FRUITY SPRITZ COOKIES MADE WITH JELL-O
This recipe came from a magazine page in Good Housekeeping, and I remember making them in the early '80's with my mom, so this recipe is at least that old. I've made this with several different Jell-o flavors and they've all been good. If you have trouble handling the dough in the cookie press chill it a bit.

Steps:
- Sift flour with baking powder.
- Cream butter.
- Gradually add sugar and gelatin, cream well after each addition.
- Add egg and vanilla; beat well.
- Gradually add flour mixture, mixing after each addition until smooth.
- Use cookie press to process dough, droping onto ungreased baking sheets.
- Sprinkle with Jell-o or decorate as desired.
- Bake at 400 degrees, about 13 or 14 minutes, or until golden brown at edges.
- This can vary depending on your oven, in mine these will be done in about 6-8 minutes- to be sure keep an eye on the first sheet to go in so they don't burn.
- Store in loosely covered container.
- Makes about 5 dozen cookies.
BASIC SUGAR COOKIES
Sugar cookies are a buttery classic that make a delicious anytime treat. Enjoy your sugar cookies plain, or decorate them with icing to make them festive. This recipe is a favorite of Martha's, who likes to add one tablespoon cognac alongside the egg and vanilla, after creaming together the butter and sugar.

- In large bowl, whisk flour, baking powder, and salt. With an electric mixer, cream butter and sugar until light and fluffy. Beat in egg and vanilla. With mixer on low, gradually add flour mixture; beat until combined. Divide dough in half; flatten into disks. Wrap each in plastic; freeze until firm, at least 20 minutes, or place in a resealable plastic bag, and freeze up to 3 months (thaw in refrigerator overnight).
- Preheat oven to 325 degrees. Line baking sheets with parchment. Remove one dough disk; let stand 5 to 10 minutes. Roll out 1/8 inch thick between two sheets of floured parchment, dusting dough with flour as needed. Cut shapes with cookie cutters. Using a spatula, transfer to prepared baking sheets. (If dough gets soft, chill 10 minutes.) Reroll scraps; cut shapes. Repeat with remaining dough.
- Bake, rotating halfway through, until edges are golden, 10 to 18 minutes (depending on size). Cool completely on wire racks. To ice cookies, spread with the back of a spoon. Let the icing harden, about 20 minutes. Decorate as desired.
- For the icing, sift confectioners' sugar into a small bowl. Whisk in milk, water, or lemon juice, 1 tablespoon at a time, until smooth and thick enough to coat the back of a spoon. If too thin, whisk in more sugar; if too thick, add more liquid. Spread over cookies with back of a spoon. Add other decorations, if desired. Let the icing harden, about 20 minutes.

- Sift the flour with baking powder. In a separate bowl, cream butter with sugar, Jello, egg and vanilla. Add the dry (i.e., flour) to the wet (i.e., butter mixture). A stand mixer will make life easier but you can certainly do it all by hand.
- Preheat your oven to 400°. Form your cookies by whatever method you desire. The original recipe calls for an ungreased cookie sheet (and you will need this if using a cookie press) but since we were doing a lot of baking we used parchment paper and they turned out beautifully. If you want, decorate the cookies with sanding sugar. Bake for 13-14 minutes or until just golden brown at the edges. Let cool completely on a wire rack.
- If you're making small cookies the recipe will yield about 5 dozen. Still, we suggest making two batches: one green (lime-flavored Jello) and one red (raspberry-flavored Jello).
JELL-O SPRITZ COOKIE
Steps:
- Cream butter, sugar and JELL-O. Add egg and vanilla and continue to cream. Add food coloring (optional). Add flour and baking powder until well blended.
- Using cookie spritzer, make cookie shapes. Sprinkle with colored sugar or sprinkles before baking.
- Bake 400 degrees for 6 - 8 minutes.
