3 quarts water
1 teaspoon salt
2 pounds uncooked medium shrimp, peeled and deveined
1/3 cup olive oil
1/4 cup white wine vinegar
3 tablespoons lime juice
1 jalapeno pepper, seeded and finely chopped
4 teaspoons honey
3 teaspoons Caribbean jerk seasoning
1 medium mango or 2 medium peaches, peeled and cubed
1 small red onion, thinly sliced and separated into rings
1 medium lime, quartered and sliced

Steps:

  • In a large saucepan, bring water and salt to a boil. Add shrimp; boil for 3 minutes or until shrimp turn pink, stirring occasionally. Drain and rinse with cold water; transfer to a large resealable plastic bag., In a small bowl, whisk the oil, vinegar, lime juice, jalapeno, honey and jerk seasoning. Pour 3/4 cup marinade over shrimp. Seal bag and turn to coat; refrigerate for 1-2 hours. Refrigerate remaining marinade., Just before serving, drain and discard marinade from shrimp. On a large serving platter, layer with shrimp, mango, onion and lime. Drizzle with remaining marinade.

4 cups water
1/2 cup chopped scallion
4 garlic cloves, crushed
3 fresh thyme sprigs
3 fresh Scotch bonnet or habanero chiles, halved and seeded
2 tablespoons salt
1/2 teaspoon black pepper
10 whole allspice
1 lb large shrimp in shell (21 to 25 per lb)

Steps:

  • Combine all ingredients except shrimp in a 4-quart heavy pot and bring to a boil, then reduce heat and simmer, covered, 20 minutes.
  • Stir in shrimp, making sure they are just covered by liquid, and remove pot from heat. Cool shrimp in liquid to room temperature, uncovered, about 1 hour. Transfer shrimp with a slotted spoon to a plate or bowl and drizzle some of cooking liquid on top.

¾ cup distilled vinegar
1 medium white onion, coarsely chopped
¼ cup extra-virgin olive oil
4 green onions, coarsely chopped

2 habanero peppers, stemmed

1 tablespoon ground nutmeg
1 teaspoon ground allspice
1 teaspoon ground cloves

Steps:

  • Preheat a grill for medium-high heat.
  • Combine soy sauce, vinegar, onion, olive oil, green onions, thyme, habanero peppers, sugar, nutmeg, allspice, and cloves in a food processor; blend for about 15 seconds to make the jerk seasoning.
  • Shape foil into a bowl. Add shrimp and pour in enough jerk seasoning to cover. Place the foil bowl on the grill. Seal the top, leaving a small opening. Grill until pink, stirring occasionally, about 10 minutes. Pour shrimp into a medium bowl.
  • Heat the remaining sauce in a small saucepan over medium heat, 2 to 3 minutes. Spoon sauce over shrimp.

1 cup fresh spinach, chopped
1 cup green bell pepper, seeded, chopped
1/4 cup instant onion, minced
1 teaspoon salt

1/2 teaspoon rosemary, crushed
1/4 teaspoon instant garlic, minced

1 teaspoon ground cinnamon

1/4 cup olive oil

1 small onion, minced
3 scallions, thinly sliced

  • Prepare the grill or preheat the broiler.

2 tablespoons curry powder
1 medium onion, chopped
1 whole scallion, chopped
1 garlic clove, minced
3 tablespoons diced sweet red peppers
1 slice scotch bonnet pepper
1/4 teaspoon fresh ground black pepper
3 tablespoons tomato puree
1 cup water
1 cup sliced okra
1 lb medium shrimp

Steps:

  • Heat oil in a large skillet over medium-high heat. When it is very hot add the curry powder. Cook, stirring, for 2 minutes. Add the next 6 ingredients. Cook, stirring constantly for 3 minutes. Add the tomato sauce and cook 3 minutes more. Add the water and blend well.
  • Add the okra and shrimp. Reduce the heat and cover and cook until shrimp is just cooked through. Serve immediately with rice and a mango chutney.

Steps:

  • Bring pineapple juice to a boil in a small saucepan over medium-high heat; cook until reduced to 1/3 cup, about 8 minutes. Remove from the heat and whisk in lime zest and juice, oil, garlic, thyme, oregano, cinnamon and allspice. Let cool to room temperature.
  • Whisk together jerk sauce and 1/4 cup of the pineapple-juice marinade in a shallow dish just large enough to hold the shrimp. Add shrimp and turn to coat. Cover with plastic wrap and refrigerate for 30 minutes.
  • Toss rice and black beans in a large bowl with the remaining marinade. Season with salt and pepper and set aside.
  • Preheat grill.

1 lb chicken breast halves, skinless and boneless
1 lb shrimp, peeled and deveined
1 lb angel hair pasta
jamaican jerk season to taste
butter, melted
4 clove garlic - chopped
garlic flavored olive oil

Steps:

  • 1. Prepare Pasta according to package directions.
  • 2. Clean and cut chicken into bite size pieces. Set a side.
  • 3. clean and peel shrimp. set aside.
  • 4. In a pan put in garlic infused olive oil with bite size chicken pieces. right before they are done add half of the chopped garlic and Jamaican season.
  • 5. Once chicken is done, remove from pan.
  • 6. Add Shrimp to the pan you just removed chicken from. Just prior to shrimp being finished add rest of garlic and Jamaican season.
  • 7. Once shrimp is done add chicken back to pan.
  • 8. Once pasta is done, toss chicken and shrimp with pasta, add olive oil and more Jamaican seasoning. Enjoy!

