KIDNEY BEAN MOUSSAKA ( WW )

Kidney Bean Moussaka ( Ww ) image

This recipe comes from the "Weight Watchers 35 years of favourite recipes" cookbook. It's delicious and filling, and people always ask for the recipe. The flavours develop slowly, so this is a perfect dish for making a day ahead or for freezing. WW scores this as 5 1/2 points per large serving. Cooking notes: For new chefs, thickening cornflour and milk takes a while! Be patient. I never use the peppers due to allergies -- they definitely aren't necessary to make this delicious! In Israel, it's harder to get exact ingredients, so I make it here with a brown bean that's the same consistency of kidneys (don't know what it is, though) and mozzarella cheese. The cheddar's better, but these exchanges are still delicious, so improvise with confidence! Replacing the two tsps of oil used for the pan and for frying veg with Pam olive oil spray will save you a point per serving.

Yield 4 serving(s)

Number Of Ingredients 17

3 teaspoons olive oil, for baking
1 teaspoon olive oil, for pan
1 teaspoon olive oil, for frying
1 large aubergine, sliced (eggplant)
1 large onion, chopped
2 garlic cloves, crushed
1 red pepper, de-seeded and chopped
400 g chopped tomatoes
2 tablespoons tomato puree (paste)
220 g red kidney beans, drained, rinsed and mashed gently
1/2 teaspoon ground cinnamon
4 tablespoons sweet red wine
4 tablespoons cornflour
600 ml skim milk (0% fat)
110 g low-fat cheddar cheese
1 egg
salt and pepper

Steps:

  • Preheat the oven to 190C / fan oven 170C / 375°F Lightly grease a baking sheet with 1 teaspoon of oil. Place the aubergine (eggplant) slices on the sheet in one layer. Brush the tops of the aubergine slices with 3 teaspoons of oil. Bake in the oven for 20 minutes or until golden.
  • Heat the remaining teaspoon of oil in a saucepan then cook the onion, garlic and red pepper for 5 minutes, until softened. Add the tomatoes, tomato puree, beans, cinnamon, wine and seasoning. Bring to the boil then simmer for 10 minutes.
  • In a medium-size saucepan, mix the cornflour with a little of the milk to make a paste. Beat in the remaining milk then cook over a moderate heat, stirring frequently, until thickened. Mix in half the cheese, season to taste, then remove the pan from the heat. Allow the sauce to cool slightly then beat in the egg.
  • Arrange half of the baked aubergine slices in the base of a shallow, ovenproof casserole dish. Spoon over half of the bean mixture then half of the white sauce. Repeat the layers, finishing with the white sauce. Scatter the remaining cheese over. (My husband made this once, and he didn't pay attention to this step. Instead, he did one thick layer of aubergine, then all the beans, then all the white sauce. It was quite dramatic looking, quite delicious, and that bit easier. You decide.).
  • Bake for about 1 hour, until golden and bubbling.

This is a traditional breakfast served in many Arabic countries. It can also be eaten for lunch or dinner in case you don't have any meat on hand, as the beans are full of protein and fiber! Very delicious! Serve and eat the traditional way, by grabbing it with pita bread.

MOUSSAKA

Moussaka image

Make our easy moussaka for an instant crowd pleaser. This classic Greek dish of layered thinly sliced potato, aubergine and lamb is topped with a creamy béchamel sauce.

Provided by Esther Clark

Categories     Dinner, Main course

Time 2h45m

Number Of Ingredients 19

6 tbsp olive oil
3 medium aubergines, cut into 5mm rounds
800g lamb mince
1 onion, finely chopped
2 fat garlic cloves, crushed
3 heaped tsp dried oregano
2 tsp ground cinnamon
2 bay leaves
200ml red wine
400g can chopped tomatoes
2 tbsp tomato purée
½ tbsp light brown soft sugar
550g Maris Piper potatoes, peeled and sliced into 5mm rounds
40g unsalted butter
40g plain flour
450ml whole milk
40g parmesan, finely grated
whole nutmeg, for grating
1 large egg plus 1 yolk, lightly beaten

Steps:

  • Heat a frying pan over a high heat. Drizzle 4 tbsp of the oil over the slices of aubergine and fry them in several batches for 5-7 mins or until golden brown and beginning to soften. If they look a little dry during cooking, add a dash more olive oil. Set aside on a plate lined with kitchen paper.
  • Heat 1 tbsp of the oil in a large flameproof casserole dish or saucepan over a medium-high heat. Add the mince and fry for 8-10 mins until a deep golden brown, regularly stirring and breaking up with a wooden spoon. Tip into a bowl and set aside. Add the remaining oil to the casserole. Tip in the onion along with a pinch of salt and fry gently for 10-12 mins or until softened and turning translucent. Add the garlic, oregano, cinnamon, chilli and bay cooking for a further min. Return the lamb to the pan and pour in the red wine, bring to a bubble and reduce the wine by half. Stir through the tomatoes, tomato purée and brown sugar, along with 200ml water. Season. Lower the heat and simmer gently, uncovered, for 20 mins, stirring occasionally until the sauce has thickened.
  • Heat oven to 200C/180 fan/gas 4. Bring a large pan of lightly salted water to the boil. Add the potato slices and cook for 6 mins, drain in a colander and leave to steam dry for 10 mins.
  • Melt the butter in a small saucepan, stir in the flour and cook over a medium heat for 1 min. Remove from the heat and whisk in the milk, pouring in a bit at a time, until smooth. Return to the heat and bring to a simmer, cooking for 3 mins. Remove from the heat and whisk through the parmesan, a little grated nutmeg and some seasoning, and finally the whole egg as well as the yolk.
  • Take a large rectangular ovenproof dish. Spoon a third of the meat into the dish and spread out evenly, followed by half the aubergine and half the potato, then the rest of the meat and another layer of aubergines, followed by potatoes. Finish with the béchamel, smoothing the top over with a palette knife. Put in the centre of the oven and cook for 50 mins or until deep golden brown. If it browns too much during cooking, cover the dish. Set aside for 10 mins to cool before serving.

SLOW-SIMMERED KIDNEY BEANS

Slow-Simmered Kidney Beans image

My husband always puts us down for a side dish when we're invited to a potluck. Canned beans cut down on prep time, yet you get plenty of zip from bacon, apple, red pepper and onion. I like simmering this mixture in the slow cooker because it blends the flavors and I don't have to stand over the stove. -Sheila Vail, Long Beach, California
