KIWI MUFFINS



Kiwi muffins image

These have a wonderful flavor if you can get past the green cooked kiwi. They are fun for kids for Halloween or St Patricks day parties.

Yield 12 muffins

Number Of Ingredients 9

2 cups flour
1 tablespoon baking powder
3/4 teaspoon salt
1/3 cup sugar
1/4 teaspoon cinnamon
1 egg, slightly beaten
1 cup milk
1/4 cup oil
2/3 cup chopped and peeled kiwi fruit

Steps:

  • Preheat oven to 400 degrees.
  • Mix all dry ingredients in a large bowl.
  • Mix egg, milk and oil.
  • Add wet mixture to the dry mixture stirring just until moistened.
  • Add kiwis, stir just until blended.
  • Spoon batter into 12 lined muffin cups, filling 3/4 full.
  • Bake for 20 minutes.

¾ cup all-purpose flour
¾ cup whole wheat flour
¼ cup ground quinoa
1 ½ teaspoons baking powder
½ teaspoon baking soda
½ teaspoon ground cinnamon
¾ cup honey
½ cup coconut oil, melted
¼ cup almond milk
2 egg whites
1 ½ cups chopped kiwi fruit

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Grease 12 muffin cups or line with paper muffin liners.
  • Whisk all-purpose flour, whole wheat flour, ground quinoa, baking powder, baking soda, and cinnamon together in a large bowl. Beat honey, coconut oil, almond milk, and egg whites together in another bowl. Pour honey mixture into flour mixture and stir until batter is just combined.
  • Fold chopped kiwi into batter. Divide batter between prepared muffin cups.
  • Bake in the preheated oven until golden brown and set, about 20 minutes.

1/2 cup sugar (use 3/4 cup if your bananas are not ripe enough and kiwis are tart)
2 cups flour
1/2 teaspoon salt
1 tablespoon baking powder
1/2 teaspoon baking soda
1/2 teaspoon ground cinnamon
3/4 cup low-fat plain yogurt (plain or vanilla)
6 tablespoons skim milk (or buttermilk)
3 tablespoons canola oil
1 egg
1 teaspoon vanilla extract
2 large ripe bananas, mashed
3 ripe kiwi, chopped into small cubes

Steps:

  • Combine the first 6 ingredients (DRY) in a large mixing bowl; set aside.
  • Mix yogurt, milk, oil, egg, vanilla and mashed bananas together in a smaller bowl until well-combined (WET).
  • Add WET mixture to the DRY mixture, mix until just combined (DO NOT OVERMIX) - lumps are ok.
  • Now stir in chopped kiwi gently; you may also add chopped nuts if you like.
  • Bake in a pre-heated oven at 375°F or 180°C for 25-30mins (mini muffins take about 20mins).
  • Cool in pan for 10mins, then remove and cool thoroughly on wire rack.