1 large onion, chopped
2 stalks celery, sliced
4 cloves garlic, chopped
1 serrano chile, minced (optional)
2 tablespoons curry powder
1 teaspoon dried thyme
2 cups seafood broth or stock or clam juice
1 14-ounce can "lite" coconut milk
3 ripe mangoes, diced (see Tip)
1 1/4 pounds raw shrimp (21-25 count; see Note), peeled and deveined
1 bunch scallions, sliced
1/4 teaspoon salt

Steps:

  • Heat oil in a Dutch oven over medium heat. Add onion and celery and cook, stirring occasionally, until beginning to brown, 3 to 5 minutes. Add garlic, chile (if using), curry powder and thyme; stir constantly for 30 seconds. Add broth (or stock or clam juice), coconut milk and mangoes. Bring to a simmer over medium-high heat. Reduce heat to maintain a simmer and cook, stirring occasionally, for 5 minutes. Puree 3 cups of the soup in a blender. (Use caution when pureeing hot liquids.) Return the puree to the pot and bring to a simmer. Add shrimp and cook until pink and firm, about 3 minutes. Stir in scallions and salt. TIPS & NOTES Tip: To peel and dice a mango, slice both ends off to reveal the long, slender seed. Set the fruit upright and remove the skin with a sharp knife. With the seed perpendicular to you, slice the fruit from both sides of the seed, yielding two large pieces. Turn the seed parallel to you and slice the two smaller pieces of fruit from each side. Dice into desired size. Note: Shrimp is usually sold by the number needed to make one pound. For example, "21-25 count" means there will be 21 to 25 shrimp in a pound. Size names, such as "large" or "extra large," are not standardized, so to get the size you want, order by the count per pound. Both wild-caught and farm-raised shrimp can damage the surrounding ecosystems when not managed properly. 1 tsp. allspice (or use a combination of cinnamon, nutmeg and cloves)
1 1/2 tsp. fresh minced ginger or 1/2 tsp. ground ginger
2 Tbsp. reduced-sodium soy sauce
3 Tbsp. pineapple juice (from pineapple chunks below)
1 lb. large shrimp, peeled and deveined
1 large red bell pepper, cut in 1-inch chunks
1 can (20 oz.) pineapple chunks in juice, drained, 3 Tbsp. juice reserved

Steps:

  • In a medium flat dish or resealable plastic bag, combine the garlic, allspice, ginger, soy sauce and pineapple juice. Add the shrimp and red pepper chunks and marinate it for 10 - 30 minutes. (Prepare the rice, if you are making it.) Remove the shrimp and peppers from the marinade, discarding the marinade, and thread the shrimp, peppers and pineapple chunks onto metal skewers, alternating the shrimp, then pineapple chunks, then peppers until all the shrimp and peppers are used. Reserve extra pineapple chunks to serve on the side. Grill or broil the skewers for about 3 minutes per side until the shrimp is cooked through. (Meanwhile, prepare the edamame, if you are making it.) Serve the shrimp, peppers and pineapple over rice.

1 lb Tiger Shrimp ((or large shrimps))
1/2 lb Scallops
1 medium Green Bell Pepper
1 medium Red Bell Pepper
1 medium Yellow Bell Pepper
1-2 Small Jalapeno Peppers
1 Small Small Onion
3 stalks Scallions
1 Cup sliced tomatoes ((optional))
3 Cloves garlic
2 packets Goya Foods Sazon Culantro y Achiote ((add less or more to taste))
4 tsp Jamaican Curry Powder
1 tsp Thyme
2 tbsp Cooking Oil
1 Can Coconut Milk ((13.5 FL. OZ))
1 Can Chicken Broth ((14 FL OZ))
1 tsp Scotch Bonnet Pepper Sauce ((Use less or more depending on your taste))
1 tsp Cornstarch
Salt and Pepper to Taste

Steps:

  • Peel, devein raw shrimp and season with black pepper, salt and 2 tsp curry powder and set aside
  • Slice peppers, scallions, tomatoes, onion and mince the garlic
  • Heat cooking oil on High in sauce pan
  • Saute peppers, scallions, tomatoes, onion and garlic
  • add 1 spring of fresh thyme
  • Reduce heat to Medium-High and add coconut milk and Chicken Broth (leaving a little to side and mix with cornstarch, set aside)
  • Add two packets of Goya Foods Sazon Culantro y Achiote, hot pepper sauce and curry powder and salt and pepper to taste.
  • Add shrimp and saute until shrimp begins to turn pink. During the last two minutes add scallops (lower the heat to Medium)
  • Add remaining chicken broth and cornstarch mixture.
  • Simmer for 1 minute, or until shrimp are firm and curry sauce has thickened;
