- 4- boneless, skinless chicken breasts
- olive oil
- 1/4 teaspoon garlic powder
- 1/4 teaspoon season salt
- 1/4 teaspoon parsley flakes
- 1/4 teaspoon cayenne
- 8 slices jarred jalapeño peppers + juice
- ranch seasoning packet

Steps:

  • Preheat oven to 350. Lay chicken breasts on a cooking sheet, sprayed with cooking spray, Cook about 6 minutes or until whitish. Make a cut into the middle of each chicken breast, but not cutting all the way through. Mix together all spices in a small bowl. Put spices in the cut of each chicken. Then put olive oil over the spices. Bake chicken breast until done and no longer pink. Put 2 jalapeños on top of each chicken breast and a little juice. Sprinkle with ranch seasoning.

FOR THE SAUCE:
4 boneless, skinless chicken breasts
One 12-ounce bag tortilla chips
4 ounces Pepper Jack cheese, shredded
1 C mayonnaise
1/2 T garlic powder
1/2 T cumin
1/2 T chili powder
2 teaspoons lime juice
1 C mayo
1/2 C buttermilk
1 C sour cream
1 packet Ranch dip mix
1 T garlic powder
1 T onion powder
1-3 T diced jalapeno slices (from a jar)
1 teaspoon lime juice
2 avocados

Steps:

  • Preheat the oven to 350 degrees. Put about half of the bag of chips into the food processor and blend. You should have 2-3 C crushed chips. (Reserve the rest of the bag in case you don't have enough.) Mix the shredded cheese and the crushed chips together. Whisk together the mayo, garlic powder, chili powder, cumin, and lime juice. Dredge the chicken breasts into the mayo and then into the chip mixture, pressing down to make sure it's all coated. (Here's where you may need to grind extra chips for coating if you run out.) When all the chicken is coated, put it in the oven and bake for about 25-30 minutes or until the chicken is done all the way through and the chips are crispy. Blend the sauce ingredients together in a food processor and serve over the chicken.

6 slices sugar-free bacon, crisped and crumbled
2 cups shredded carrots
2 tablespoons coconut oil
1 teaspoon garlic powder
1 teaspoon onion powder
1 teaspoon paprika
2 tablespoons finely chopped parsley
4 tablespoons chopped scallions, divided
1 1/2 teaspoons salt
1/4 teaspoon ground black pepper
8 large jalapeno peppers, halved through the stem and seeds removed
1 cup paleo mayonnaise
1 lemon, zest and juice
2 tablespoons finely chopped parsley
1/2 teaspoon garlic powder
1/2 teaspoon onion powder
1 teaspoon coconut oil
2 tablespoons water
1/4 teaspoon kosher salt, plus more to taste
1 pinch ground black pepper
1 pinch cayenne (optional)

Steps:

  • Preheat oven to 375 degrees F. Line a baking sheet with parchment paper; set aside.
  • In a large bowl, mix to combine ground chicken, half of the crumbled bacon (reserve other half for topping), shredded carrots, coconut oil, garlic powder, onion powder, paprika, 2 tablespoons chopped parsley, 2 tablespoons chopped scallions, salt and pepper.
  • Fill each jalapeno half with the chicken mixture, packing tightly. Place the stuffed jalapenos on prepared baking sheet and bake for 25 minutes until jalapenos are softened and chicken is cooked through.
  • Transfer to serving plate, top with 2 tablespoons sliced scallions and remaining crumbled bacon. Serve with Whole30 Ranch Dressing for dipping.

For the Jalapeno Ranch Dipping Sauce:
1/4 cup mayo
1/4 cup lowfat sour cream
1/4 cup (plus 2 tablespoons) lowfat buttermilk
1 tablespoon Hidden Valley Ranch Dressing (the powder)
1/2 teaspoon salt
1/2 teaspoon garlic powder
dash of cayenne
5-6 hot pickles jalapeno slices, finely chopped
For the Chicken:
4 chicken breasts (about 1 3/4 - 2 pounds total)
1 bag Jalapeno Kettle Chips, crushed
1 cup low fat buttermilk
1 teaspoon salt
dash cayenne

Steps:

  • For the Jalapeno Ranch Dipping Sauce: Mix ingredients together (adding additional buttermilk until desired consistency). Refrigerate until ready to use. For the Chicken: Preheat oven to 375º. Place an oven safe cooling rack in a large jelly roll pan and spray with non-cooking spray. In a bowl, whisk together buttermilk, salt, and cayenne. Pound out chicken breasts to roughly 1/2" thickness and add to buttermilk mixture (toss to coat well). Place crushed Kettle chips in a shallow baking dish. Pull one piece of chicken at a time out of the buttermilk and gently shake to remove some of the excess. Dip into the chips and coat thoroughly on both sides. Place on prepared baking sheet. Repeat until all chicken breast are thoroughly coated. Place into oven and bake for 25-35 minutes, until cooked through (cooking times vary based on chicken thickness and actual oven temperature). Serve hot with jalapeno ranch dipping sauce.

Blue Cheese Crumbles

Franks Buffalo Sauce

French Baguette (or your bread of preference)

Steps:

  • Bake bacon on 400 degree heat until crisp (10-15 minutes). After starting bacon, prep the chicken. Bread the chicken by covering with raw egg, and then coating flour. Repeat process to ensure chicken is coated thoroughly. Cook the chicken in medium sized sauce pan on high heat. The pan should be completely coated with oil maybe an eighth or quarter inch deep. Cook chicken until both sides are golden brown. When the chicken is done, toss chicken with Franks Buffalo Sauce. The chicken should be generously covered. To Prep the Sandwich, I put it in this order: 1) Bottom Bun 2) Blue Cheese Crumbles 3) Ranch Dressing 4) Sliced Jalapenos 5) Bacon Strips 6) Buffalo Chicken (cover the chicken lightly with Buffalo Sauce when on sandwich too) 7) Lettuce 8) Onion 9 Top bun (with more blue cheese on that) I usually low broil the two pieces of the bread insides up, with blue cheese on both sides to melt it a little.
