TRADITIONAL WHITE PIZZA

Number Of Ingredients 16

1/2 recipe basic pizza dough, recipe follows
All-purpose flour, for dusting
1 tablespoon cornmeal
6 ounces mozzarella cheese, sliced
6 ounces Taleggio cheese, diced
1/2 teaspoon fresh oregano leaves
Salt and freshly ground black pepper
2 tablespoons Parmigiano-Reggiano
2 tablespoons extra-virgin olive oil
1 package active dry yeast
1 cup warm water (110 degrees F)
Pinch of sugar
1 1/2 teaspoons salt
1 1/2 tablespoons extra virgin olive oil, plus more for coating bowl
2 1/2 to 3 cups all-purpose flour plus more, if necessary
Cornmeal, as necessary for dusting pizza peel

Steps:

  • Preheat oven to 500 degrees F and, if you have one, place a pizza stone on the bottom rack of the oven.
  • Place the rolled out pizza dough onto a pizza peel or the back of a cookie sheet, dusted with cornmeal and using flour, as necessary, to help facilitate moving the dough. Sprinkle the pizza with the cheeses, oregano, salt and pepper. Bake the pizza for 10 to 12 minutes, use the peel to turn the pizza around and back an additional, 10 to 12 minutes, or until the cheese has melted and the pizza is golden. Sprinkle the cheese and olive oil over the pizza and serve immediately.
  • In a large bowl combine yeast with water and sugar and stir well to combine. Set aside until foamy, about 5 minutes. Add the salt, olive oil, and half of the flour and mix well to thoroughly combine. Add all remaining flour except 1/2 cup and mix well with your hands, working to incorporate the flour little by little. The dough should be slightly sticky to the touch. Transfer dough to a lightly floured work surface and knead dough for at least 5 and up to 7 minutes, adding enough additional flour, as necessary, to form a smooth and elastic dough that is not sticky. Transfer dough to a lightly oiled 2 or 3 quart bowl and turn to coat with oil. Cover with a damp towel and let rise in a warm place until doubled in size, usually at least 1 hour.
  • Preheat oven to 500 degrees F and if you have one, place a pizza stone on the bottom rack of the oven.
  • Divide dough into 2 portions for 2 (12 to 14-inch) pizzas) and form into balls. (See note below for calzones.) Place on a lightly oiled baking sheet and cover with a damp towel. Let rest for 15 minutes, then transfer to a lightly floured surface, shape as desired and roll out to a 1/8-inch thickness. Transfer dough to a pizza peel (sprinkle with cornmeal to help facilitate moving dough) and top with toppings of choice. Transfer to the preheated pizza stone and bake until crispy and golden brown, usually 12 to 18 minutes (depending on the toppings and the thickness of the crust). Remove from the oven with a metal peel or spatula and serve immediately.
  • Yield: 2 (12 or 14-inch) pizzas or 4 calzones, serving 4 to 6

Saturday night is pizza night in our house. Primarily vegetarian, am always looking for creative topping combos. Roasting brings out the sweetness in most vegetables. This is a flavor explosion! ENJOY

1 large fresh, unbaked pizza crust
1 clove elephant garlic (or 3 small)
3 Tbsp garlic oil
2-3 pinch salt
2-3 pinch pepper
1 large cauliflower
6 oz fresh mozzarella, chunk or "pearls"
5-6 large fresh basil leaves, cut in ribbons

Steps:

  • 1. Preheat oven to 400 degrees F. Prepare or purchase a large, fresh pizza crust. Prepare garlic and cauliflower as both can be roasted at the same time. Using a serrated knife, slice off tops of the garlic head (s), approximately 1/2 inch. Place garlic heads on a piece of foil. Drizzle cut side with 1 TBS olive oil. Sprinkle with salt and pepper. Wrap the head to create a pouch, completely covering. Roast for 1 hour.
  • 2. Wash and cut up cauliflower into flowerets only. Sprinkle with remaining olive oil, coating thoroughly. Roast for 25 minutes, stirring once, until tender and edges are browning, but not charred.
  • 3. Once all the above have been roasted, cool to touch. Prepare your favorite pizza crust. (I make an easy one in my bread machine!). Spread the crust with a bit of olive oil. Garlic will be a smooth paste. Spread liberally on pizza dough. Top with roasted flowerets. Sprinkle mozzarella chunks liberally. Bake at 400 degrees for 12-13 minutes. (I use a pizza stone, so keep an eye on it if using a metal pan!) Remove and sprinkle with ribbons of fresh basil and bake another 1 minute. Makes a 15" pizza.

8 slices bacon, cut into 1-inch pieces
¾ cup chopped onion
2 cloves garlic, chopped
½ teaspoon ground cumin
½ teaspoon dried oregano
½ teaspoon ground black pepper
1 (8 ounce) package reduced-fat cream cheese, cut into cubes
¼ cup sour cream
1 prepared 16-inch pizza dough pastry
1 cup shredded mozzarella cheese, or more to taste
½ cup shredded reduced-fat Cheddar cheese
4 jalapeno peppers, sliced into thin rings
1 tablespoon dried parsley flakes

Steps:

  • Preheat oven to 400 degrees F (200 degrees C).
  • Place the bacon in a large skillet and cook over medium-high heat, turning occasionally, until evenly browned, about 10 minutes. Remove bacon with a slotted spoon to drain on paper towels, reserving drippings in the pan.
  • Saute onion in bacon drippings until translucent, 5 to 7 minutes. Add garlic; continue to saute until garlic is golden, 2 to 3 minutes. Season the onion mixture with cumin, oregano, and black pepper. Stir cream cheese and sour cream into the onion mixture until smooth and spreadable.
  • Spread the cream cheese mixture evenly over the pizza dough; top with mozzarella and Cheddar cheeses. Arrange bacon and jalapeno pepper rings over the cheese layer. Sprinkle parsley over the entire pizza.
  • Bake in preheated oven until crust is firm and crispy and the cheese is browned and bubbly, about 30 minutes.

