This is a yummy summer salad that uses an interesting combination of fruits, vegetables and meats. Before you decide you won't like it, try it. You'll be pleasantly surprised. You can add an extra head of broccoli, if you like.

2 heads fresh broccoli
1 red onion
½ pound bacon
¾ cup raisins
¾ cup sliced almonds
1 cup mayonnaise
½ cup white sugar
2 tablespoons white wine vinegar

Steps:

  • Place bacon in a deep skillet and cook over medium high heat until evenly brown. Cool and crumble.
  • Cut the broccoli into bite-size pieces and cut the onion into thin bite-size slices. Combine with the bacon, raisins, your favorite nuts and mix well.
  • To prepare the dressing, mix the mayonnaise, sugar and vinegar together until smooth. Stir into the salad, let chill and serve.

This is a great "wow" factor side salad! The best part is, you can adapt it easily to the fruit and nuts you prefer. You can even add Sliced Chicken breasts to make it a main course salad! I tried to duplicate it from memory, and ended up perfectly....

2 cups broccoli florets
1/4 cup finely chopped celery
1 large apple, chopped
1/2 cup spring onion tops
1/2 cup golden raisin
1/4 cup pomegranate-flavored craisins
1/4 cup cherry-flavored craisins
1/2 cup red seedless grapes
1/2 cup shredded cheddar cheese
1/4 cup slivered almonds
1/4 cup chopped walnuts
1 cup maries coleslaw dressing
pepper

Steps:

  • Wash Broccoli, grapes, celery & apple. Chop into chunky size.
  • Add the rest of the ingredients, mix, chill and serve! Lots of color, its healthy and tastes yummy! I'm not even a big broccoli fan, but this is really good! Enjoy!

⅓ cup granulated sugar
3 tablespoons cider vinegar
2 tablespoons fresh lime juice
1 tablespoon grated lime zest
1 clove garlic, minced
½ teaspoon salt
½ teaspoon poppy seeds
½ teaspoon paprika
½ teaspoon dry mustard
½ cup pecans
2 oranges, peeled and sectioned
2 ½ cups bite-size broccoli florets
1 red apple, chopped
1 cup grapes, halved

Steps:

  • Beat grapeseed oil, sugar, cider vinegar, lime juice, lime zest, garlic, salt, poppy seeds, paprika, and mustard together in a bowl with a whisk until smooth and creamy.
  • Heat a small skillet over medium heat. Toast pecans in hot skillet, stirring frequently, until fragrant, 4 to 5 minutes.; spread onto a cutting board to cool completely before chopping.
  • Toss orange sections, broccoli, apple, and grapes together in a bowl. Drizzle dressing over salad and toss gently to coat. Cover bowl with plastic wrap and refrigerate until chilled, 2 to 6 hours.
  • Sprinkle chopped pecans over salad.

1 tablespoon whole-grain Dijon mustard
2 teaspoons red wine vinegar
1 teaspoon white balsamic vinegar
2 tablespoons extra-virgin olive oil
Pinch sea salt
Pinch black pepper
3 medium heads broccoli, stems removed and heads cut into florets (about 1 1/2 pounds total)
2 tablespoons extra-virgin olive oil
Sea salt
1 1/2 cups cherry tomatoes, halved
1/2 ripe avocado, cut-up
1 red pearl onion, thinly sliced

Steps:

  • Roast the broccoli: Preheat the oven to 400 degrees F. Add the broccoli florets, oil and a large pinch of salt to a rimmed baking sheet lined with parchment paper. Toss to combine, and spread out in a single layer. Roast for 20 minutes, stir and roast until the broccoli is browning, 10 minutes more. Remove from the oven, and set aside to cool.

1/8-1/4 cup sugar (to your taste)
1 tablespoon vinegar
1/2 cup Miracle Whip or 1/2 cup mayonnaise
1/2 lb bacon, fried & chopped
1 cup cheddar cheese, grated
2 small broccoli, heads raw cut into bite sized pieces
1 onion, chopped (red or white)

Steps:

  • In small mixing bowl combine sugar,vinegar & miracle whip,stir well.
  • (depending on the size or amount of your broccoli you can double the dressing).
  • In large mixing bowl combine bacon,cheese, broccoli,and onion.
  • Pour first mixture over second and stir until coated.
  • Refrigerate.
  • This gets better the longer it sits.
  • You may double the dressing and use to your taste.

  • Drain pineapple, reserving 1 tablespoon juice (discard remaining juice or save for another use).
