4 cups Everyday Baking Mix, spooned and leveled
1 cup (2 sticks) cold unsalted butter, cut into pieces
1/2 cup whole milk
3/4 cup seedless jam or jelly

Steps:

  • Preheat oven to 350 degrees. Line two baking sheets with parchment paper. In a food processor, pulse baking mix and butter until mixture resembles coarse meal. Add milk; pulse until a dough forms.
  • Drop dough by heaping tablespoons onto sheets, 4 inches apart. (You will fit about 9 cookies to a sheet; bake in two batches to make a total of 36 cookies.) Bake until cookies begin to turn golden but center is still pale, 12 to 14 minutes, rotating sheets halfway through. Transfer to a wire rack to cool completely.
  • Spread flat side of half the cookies with 2 teaspoons jam each; sandwich with remaining cookies.

ALMOND BUTTER SANDWICH COOKIES WITH RHUBARB JAM



Almond Butter Sandwich Cookies with Rhubarb Jam image

1 cup (256g) unsweetened almond butter (get one where the only ingredient is almonds)
1 large egg
A good pinch of kosher salt
1/2 cup (100g) granulated sugar
Sprinkles, optional
About 3 tablespoons rhubarb jam

Steps:

  • Preheat the oven to 325 degrees F and line a baking sheet with parchment paper.
  • In a medium bowl, mix together the almond butter, egg and salt with a stiff rubber spatula. Mix in the sugar. Roll the dough into 1 tablespoon-sized balls and place about an inch apart on the prepared baking sheet. Flatten with a fork (these barely spread in the oven) and sprinkle with sprinkles, if using. Bake until set and no longer shiny, about 12 minutes. Let cool completely on the pan.
  • Sandwich the cookies with a heaping 1/2 teaspoon of jam in the center, eat one now, and then let the rest sit for a few hours uncovered at room temperature to allow the jam firm up. Enjoy!

SESAME-AND-JAM SANDWICH COOKIES

Sandwiches for lunch, sandwiches for snacks-these cuties look like mini burgers, so they have extra kid appeal. The cookies come out of the oven crisp-tender; the jam filling softens them up overnight, making them more like jam-filled cakes the next day.

1 1/4 cups whole-wheat pastry flour (see Cook's Note)
1/2 teaspoon baking powder
1/2 teaspoon baking soda
1/4 teaspoon kosher salt
1 stick (8 tablespoons) unsalted butter, at room temperature
3/4 cup packed light brown sugar
1 large egg
1 teaspoon pure vanilla extract
1/2 cup tahini
1/2 cup white sesame seeds
1/3 cup your favorite jam or preserves

Steps:

  • Position oven racks in the top and bottom thirds of the oven, and preheat to 350 degrees F. Line 2 rimmed baking sheets with parchment paper.
  • Whisk together the flour, baking powder, baking soda and salt in a small bowl.
  • Beat the butter and sugar in the bowl of a stand mixer on medium-high speed until fluffy, about 2 minutes. Reduce the speed to medium, beat in the egg and vanilla until well combined, then beat in the tahini until smooth. Reduce the speed to low, then beat in the flour mixture until the dough comes together (it will be quite soft). Cover and refrigerate for 30 minutes (the dough will be soft but rollable).
  • Put the sesame seeds in a small bowl. Roll teaspoonfuls of dough into 1-inch balls, roll them in the sesame seeds and space them about 1 1/2 inches apart on the prepared baking sheets.
  • Bake the cookies until just puffed, lightly golden brown and just firm, about 12 minutes, rotating the pans halfway through. Let the cookies cool in the pan on a wire rack for 5 minutes, then transfer them to the rack to cool completely.
  • To assemble: Spread 1/2 teaspoon jam on a cookie, then top with another cookie, pressing gently. Keep in an airtight container for 2 days; they will soften overnight.

Jam:
2 cups fresh blueberries (12 ounces)
2 tablespoons powdered fruit pectin
1/2 teaspoon unsalted butter
1 cup sugar
Cookies:
1 cup (2 sticks) unsalted butter, room temperature
1 cup sugar
3 tablespoons finely grated lemon peel
1/4 teaspoon salt
2 large egg yolks
2 1/4 cups all purpose flour
Raw sugar* (for sprinkling)

Steps:

  • For jam:
  • Combine blueberries, fruit pectin, and butter in large nonstick skillet. Stir constantly over medium-high heat until mixture boils. Add sugar and return to boil, stirring until sugar dissolves. Boil until mixture is reduced to 1 1/3 cups, about 5 minutes. Remove from heat. Transfer mixture to small glass bowl; cover and chill until jam is cold, at least 6 hours (jam will thicken slightly while chilling). DO AHEAD: Can be made 1 week ahead. Keep chilled.
  • For cookies:
  • Using electric mixer, beat butter, 1 cup sugar, lemon peel, and salt in large bowl until light and fluffy, about 2 minutes. Add yolks and beat until blended. Add flour in 2 additions, beating just until blended after each addition. Gather dough together; divide in half. Place 1 dough half on sheet of waxed paper or parchment paper. Form dough into 1 1/2-inch-wide square or round log; smooth with dampened fingers. Wrap log in waxed paper. Repeat with second dough half. Chill dough until firm, at least 4 hours. DO AHEAD: Can be made 1 day ahead. Keep chilled.
  • Position rack in center of oven and preheat to 400°F. Line 2 large rimmed baking sheets with silicone baking mats, smooth side up, or parchment paper. Cut dough logs into scant 1/4-inch-thick squares or rounds. Arrange on prepared baking sheets, spacing 2 inches apart. Sprinkle half of dough squares or rounds generously with raw sugar (leave remaining plain).
  • Bake cookies, 1 sheet at a time, until edges are light golden, 10 to 12 minutes. Transfer cookies to rack and cool completely. DO AHEAD: Can be made 3 days ahead. Store airtight at room temperature.
  • Just before serving, spread 1 generous teaspoon jam over bottom (flat side) of each plain (not sugared) cookie. Top each with sugared cookie, sugared side up, and serve.
  • Also called turbinado or demerara sugar; available at most supermarkets and at natural foods stores.

1/1/2 tsp baking powder
1/2 tsp salt
1 1/4 cup butter, softned
1 cup granulated sugar
1 large egg
1 Tbsp milk
2 1/2 tsp vanilla extract
12 ounces fruit preserves
2 tsp confectioners' sugar

Steps:

  • Heat oven to 374. Line 2 baking pans with parchment paper. Combine flour, baking powder, and salt in a bowl. Beat butter and granulated sugar with an electric mixer on medium speed until light and fluffy. Beat in the egg, milk and vanilla, Beat in the flour mixture until smooth. Divide the dough in half and roll out between two sheets of parchment paper. Chill for 15 minutes and cut out 2 inch round cookies. Bake on prepared pans until edges are golden - about 7 minutes. Cool on a wire rack. Cook the preserves over medium heat until thickened and reduced to 1 cup. Cool completely. Sandwich 1 tsp jam between 2 cookies. Dust with confectioners' sugar. Store in an airtight container for up to 1 week.
