COFFEE-RUBBED RIBS RECIPE
Not a coffee drinker myself, I wasn't sure how this would go over, but I ended up loving it-the way the coffee plays with the other spices, smoke, and meat. And the coffee-ness didn't dominate. Rather, the ground beans added an earthy quality to an already complex mix of flavors. The ribs eaten dry were fantastic, but even better with a coating of stout barbecue sauce.

Steps:
- Mix together the coffee, salt, paprika, chile powder, dark brown sugar, oregano, garlic powder, onion powder, black pepper, coco powder, and coriander in a small bowl to make the rub.
- Remove the membrane from the back of the rack, and trim the ribs. Rub each rack liberally with the rub. Wrap ribs in foil or place in a large container and store in the refrigerator over night (optional) .
- Remove the ribs from the fridge while preparing the smoker. Fire up the smoker to 225°F, adding a few chunks of smoking wood chunks when at temperature. When the wood is producing smoke, place the ribs in the smoker, meat side up, and smoke until the ribs have a slight bend when lifted from one end, about 5-6 hours. If using sauce, brush on the sauce and continue to cook until sauce has caramelized, about 15-20 minutes longer. Remove from the smoker, slice, and serve.

- 4. In a saucepan, combine barbecue sauce and Kahlua. Bring to a boil and remove from heat. Set aside 3/4 cup for basting.
- 5. Place ribs, meat side down on a roasting pan and cover with the remaining sauce. Cover pan with aluminum foil and place on grill away from heat. Cover grill and cook for 1 1/2 to 2 hours. ( I use gas, but i fyou are using charcoal, you may need to add more briquettes to the pile after an hour or so.
- 6. Carefully remove ribs from pan and place meat sides up on grill. Baste with reserved sauce (I keep a little for dipping as some like extra sauce); grill 15 minutes. Turn and baste; grill for additional 15 minutes.
DALE'S SPARERIBS
My friend Dale was a big eater, as was her construction-worker husband. She made this recipe just for the 2 of them, and would double it if having another couple over for dinner (she gave me this recipe after I had it at her house, back in, I think, 1977). I have indicated "two servings", but I think maybe it can be stretched a little more :-) She always served it with mashed potatoes and cole slaw.

Steps:
- Preheat oven to 300 F and place ribs in a small roaster; set aside.
- Combine all other ingredients together in a saucepan and simmer until mixture thickens.
- Pour sauce over ribs and bake until ribs are very tender; at least 3 hours.
- She never told me to baste them, but I check them about once per hour and do baste them a bit with the sauce.
- According to my friend Dale,"serves 2 hearty eaters".
