- 1 STIR boiling water into dry gelatin mix in 2-qt. serving bowl at least 2 min. until completely dissolved. 2 Stir in cold water and juice. Refrigerate 1 to 1-1/4 hours or until thickened (spoon drawn through leaves definite impression). 3 STIR in oranges. Refrigerate 30 min. or until gelatin is set but not firm (gelatin should stick to finger when touched and should mound). 4 Combine whipped topping and spices; spoon over gelatin. 5 SPECIAL EXTRA: Stir 1 tablespoon grated orange peel into the gelatin mixture along with the oranges. 6 VARIATION: Prepare as directed, using 1 package (8-serving size) or 2 packages (4-serving size each) JELL-O Cranberry Gelatin and/or substituting orange juice for the pomegranate juice. 7 NOTE: Save 45 calories per serving by preparing with JELL-O Cherry Flavor Sugar Free Gelatin and COOL WHIP LITE Whipped Topping.

- Add boiling water to gelatin mix; stir 2 min. until completely dissolved. Stir in pomegranate juice. Refrigerate 25 to 30 min. or until slightly thickened.
- Whisk in 1 cup COOL WHIP until blended; pour into crust. (Filling will come near top of crust.) Carefully place in freezer.
- Freeze 4 hours or until firm. Top with remaining COOL WHIP and cookies just before serving.

MOUNDS CHERRY-POMEGRANATE SALAD
Have You ever made surprise jello? Love this easy recipe. A box of jello, and a cup of water and whipped topping and the magic begins ;) I add some fun stuff to make this a yummy salad for dessert or side dish for the holiday's.

- Make Your cherry jello, add one cup boiling water with box of jello, stir till dissolved. Add one cup whipped topping, stir. Place in refrigerater to firm up. This will turn to magic jello. About 4hrs or more.
- When firmed up remove from refrigerator and cut jello into squares, add pomegranate seeds, & chopped candy bars, combine. If You like a nutty crunch toss in a handful of pistachios (optional) Now add more whipped topping by folding in gently. Thats it. Serve cold top with cherries and or candy pieces or coconut. Enjoy as side with some protein or enjoy as dessert. To make a lighter version use sugar free jello and lite topping.
POMEGRANATE GELATIN
Steps:
- Place 1/2 cup of the pomegranate juice into a medium mixing bowl and sprinkle the gelatin on top. Set aside.
- Place the remaining juice and the sugar into a small saucepan and place over high heat. Bring just to a boil. Remove from the heat and add to the juice and gelatin mixture, stirring to combine. Place the bowl into the refrigerator and chill, just until the mixture begins to set up, approximately 30 to 40 minutes. Remove from the refrigerator and stir in the seeds. Place into a 2 cup mold of your choice or 4 1/2 cup individual molds and chill until set.
CHERRY POMEGRANATE JELLO
Tangy and colorful. Great for a holiday meal. Pomegranate fruit and mint leaves would make a great Christmas garnish.

- Stir boiling water into jello mix until dissolved. Stir in cold water and juice.
- Chill 1 hour or until thickened.
- Remove 1/4 c of the oranges and reserve for later. Add remaining oranges and stir. Chill 30 minutes or until set but not firm.
- Combine Cool Whip and spices. Spoon over jello.
- Chill 4 hours. Top with remaining oranges just before serving and garnish with mint leaves.
