CHICKEN WITH CREAMY JALAPENO SAUCE

- Sprinkle chicken with salt. In a large nonstick skillet over medium-high heat, brown chicken in oil on both sides. , Add the onions, broth, jalapenos and cumin. Bring to a boil. Reduce heat; cover and simmer until a thermometer reads 165°, 5-7 minutes. Remove chicken and keep warm., Stir cream cheese and sour cream into onion mixture until blended. Stir in tomatoes; heat through. Serve with chicken and rice.

JALAPENO POPPER CHICKEN
Steps:
- Preheat oven to 350 degrees and grease a 9x13 baking dish.
- Layer chicken in a single layer in the baking dish. Season well with salt and pepper.
- In a small bowl, stir together the cream cheese, milk or cream, and garlic powder. If not room temperature enough microwave until able to stir together. Spread mixture evenly over chicken.
- Sprinkle jalapeno peppers, bacon, and cheese on top.
- Cover with foil and bake for 30-35 minutes or until chicken is done. Remove foil for the last 5 minutes of baking to melt cheese.

JALAPENO CHICKEN
Given to me by a friend who loves to experiment with recipes. A little kick of Southwestern cooking. Not too spicy, but can be made so with a little bit more jalapeno or other spices for an extra bit of 'kick.'

- Preheat oven to 450 degrees F (230 degrees C). Lightly grease a medium baking sheet.
- In a small bowl, mix cinnamon, chili powder, cumin, salt, and pepper. Rub chicken pieces with the mixture, and arrange on the prepared baking sheet.
- In a medium saucepan over medium-high heat, blend chicken broth, honey, lime juice, and jalapeno. Cook and stir until thickened.
- Place chicken in the preheated oven and cook about 15 minutes. Begin basting periodically with the chicken broth mixture. Continue cooking 30 minutes, or until the chicken is no longer pink and juices run clear.

Steps:
- Finely chop chicken with a knife or in a food processor.
- Heat oil in a 12-inch skillet over medium-high heat. Add chicken and cook until tender and golden on all sides, stirring frequently.
- Combine cream cheese, mayonnaise, milk, red pepper, jalapeño, lemon juice, salt, Tabasco sauce and cooked chicken in a bowl and mix until well blended.
- Preheat oven to 375°F.
- Spoon chicken mixture into an oven-safe crock or small casserole.
- Bake 20 minutes or until mixture is hot and bubbly.
- Serve with crisp crackers or pita triangles.

CHICKEN JALAPEñO POPPER MELT

- Preheat the oven to 425 degrees F.
- Toss the jalapeño halves on a baking sheet with the olive oil and season with salt and pepper. Roast until charred and softened, about 15 minutes. Set aside.
- Heat a griddle or nonstick skillet over medium heat.
- On each of 4 bottom slices of bread, layer about 2 tablespoons shredded cheese, then 4 jalapeño halves, then about 4 chips, then 1/2 cup of the chicken and then the remaining cheese. Top each with another slice of bread.
- Spread both sides of the sandwiches with the butter. Cook the sandwiches, doming them with a metal bowl to help melt the middles, until the first side is golden brown, 2 to 3 minutes. Flip and repeat with the second side, until the bottoms are golden brown and the sandwiches are gooey in the middle, another 2 to 3 minutes. Cut in half and serve.
JALAPENO POPPER SPREAD
This will definitely be the biggest hit at the party! This is such an easy appetizer to make and it tastes just like the jalapeno poppers you wish you could make yourself! The hardest part of this recipe is not eating it all by yourself! Serve with sliced sourdough baguettes, tortilla chips or crackers.
