Grilled Chicken with Arugula Pesto image

1/4 cup sliced or slivered almonds or shelled pistachios
1 cup packed fresh arugula leaves
1/2 cup packed fresh basil leaves
1/2 lemon, juiced
1 clove garlic, grated or minced
Salt and freshly ground black pepper
1/3 cup extra-virgin olive oil
4 small pieces boneless, skinless chicken breast (tenders removed)

Steps:

  • Heat a grill pan to high.
  • Toast the nuts lightly in small skillet over low heat, then add them to a food processor.
  • Add the arugula, basil, lemon juice, garlic, and salt and pepper, to taste, and pulse to combine.
  • With the processor on, stream in the extra-virgin olive oil to form thick pesto.
  • Lightly pound out the chicken, then rub all sides with the pesto. Spray the grill pan with cooking spray or rub with a little oil and grill the chicken 2 to 4 minutes on each side.
  • Cook's Note: Serve sliced on top of Caesar Spaghetti or, pile it onto ciabatta bread with sliced tomatoes and mozzarella for an outta-sight sammy.

2 pounds premium ground beef (80 percent lean and 20 percent fat)
1 tablespoon good Dijon mustard
3 tablespoons good olive oil, plus extra for brushing the grill
1 teaspoon chopped thyme leaves
3 teaspoons chopped garlic
1 teaspoon kosher salt
1 teaspoon freshly ground black pepper
6 ounces grated Gruyere
12 small Brioche buns
4 ounces baby arugula
3 medium tomatoes, sliced in 1/8-inch-thick rounds
2 small red onions, sliced in 1/8-inch-thick rounds
Ketchup, for serving

Steps:

  • Build a charcoal fire or heat a gas grill.
  • Place the ground beef in a large bowl and add the mustard, olive oil, thyme, garlic, salt, and pepper. Mix gently with a fork to combine, taking care not to compress the ingredients. Shape the meat into 12 (2-inch) patties of equal size and thickness.
  • When the grill is medium-hot, brush the grill grate with oil to keep the sliders from sticking. Place the sliders on the grill and cook for 4 minutes. Turn the sliders over with a spatula and cook for another 4 to 6 minutes, until medium-rare, or cook longer if you prefer the sliders more well done. For the last 2 minutes of cooking time, place 1/2-ounce Gruyere on the top of each burger and close the grill lid. Remove the sliders to a platter and cover with foil.
  • Slice the buns in half crosswise and toast the halves cut side down on the grill.
  • Divide the baby arugula among the 12 bottom buns, top each with a slider, and finish with a slice of tomato and red onion. Cover with the top of the bun and serve hot with ketchup.

8.5 ounce package corn muffin mix
1 large egg
1/3 cup 2% milk
1/3 cup Daisy Brand Sour Cream
1 tablespoon peach preserves
2 teaspoons Dijon mustard
3 ounces deli baked ham, very thinly sliced
1/2 cup baby arugula leaves

Steps:

  • 1.Heat the oven to 400°F.
  • 2.Spray 20 mini muffin cups with cooking spray.
  • 3.Mix the muffin mix as directed on package, using the egg and milk.
  • 4.Spoon the mixture into muffin cups, filling almost full.
  • 5.Bake for 10 to 12 minutes or until golden brown. Remove from the pans and cool for 30 minutes.
  • 6.Meanwhile, in a small bowl, mix the sour cream, preserves and mustard.
  • 7.Split each mini muffin horizontally. Spread the sour cream mixture over the cut sides of the muffins.
  • 8.Cut the thin ham slices in 1½-inch strips. Pleat to fit the muffins.
  • 9.Fill each muffin with the ham and a couple of arugula leaves.

2 large eggs, beaten
3/4 cup minced onion, divided
2 teaspoons garlic powder
1 teaspoon salt
1 teaspoon pepper
1 package (17 ounces) dinner rolls
1/2 cup Thousand Island salad dressing, divided
10 slices American cheese
12 sliced dill pickles
1-1/2 cups shredded Iceberg lettuce
1 tablespoon butter, melted
1 tablespoon sesame seeds, toasted

Steps:

  • Preheat oven to 350°. In a large bowl, mix beef, eggs, 1/2 cup minced onion, garlic powder, salt and pepper just until combined; do not overmix. Place meat mixture on a large, parchment-lined baking sheet; shape into two, 6-in. x 8-in. rectangles, each about 1/2-inch thick. Bake until a thermometer reads 160°, 15-20 minutes., Meanwhile, without separating rolls, cut rolls in half horizontally. Spread 1/4 cup of dressing evenly over bottom halves of rolls., Blot meat with paper towels to remove excess fat; top meat with cheese and return to oven. Bake until cheese has just melted, 2-3 minutes. Place meat on bottom halves of rolls; spread with remaining 1/4 cup dressing. Layer with pickles, remaining 1/4 cup minced onion and shredded lettuce; replace with top halves of rolls. Brush butter on top of rolls; sprinkle with sesame seeds. Serve immediately.

1 ½ cups chopped cremini mushrooms
¼ cup minced shallots
3 cloves garlic, minced
¾ tablespoon chopped fresh thyme
½ teaspoon sea salt, or to taste
½ teaspoon ground black pepper
1 ½ tablespoons olive oil
¼ cup full-bodied dry red wine, or as needed
1 pound lean ground chuck
1 ¾ tablespoons white truffle oil
1 baguette, cut into 1-inch slices
12 thin slices Parmesan cheese
1 ½ cups arugula

Steps:

  • Preheat an outdoor grill for medium-high heat and lightly oil the grate.
  • Stir mushrooms, shallots, garlic, thyme, salt, and pepper together in a bowl. Heat olive oil in a skillet over medium heat;cook and stir mushroom mixture until golden, about 8 minutes. Pour red wine into skillet; simmer until liquid evaporates, stirring slowly, about 2 minutes. Spread mushroom mixture onto a plate to cool to room temperature, about 5 minutes.
  • Crumble ground chuck into a bowl; pour truffle oil over beef and massage oil gently into beef until evenly distributed. Fold mushroom mixture into beef mixture until combined; form 6 patties approximately the size of baguette slices.
  • Grill patties until no longer pink in the center, about 3 minutes per side. An instant-read thermometer inserted into the center should read at least 160 degrees F (70 degrees C).
  • Toast baguette slices until crisp and golden. Place each patty on a baguette slice, top with 2 shaved slices of Parmesan cheese, about 1/4 cup arugula, and a second baguette slice. Secure each slider with a toothpick.
