LAMB PITA SANDWICHES

Number Of Ingredients 20

1 teaspoon ground coriander
1 teaspoon ground cumin
1 teaspoon smoked paprika
1/4 teaspoon cayenne pepper
1/4 teaspoon ground cinnamon
Kosher salt
2 to 2 1/2 pounds lamb stew meat, cut into 1- to 2-inch pieces, excess fat removed and discarded
Vegetable oil
1/2 cup red wine, such as Pinot Noir
One 14.5-ounce can diced tomatoes
2 vine tomatoes, seeds removed and chopped
Half a English cucumber, quartered and sliced
Half a white onion, sliced
1/4 cup chopped parsley
2 tablespoons chopped dill
1 tablespoon lemon juice (from 1 lemon)
4 to 6 pita pockets
One 10-ounce container hummus
1 head romaine lettuce, torn in half or in thirds
Kosher salt and freshly ground black pepper

Steps:

  • Add the coriander, cumin, smoked paprika, cayenne pepper, cinnamon and 1 teaspoon of salt to a small mixing bowl. Whisk to combine. Add the spice mixture to the lamb stew meat and use tongs to coat the meat in the spices. Set aside.
  • Heat an electric pressure cooker to the sauté setting and add 1 tablespoon of vegetable oil to the pot. Once the oil is shimmering, add the stew meat in batches, being sure not to overcrowd the pot. Brown the meat on all sides, about 4 minutes, then remove to a plate. Add an additional tablespoon of oil, if needed, before adding another batch of meat. Once all the meat has been browned and removed from the pot, add the red wine to deglaze, stirring and scraping the bottom to release any brown bits stuck to the base of the pot. Once the alcohol smell has burned off, 1 to 2 minutes, add the canned diced tomatoes and the browned meat. Stir to combine.
  • Place the lid on the pressure cooker and seal. Set to high pressure according to the manufacturer's instructions. Once at high pressure cook for 15 minutes then allow the pressure cooker to naturally release for 10 minutes before manually venting the rest.
  • While the lamb cooks, add the fresh chopped tomatoes, cucumber, onion, parsley, dill, lemon juice, 1/2 teaspoon kosher salt and 1/4 teaspoon black pepper to a medium bowl. Toss to combine and set aside until ready to assemble.
  • To assemble, slice each pita in half and open to create a pocket. Slather each side of the pocket with hummus, then add in a few pieces of romaine lettuce, covering the hummus. Next add a few spoonfuls of the cucumber-onion mixture and top with a few pieces of cooked lamb. Continue the process with the remaining ingredients.

WARM GARLIC PITAS

4 medium-size whole wheat pitas
4 medium-size white pitas
4 tablespoons unsalted butter
6 cloves garlic, minced
3 tablespoons minced fresh parsley
1/4 cup grated Parmesan
Kosher salt and freshly cracked black pepper

Steps:

  • Preheat the oven to 350 degrees F. Cut the pitas into 6 wedges.
  • In a medium saucepan, add the butter and garlic. Set over medium heat and warm through until the butter melts and the garlic becomes fragrant, 5 to 6 minutes. Add the parsley and mix well.
  • Place the pita wedges in a large bowl and pour the garlic butter over the top. Toss well to combine and coat everything evenly. Spread the pita wedges out evenly on a sheet tray and dust with the grated Parmesan. Bake in the oven until golden and crispy, 12 to 15 minutes. Remove from the oven and taste. Adjust seasonings with salt and pepper, if necessary. Serve warm.

Lamb Chops With Dates, Feta and Tahini image

These tender little lamb rib chops have a deep, complex flavor thanks to a marinade imbued with cumin and Aleppo pepper. After a brief soak, they get quickly seared, then served with a garlicky tahini-yogurt sauce and a tangy herb salad filled with feta cheese and sweet dates. It's a festive, colorful, company-worthy main course that comes together fast.

