Kentucky Half-and-Half image

A cross between an Arnold Palmer and a mint julep, this make-ahead party cocktail combines tangy black iced tea with bourbon. We use frozen lemon wedges in lieu of ice, so the drink won't dilute in the summer sun.

1 cup sugar
Peeled zest of 4 lemons, plus 1 1/2 cups fresh juice
16 ounces bourbon, such as Maker's Mark, chilled
16 ounces strong-brewed black tea, chilled
Frozen lemon wedges or ice, mint sprigs, and maraschino cherries, such as Luxardo, for serving

Steps:

  • Syrup: In a saucepan, combine sugar, lemon zest, and 1 cup water. Bring to a boil over medium heat, stirring until sugar has dissolved. Remove from heat; let cool completely. Strain, discarding zest; stir in lemon juice. Cover and refrigerate in an airtight container until cold, at least 1 hour and up to 2 weeks. Makes 2 cups.
  • Kentucky Half-and-Half: In a pitcher, stir together syrup, bourbon, and tea. Cover and refrigerate up to 1 day, if desired.Serve in glasses with frozen lemon wedges, mint sprigs, and cherries.

This is a tried-and-true, old-fashioned coconut cream pie. Took many years of searching and baking to find the right one and this is it! Enjoy!

1 cup sweetened flaked coconut
3 cups half-and-half
2 eggs, beaten
¾ cup white sugar
½ cup all-purpose flour
¼ teaspoon salt
1 teaspoon vanilla extract
1 (9 inch) pie shell, baked
1 cup frozen whipped topping, thawed

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Spread the coconut on a baking sheet and bake it, stirring occasionally, until golden brown, about 5 minutes.
  • In a medium saucepan, combine the half-and-half, eggs, sugar, flour and salt and mix well. Bring to a boil over low heat, stirring constantly. Cook, stirring constantly, for 2 minutes more. Remove the pan from the heat, and stir in 3/4 cup of the toasted coconut and the vanilla extract. Reserve the remaining coconut to top the pie.
  • Pour the filling into the pie shell and chill until firm, about 4 hours.
  • Top with whipped topping and with the reserved coconut.