1 cup warm water
1 teaspoon honey
1 package dry yeast
1 1/4 cups whole wheat flour
1 1/4 cups all-purpose flour, plus more for kneading and forming dough
1 teaspoon dried oregano
1 teaspoon crushed red pepper flakes
1 teaspoon salt
Vegetable Spray, for bowl
Cornmeal, for pan
1 tablespoon olive oil
1/4 to 1/2 cup white wine
2 large red onion, chopped
4 cups packed fresh spinach leaves, washed well
1 tablespoon chopped fresh tarragon leaves
Salt and freshly ground black pepper
3 fresh tomatoes, sliced
3/4 cup chopped mushrooms
1 yellow bell pepper, chopped
1/2 cup grated part-skim mozzarella
1/4 teaspoon crushed red pepper flakes
1 1/2 teaspoons garlic salt

Steps:

  • Preheat the oven to 450 degrees F.
  • To make the dough: In a small bowl, combine water, honey, and yeast. Let stand until foamy, about 10 minutes. In a large mixing bowl, combine the flours, oregano, crushed red pepper and salt. Add the yeast mixture and stir until a soft dough forms.
  • Turn the dough out onto a floured surface and knead until smooth, adding flour as needed if dough is sticky, about 10 minutes. Clean the bowl and coat it with vegetable spray. Form the dough into a ball, put it in the bowl and cover with a kitchen towel. Let rise in a warm place until doubled in size, about 1 hour.
  • Meanwhile, to make the topping: Heat the olive oil and 1/4 cup wine in a large nonstick skillet over medium-high heat. Add the onion and cook until softened, adding more wine, if needed, 3 to 4 minutes. Add the spinach and cook until just wilted, about 3 minutes more. Stir in tarragon and season with salt and pepper, to taste. Set aside.
  • Punch the dough down and let rest for 10 minutes.
  • Sprinkle a large baking sheet with cornmeal. On a lightly floured surface, stretch the dough into a 12-inch circle, rolling the edge over slightly and pinching it together to form a thick rim. Place the dough on the baking sheet.
  • Arrange the tomato slices over the crust and top with the spinach mixture. Scatter the mushrooms and bell pepper over the top, then sprinkle with the cheese and crushed red pepper. Bake until crust is golden brown, about 35 minutes. Sprinkle with garlic salt, cut into wedges and serve immediately.

Garlic-flavored olive oil
1 (1-pound) ball frozen pizza dough, thawed and at room temperature
3 cups shredded mozzarella cheese
1/2 cup whole milk ricotta
Kosher salt and freshly ground black pepper
2 teaspoons chopped fresh oregano leaves, plus more for garnish

Steps:

  • Special equipment: 14-inch round pizza pan
  • Preheat the oven to 400 degrees F. Adjust the oven rack to the lower third of the oven.
  • Brush the pizza pan with oil. On a work surface, using your hands, press the pizza dough into a large flat disk and transfer it to the greased pan. Using your fingers, press the dough out until it has stretched to the perimeter of the pan. Create a dough "lip" around the outer edges of the pan. Brush the entire surface of the dough lightly with garlic oil and pierce the bottom of the crust all over with a fork, to prevent bubbling.
  • Evenly spread the mozzarella over the crust. Using 2 spoons, dollop teaspoon-sized mounds of ricotta evenly over the mozzarella. Season with salt and pepper, to taste, and evenly sprinkle the chopped oregano over the top.
  • Bake in the lower third of the oven until the crust is golden brown and cheese is bubbly and browning on top, 25 to 30 minutes. Cool on the pan for 10 minutes before garnishing with additional oregano and slicing into 8 pieces.
  • Cook's Note: Try buying fresh pizza dough from your local pizzeria; just be sure to let it sit out at room temperature for a few minutes, as warmer dough is easier to work with.

WHITE PIZZA RECIPE

Think cheese pizza is boring? Try changing it up with the more sophisticated White Pizza recipe. An herb and garlic infused olive oil is spread on a pizza crust that is topped with three cheeses for a delicious, cheesy pizza.

1 lb pizza dough*
1 clove garlic, minced
1 teaspoon finely chopped fresh rosemary
2 tablespoons extra virgin olive oil
3/4 cup ricotta cheese
1 cup shredded mozzarella cheese
1/3 cup grated Parmesan cheese
Crushed red pepper

Steps:

  • Place a pizza stone in the oven**. Preheat the oven to 450º-500ºF for at least 30 minutes.
  • Lightly flour a piece of parchment paper and flatten the pizza dough into a large circle, about 14" in diameter.
  • In a small bowl, combine the garlic, rosemary and olive oil. Brush the olive oil mixture over the crust.
  • Dollop the ricotta evenly over the crust and gently spread it out. Sprinkle on the mozzarella and the parmesan cheeses. Sprinkle crushed red pepper over the top - you only need a little bit - less than half a teaspoon, depending on how much heat you want.
  • Bake the pizza in the preheated oven until the edges are browned and the cheese is melted, about 10-12 minutes.
  • Cut into slices and serve.