2/3 cup extra-virgin olive oil
2 teaspoons ground cumin
3 garlic cloves, crushed
1 1/2 teaspoons Aleppo pepper, or 1 teaspoon other crushed hot pepper
Juice of 1 lemon
8 lamb rib chops, 1-inch thick, Frenched (about 1 3/4 pounds)
3 tablespoons tahini
1/4 cup Greek yogurt
Kosher salt, to taste
Black pepper, to taste
1 tablespoon white wine vinegar
8 soft dates, pitted and sliced
2/3 cup crumbled barrel-aged feta cheese
1 big bunch of mint, leaves only, more for garnish
1 bunch dill, fronds only, coarsely chopped, more for garnish
1/4 teaspoon sumac

Steps:

  • In a 9-by-13-inch baking dish, combine 1/3 cup oil, the cumin, 2 garlic cloves, the Aleppo pepper and half the lemon juice. Add lamb, turn to coat, cover baking dish and chill for at least 30 minutes and up to 2 hours.
  • In a blender, combine remaining garlic clove, 3 tablespoons oil, the tahini, the yogurt, salt and pepper to taste, and 3 tablespoons water. Blend until it has the consistency of thick heavy cream, adding more water or adjusting seasoning if necessary. Set aside.
  • Heat a grill, grill pan or cast-iron skillet over high heat until very hot. Remove lamb from marinade, season with salt and pepper to taste, and cook for 1 1/2 minutes on each side for rare. If you'd like, prop each lamb chop on its fatty side to briefly sear it, around 30 seconds. Transfer to a cutting board to rest.
  • Meanwhile, in a large bowl, whisk to combine the remaining scant 3 tablespoons oil, the vinegar and salt and pepper to taste. Toss with dates, feta, mint and dill. Place on serving platter, top with lamb, and drizzle with tahini dressing. Garnish with extra herbs and sumac, and serve with remaining tahini sauce on the side. Serve immediately.

2 ½ tbsp olive oil
2 onions , halved and thinly sliced
3 garlic cloves , crushed
1 red chilli , deseeded and finely chopped
100g bulgur wheat
1 tbsp tahini paste
juice 1 lemon
2 tbsp Greek-style yogurt
2 tsp cumin seed
2 tsp ground coriander
200g lamb mince
100g cherry tomato , quartered
2 spring onions , finely sliced
small bunch flat-leaf parsley , chopped

Steps:

  • Heat 2 tbsp oil in a non-stick frying pan. Tip in the onions and cook for 15 mins until caramelised - 5 mins from the end, add 2 cloves of the garlic and the chilli. Remove from the pan and set side.
  • Cook the bulgur wheat following pack instructions, then drain thoroughly. Mix the tahini, 1 tbsp of the lemon juice, the remaining garlic, yogurt and seasoning together, and thin with 1-2 tbsp of water.
  • In the onion pan, heat the remaining oil. Add the cumin seeds and coriander and fry for a min. Add the mince and fry for 5 mins until cooked through. Tip in the onion mix and heat through.
  • Stir the tomatoes, spring onions, parsley, remaining lemon juice and seasoning into the bulgur wheat, then spread it out on a serving dish. Top with the lamb mince and a drizzle of yogurt dressing.

I love tahini sauce and pita sandwiches! I adapted this recipe slightly from one I found in Vegetarian Times.

1 cup low-fat plain yogurt or 1 cup nonfat plain yogurt
2 tablespoons tahini
1 garlic clove
1 teaspoon lemon juice
salt, to taste
4 large whole wheat pita bread
8 ounces feta cheese
4 tomatoes, plum, ripe and diced
1 cup spinach leaves, fresh and torn into bite-sized pieces
1 cup alfalfa sprout
1 large avocado, ripe, halved, pitted, peeled and cut into wedges
1 cucumber, diced

Steps:

  • In a small bowl, mix all sauce ingredients until blended.
  • Slice an edge from each pita bread, and carefully open pockets.
  • In a medium bowl, combine feta, tomatoes, and spinach. Add 1/4 cup of sauce, and toss gently to mix. Spoon the mixture into each pocket.
  • Divide sprouts, cucumber, and avocado among the sandwiches. Drizzle each with about 1 Tbsp of tahini sauce.
  • Serve right away.
