CRISPY BAKED CHICKEN WINGS



Crispy Baked Chicken Wings image

Crispy and flavorful baked chicken wings are so easy to prepare and you don't have to bother with all the grease from frying!

4 pounds chicken wings (, halved at joints, wingtips discarded)
2 Tablespoons baking powder (*aluminum free)
3/4 teaspoon salt
1/2 teaspoon cracker black pepper
1 teaspoon paprika
1 teaspoon garlic powder
1/3 cup Frank's Wings Hot Sauce
1 1/2 cups light brown sugar
1 Tablespoon water

Steps:

  • Adjust your oven rack to the upper-middle position. Preheat oven to 425 degrees F.
  • Line a baking sheet with aluminum foil and place a wire rack (I use a cooling rack) on top. Spray the rack with non-stick spray.
  • Use paper towels to pat the wings dry and place them in a large bowl. It's important to dry them REALLY well!
  • Combine the salt, pepper, garlic powder, paprika, and baking powder in a small bowl. Then sprinkle the seasoning over the wings, tossing to evenly coat.
  • Arrange wings, skin side up, in single layer on prepared wire rack.
  • Bake on the upper middle oven rack, turning every 20 minutes until wings are crispy and browned. The total cook time will depend on the size of the wings but may take up to 1 hour.
  • Remove from oven and let stand for 5 minutes. Transfer wings to bowl and toss with sauce.

3 to 4 pounds chicken wings
1/3 cup teriyaki sauce
1/2 cup lite soy sauce
2 tablespoon minced garlic
1 tablespoon garlic powder
1 tablespoon onion powder
1/2 tablespoon black pepper
1 to 2 cups maple syrup

Steps:

  • Preheat oven to 350 degrees F.
  • Cut off chicken wing tips and snip the skin between the joints. Place in disposable large baking pan. Add the maple syrup, soy sauce, teriyaki sauce, garlic, garlic powder, onion powder, and black pepper, toss to coat.
  • Place pan on baking sheet and bake for approximately 1 hours, tossing every 15 to 20 minutes. The liquid will gradually evaporate the longer you cook it.
  • After 1 hour, increase the oven temperature to 425 degrees F. Turn wings to coat evenly and cook an additional 45 minutes.

HONEY-GINGER CHICKEN WINGS

1/2 cup honey, preferably wildflower or mesquite
1/4 cup lime juice plus 1 tablespoon grated lime zest, plus more zest, for garnish
1/4 cup tamari or soy sauce
3 tablespoons sesame oil
2 tablespoons grated fresh ginger
3 cloves garlic, minced
2 scallions, thinly sliced (about 3 tablespoons)
Kosher salt and freshly ground black pepper
16 chicken wings (about 4 pounds), tips removed, drumettes and flats separated

Steps:

  • In a medium bowl, whisk together the honey, lime juice and zest, tamari, sesame oil, ginger, garlic, scallions, 1/4 teaspoon salt and 1/4 teaspoon pepper. Reserve 3/4 cup of the marinade for later use. Pour the remaining marinade into a 2-gallon ziptop bag. Add the chicken and seal the bag, pressing out as much air as possible; massage to distribute the marinade. Marinate, refrigerated, for at least 6 hours, preferably overnight.
  • Remove the chicken wings from the refrigerator and let sit at room temperature for about 30 minutes.
  • Preheat the oven to 400 degrees F. Line a baking sheet with parchment paper.
  • Put the wings skin-side down on the baking sheet and spoon the marinade from the bag over the wings. Cook for 20 minutes, then flip the wings, baste with the pan drippings, rotate the pan and cook until the honey has caramelized and the skin is a dark amber, an additional 20 to 25 minutes.
  • Pour the reserved 3/4 cup marinade into a small saucepan and bring to a boil over medium-high heat. Cook until the liquid is thick and syrupy and turns into a glaze, about 4 minutes. Coat the wings with the thickened marinade. Transfer to a serving platter and garnish with lime zest.

1 (12-ounce) can light beer
3 tablespoons hot sauce
2 teaspoons salt
1 teaspoon freshly ground black pepper
1 teaspoon ground cinnamon
2 pounds chicken drumsticks, skinned
Nonstick cooking spray
3/4 cup plain nonfat yogurt
3 tablespoons hot sauce
1 tablespoon olive oil
1 teaspoon salt
1/2 teaspoon dark brown sugar
1 teaspoon cayenne
1/4 cup blue cheese, crumbled
1/2 cup low-fat sour cream
1/2 cup fat free cottage cheese, creamed
1 tablespoon white wine vinegar
2 tablespoons finely minced onions
Salt and freshly ground black pepper

Steps:

  • Preheat the oven to 425 degrees F.
  • To make the wings: In a small mixing bowl, whisk the beer, hot sauce, salt, pepper, and cinnamon. Put the drumsticks in a large, heavy plastic bag, pour in the beer mixture, seal the bag, and refrigerate at least 2 hours and up to 24 hours.
  • Meanwhile, to make the basting sauce: Whisk all ingredients together except cayenne pepper in a small mixing bowl. Refrigerate until ready to use.
  • To make the blue cheese dip, mix all ingredients until incorporated. Puree in a food processor. Refrigerate until ready to use.
  • Coat a baking sheet with nonstick spray. Remove the drumsticks from the marinade, pat dry and place on the baking sheet in a single layer. Reserve 1/4 cup of the basting sauce. Brush some of the remaining sauce over each drumstick. Bake for 10 minutes.
  • Remove pan from the oven and use tongs to turn the drumsticks over. Brush with more sauce, and sprinkle with cayenne pepper, return to the oven and bake until drumsticks are brown, crisp and cooked through, about 15 minutes more.
  • Preheat the broiler. Brush drumsticks with the reserved sauce and broil until browned, about 3 minutes. Serve immediately with blue cheese dip.

