MANDARIN ORANGE VINAIGRETTE SALAD DRESSING



Mandarin Orange Vinaigrette Salad Dressing image

Make a delicious mandarin orange vinaigrette to use as a salad dressing that can be served warm or cold over mixed greens, spinach, or veggies.

3/4 cup cider vinegar
3/4 cup mandarin orange juice (from 6 to 8 mandarin oranges)
2 tablespoons red wine vinegar ​(or good-quality balsamic vinegar )
2 tablespoons brown sugar
1 shallot ​(minced)
1/4 teaspoon kosher salt (or to taste)
1 to 1 1/2 cups extra-virgin olive oil

Steps:

  • Gather the ingredients.
  • Place the cider vinegar , mandarin orange juice, red wine vinegar (or balsamic vinegar), brown sugar, shallots, and kosher salt in a blender. Pulse to combine the ingredients.
  • While the blender is running, very slowly add olive oil in a steady stream through the top opening of the blender.
  • Transfer to a salad cruet or jar with a lid.
  • Refrigerate any leftover vinaigrette for up to one week. After that, throw out any unused portion of this salad dressing.
  • Enjoy.

Julie's Kiwi Mandarin Dressing image

Once upon a time, in the recipe request section of an online bulletin board, someone asked for a kiwi mandarin salad dressing. I looked all over for one online, but no luck. So I went to the store and got myself a bunch o' kiwis and such, and came up with one of my own. I had it with dinner that night, and it was darn tasty! The folks on the other board have had it, too, and say they really like it.

Number Of Ingredients 10

4 ripe kiwi fruits
1 (11 ounce) can mandarin oranges or 2 mandarin oranges (fresh would be better and sweeter)
1/2-1 teaspoon salt (to taste)
1/4 teaspoon fresh ground pepper
1/2 teaspoon sugar (to taste, try it without, first)
3 tablespoons extra virgin olive oil ("or" more)
1 tablespoon rice wine vinegar (to taste)
1 tablespoon rice cooking wine
1/2 teaspoon lime juice
2 dashes Tabasco sauce

Steps:

  • Peel the kiwis, then whir them in the food processor until they're thoroughly liquified.
  • They won't be completely liquid because they have a fair amount of fiber in them.
  • Place in a bowl.
  • If using canned mandarins, rinse them well (they usually come in syrup).
  • If using fresh, peel and separate the mandarins.
  • Then process them well.
  • Put a sieve over the bowl with the kiwis and pour the processed mandarins into the sieve to separate the juice from the pulp.
  • Add the remaining ingredients and whisk well.
  • Pour over field greens salad mix and enjoy!
  • Pine nuts make a nice garnish for this dressing.
  • Note: I created this recipe as a request from a user on an online bulletin board.
  • Fresh mandarins are preferred, rather than canned, for sure.
  • Also, other people who've tried this recipe really like it- one substituted balsamic vinegar, but it's such a strong vinegar (and would cover the taste of the kiwi) I think the rice vinegar is better.

1 cup mini farfalle pasta
2 mandarin oranges, peeled and segmented
2 kiwi fruits - peeled, sliced, and quartered
1 medium apple, diced
1 medium Bartlett pear, cored and diced
¼ cup sweetened dried cranberries (such as Ocean Spray® Craisins®)
2 tablespoons pomegranate arils
2 tablespoons minced celery
2 tablespoons lime juice
1 tablespoon honey
1 tablespoon olive oil
1 teaspoon poppy seeds

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook farfalle at a boil, stirring occasionally, until tender yet firm to the bite, about 7 minutes. Rinse under cold water and drain well.
  • Meanwhile, combine mandarin orange sections, kiwi, apple, pear, dried cranberries, pomegranate arils, and celery in a large bowl.
  • Add pasta to the fruit salad, mixing until well combined.
  • Whisk lime juice, honey, olive oil, and poppy seeds together in a small bowl. Pour over pasta salad and stir until combined. Place in the refrigerator until flavors have blended, about 30 minutes.
