pam.
  • Place pie crust in pan.
  • Sprinkle half of the cinnamon and sugar mix in the bottom of the crust.
  • Empty the Apple pie filling into the crust and spread it evenly.
  • Bake for 20 minutes at 450 (or until bottom of crust is done).
  • Let cool for about 1/2 an hour.
  • Sprinkle the rest of the cinnamon and sugar mix over the apples.
  • Empty the banana creme pie filling into the apples and cinnamon and sugar.
  • Chill until firm (about three hours).
  • These directions are approximate. Bake time may vary. Use more or less cinnamon and sugar to taste. Also, you might want to top it with Cool Whip or Rediwhip. Have fun, enjoy, and bake on!

LAZY DAY BLUEBERRY PIE

Mom found this recipe in a local blab sheet. We've been making it for years, it is absolutely WONDERFUL, especially when it's slightly warm, served with ice cream. (Or fat free Cool Whip) Don't be afraid about the blueberries on top, they will 'sink' a little. You can use 1 cup sugar instead of 1/2 sugar 1/2 Splenda. I have known people to double the recipe and put it in a 9 x 13 pan.

1 tablespoon baking powder
1 cup skim milk
2 1/2 cups fresh blueberries
1 tablespoon sugar (topping, optional)

Steps:

  • Place butter in 8x8 square baking dish.
  • Set oven temperature to 350º and put baking dish in oven.
  • While oven is pre-heating, and butter is melting, combine flour, sugar, baking powder and milk.
  • Pour onto melted butter in baking dish, sprinkle blueberries on top.
  • DO NOT MIX!
  • Bake at 350º for 45 minutes or until a toothpick inserted in the center comes out clean.
  • DO NOT UNDERBAKE!
  • After baking, sprinkle 1 TBS sugar on top.

I call this lazy because I used chicken gravy in the jar, purchased pie crust, canned potatoes, and frozen veggies. Even the garlic was from a jar, no chop. I did chop some onion and some celery and that was the extent of effort. The individual casserole dishes that I use are rather deep, they hold 2 1/2 cups. You can put in a layer of leftover dressing in the bottom of the pies if you like, that is yummy too.

1 tablespoon(s) butter
1/2 cup(s) onions, chopped
1/3 cup(s) celery, chopped
1 teaspoon(s) minced garlic from jar
3 cup(s) cooked chicken, diced
2 cup(s) frozen veggies in combination you like. i used 1/2 cup each corn, mixed,peas,limas
15 ounce(s) can whole potatoes
24 ounce(s) 2 12 ounce jars chicken gravy
1/2 teaspoon(s) each salt, pepper, thyme, dry parsley
1 cup(s) chicken stock, optional if it is too thick
4 cup(s) leftover dressing, optional enough to cover bottom
15 ounce(s) package of 2 pie crusts, ready to bake, rolled.

Steps:

  • Pre heat oven to 400°
  • Dice the canned potatoes, onions and celery. If you use garlic from a jar, no messing with that. If you have to use fresh, peel and mince 1 clove of garlic.
  • Heat butter in a large saucier and saute the onion and celery until onion is translucent and celery softened, add the garlic and cook a minute more.
  • While that is cooking mix together in a bowl the chicken, potatoes, all veggies, gravy, seasonings.
  • Add veggies and chicken to sauteed onion mixture and bring everything to a nice hot bubbly temperature. If you think it is a little thick, thin with some chicken stock.
  • Cut pie crust to fit your pie pans, with a little overlapping.
  • If you want to use dressing, divide it between the casserole dishes, and pack to compact a little.
  • Divide chicken filling evenly between 4 to 6 pie pans, cover with crust, seal edges. Mske 3 slits in the top middle of crust to vent.
  • Bake for 30 to 40 minutes or until crust is golden and filling bubbly.

I hardly ever use a store bought crust, but today that's exactly what I did, hence the name of this pie. I'm allowed to be lazy once in awhile...LOL Nonetheless, it's delicious! Enjoy!

1 - 9 inch prebaked pie shell
2 1/2 cup(s) milk
1/2 cup(s) heavy cream
1/3 cup(s) flour
3/4 cup(s) sugar
1/4 teaspoon(s) salt
3 - drops yellow food coloring - optional
3 - egg yolks, slightly beaten
1 cup(s) heaping coconut
1 teaspoon(s) coconut extract
2 tablespoon(s) butter

Steps:

  • Have pie shell baked and cooled. Scald the milk and cream. In a medium saucepan, whisk flour, salt and sugar together. Once milk is scalded, whisk it into the dry mixture and cook over medium heat, stirring frequently. About 4 - 5 minutes. I add 3 drops of yellow food coloring now. Optional
  • Quickly whisk some of the hot mixture into the yolks and whisk the yolks into the pudding. Cook another 2 - 3 minutes.
  • Once thick, remove from heat and stir in the butter, extract and coconut.
  • Pour pudding into pie shell. Cover the pudding with saran wrap, directly onto the pudding to keep the pudding from forming a skin.
  • Let pie cool. Top with meringue or whipped cream. If prefer, toast some coconut for the top. Chill well before serving. There is usually a little pudding left to enjoy warm or chill it in a small dish and enjoy with a dollop of whipped cream. I made 2 of these pies, one with whipped cream and the other plain and will add whipped cream as served.