1/2 cup fat-free ricotta cheese
1/2 medium zucchini, diced
1/2 cup chopped broccoli, blanched
1 red pepper, seeded and diced
2 tablespoons thinly sliced fresh basil leaves
4 boneless, skinless chicken breast halves
1 1/2 cups whole wheat bread crumbs
2 egg whites, beaten
Salt and freshly ground black pepper
1/2 cup white wine
1 tablespoon olive oil
2/3 cup fat-free tomato sauce
1/4 cup grated part-skim mozzarella
1/2 cup diced tomatoes

Steps:

  • Preheat the oven to 350 degrees F.
  • In a mixing bowl, combine the ricotta, zucchini, broccoli, red pepper, and basil. Set aside.
  • Put the chicken breasts in a large plastic bag and pound until very thin and of even thickness. Remove chicken from bag. Spoon a dollop of the ricotta mixture near the bottom edge of 1 piece of chicken and roll it into a cylinder, around the filling, like a jelly roll. Repeat with remaining chicken.
  • Put the bread crumbs on a plate. Season the egg whites with salt and pepper. Heat the wine and olive oil in a large nonstick skillet. Dip the chicken roll-ups in the egg whites and then coat with bread crumbs. Place the roll-ups in the skillet and cook until golden brown on both sides, about 10 minutes.
  • Spread the tomato sauce in a shallow baking dish and place the chicken roll-ups over the sauce. Sprinkle with mozzarella. Bake for 30 minutes.
  • Divide the roll-ups among 4 plates, spooning some sauce over the top. Sprinkle with diced tomato and serve immediately.

2 pounds chicken wings, tips removed and wings split
1 cup sliver tequila
1 teaspoon grated lime zest (from 2 limes) plus 6 tablespoons lime juice (from 4 limes)
1 teaspoon grated orange zest (from 1 orange) plus 1/2 cup orange juice (from 1 orange)
1 tablespoon agave nectar
6 to 8 pequin chile peppers, crushed (see Cook's Note)
Kosher salt
Nonstick cooking spray

Steps:

  • Place the chicken wings in a resealable plastic bag. In a small bowl, whisk together the tequila, lime zest and juice, orange zest and juice, agave, crushed peppers and 1/2 teaspoon salt. Pour over the wings and seal the bag. Toss the wings in the marinade to coat. Place in the refrigerator and allow to marinate for 2 hours.
  • Preheat the oven to 450 degrees F.
  • Spray a baking sheet with nonstick cooking spray. Lay the wings out on the tray so they do not touch each other. Bake, flipping the wings halfway through, until cooked through and beginning to brown, about 25 minutes.
  • Meanwhile place the marinade in a small saucepan over medium-high heat and simmer until reduced to 1/2 cup, 8 to 10 minutes.
  • Heat a grill pan over medium-high heat. Grill the wings, turning often and brushing occasionally with the reduced liquid to coat, until golden and crispy, about 4 minutes.

24 jumbo chicken wings
Corn oil, for frying
Soy Ginger Sauce, recipe follows
Ranch dressing or Alabama sauce, for serving
2 cups soy sauce
1/2 cup fresh lime juice
1/4 cup sesame oil
3 tablespoons garlic powder
3 tablespoons onion powder
2 tablespoons ground ginger
10 cloves garlic
4 pieces fresh ginger
2 cups olive oil
5 serrano peppers, chopped

Steps:

  • Preheat a smoker to 310 degrees F.
  • Stir together the chili powder, paprika, garlic powder, dried parsley, pepper, rosemary, sage, onion powder and salt in a bowl.
  • Coat the wings in the rub (save the remainder for another use). Place in the smoker until wings reach an internal temperature of 165 degrees F, about 1 hour 30 minutes.
  • Heat oil in a deep-fryer to 350 degrees F.
  • Deep-fry wings for 2 to 3 minutes. This makes them crispy on the outside and juicy inside.
  • Generously toss wings in Soy Ginger Sauce. Serve Ranch dressing or Alabama sauce on the side to cool the heat from the chiles.
  • Blend soy sauce, lime juice, sesame oil, garlic powder, onion powder, ground ginger, garlic and fresh ginger in a food processor. Continue to process, slowly adding olive oil until smooth. Add peppers last, then mix.

CARIBBEAN JERK CHICKEN WINGS

4 boneless chicken breast, cut size for nuggets
2 c flour
1 Tbsp black pepper (optional)
2 tsp garlic salt
2 eggs
1 c pickle juice
2 Tbsp milk
oil for deep frying
JAN SAUCE
1 c mayonnaise
1/2 c powdered sugar
2 Tbsp apple cider vinegar
8 dash(es) tobasco (or more to taste) i like more!

Steps:

  • 1. Cut chicken up in nuggets size portions. Let the nuggets marinate in the pickle juice mixture for 20-30 minutes.
  • 2. Beat egg, milk and pickle juice together in a medium size bowl.
  • 3. On a large plate toss together flour, garlic salt, and black pepper.
  • 4. Coat marinated chicken in the flour mixture until covered and fry until brown.
  • 5. JAN SAUCE: Combine all ingredients until smooth.
