Best-Ever Macaroni and Cheese image

In the South, mac 'n cheese is like everyone's favorite aunt-and this best-ever recipe beats out the rest.

16 ounces uncooked large elbow macaroni, large shells, or cavatappi pasta
6 tablespoons salted butter
⅓ cup grated yellow onion
2 teaspoons dry mustard
1 teaspoon kosher salt
¼ teaspoon black pepper
⅛ teaspoon freshly grated nutmeg
⅛ teaspoon cayenne pepper
6 tablespoons all-purpose flour
3 ½ cups milk
1 ¾ cups heavy cream
2 teaspoons Worcestershire sauce
4 ounces extra-sharp yellow Cheddar cheese, shredded (about 1 cup), plus 4 oz. diced (about 1 cup), divided
4 ounces sharp white Cheddar cheese, shredded, (about 1 cup), plus 4 oz. diced (about 1 cup), divided

Steps:

  • Preheat oven to 350°F. Prepare pasta according to package directions for al dente.
  • Melt butter in a large saucepan over medium. Add next 6 ingredients; cook, stirring, 30 seconds. Add flour, and cook, stirring, until golden, 2 minutes. Gradually whisk in milk and cream. Bring to a boil, whisking occasionally. Reduce heat to medium-low; simmer, whisking, until slightly thickened, 5 minutes. Stir in Worcestershire sauce. Remove from heat; stir in 3/4 cup each of shredded Cheddar cheeses until melted. (Reserve remaining 1/4 cup each of shredded cheeses.) Stir in pasta and diced cheeses; pour into a lightly greased 13- x 9-inch (3-quart) baking dish.
  • Bake on a rimmed baking sheet in preheated oven until bubbly and golden, 30 minutes. Remove from oven; increase oven temperature to broil. Sprinkle with reserved shredded cheeses; broil 6 inches from heat until cheeses are melted and golden, about 2 minutes. Remove from oven; cool slightly on a wire rack, about 15 minutes.

Think Stouffer's without the freezer. While it can be enjoyed straight from the pot, this macaroni and cheese has a slightly looser sauce than the stovetop variety to allow for thickening in the oven. Bread crumbs, while optional, make it truly spectacular.

1 pound elbows, shells, cavatappi, farfalle, fusilli or other short, tube-shaped pasta
Kosher salt
4 tablespoons unsalted butter
1/4 cup all-purpose flour
4 cups whole milk
1 clove garlic, finely grated
1 teaspoon smoked or hot paprika
Freshly ground pepper
12 ounces sharp or white Cheddar cheese, grated
12 ounces fontina or Gruyère, grated
1 cup coarse bread crumbs or panko
4 tablespoons melted butter or olive oil
1/4 cup finely grated Parmesan cheese (optional)
Kosher salt and freshly ground pepper

Steps:

  • Cook pasta in a large pot of salted boiling water until it's barely al dente. (It should be more al dente than your average pasta: It's going to continue to cook in the oven.) Drain and set aside.
  • Meanwhile, heat butter in a medium pot over medium heat. (The pot should be large enough to hold all the pasta when cooked.) Whisk in flour and cook, whisking constantly, until the flour is foamy and just starting to turn a light golden brown, about 4 minutes. Slowly whisk in milk to avoid clumping. Add garlic, paprika and season with salt and pepper. Bring to a simmer, whisking constantly and paying special attention to the edges of the pot to make sure the flour mixture is totally incorporated.
  • Add grated cheese and whisk to blend until the cheese is completely melted. (The sauce will seem thick at first and thin out as the cheese melts; it will thicken while it bakes.) Season with salt and pepper and add cooked pasta, stirring to coat well.
  • Heat oven to 425 degrees. Line a rimmed baking sheet with aluminum foil (to catch any cheesy drips).
  • Make the optional topping: Combine bread crumbs, melted butter and Parmesan, if using, in a medium bowl. Season with salt and pepper and, using your hands, mix well to ensure the bread crumbs are evenly coated.
  • Transfer the macaroni and cheese mixture to a 3-quart or 9 x 13 baking dish and scatter bread crumbs, if using, evenly over the top. Place on prepared baking sheet and bake until macaroni and cheese is bubbling, thickened and creamy, and bread crumbs are evenly golden brown, 25 to 30 minutes. Let cool slightly before serving.

1 (8 ounce) box elbow macaroni
¼ cup butter
¼ cup all-purpose flour
½ teaspoon salt
ground black pepper to taste
2 cups milk
2 cups shredded Cheddar cheese

Steps:

  • Bring a large pot of lightly salted water to a boil. Cook elbow macaroni in the boiling water, stirring occasionally until cooked through but firm to the bite, 8 minutes. Drain.
  • Melt butter in a saucepan over medium heat; stir in flour, salt, and pepper until smooth, about 5 minutes. Slowly pour milk into butter-flour mixture while continuously stirring until mixture is smooth and bubbling, about 5 minutes. Jackie is my daughter. She requests this frequently, I can never make just a single recipe, it's always at least doubled. The base of this recipe is from an old Betty Crocker cookbook, but I've made it mine. This is absolutely one of our favorite comfort foods! ENJOY!!!

32 oz macaroni, elbow
1/2 c butter (1 stick)
2 tsp onion powder
3/4 tsp white pepper
1/2 c flour
3 1/2 c milk
5 oz velveeta, sliced or cubed
4 oz mexican blend shredded cheese
4 oz swiss cheese
3 oz havarti cheese

Steps:

  • 1. Cook macaroni as directed on package. Do not overcook. If it says to cook 7-9 minutes, cook NO longer than 8.
  • 2. Melt butter over low heat. Measure onion powder & pepper into 1/2 cup measure. Fill remainder of cup with flour. Add flour mixture to butter in pan and mix thoroughly with a wisk. Cook over low heat stirring constantly till mixture is smooth and bubbly.
  • 3. Remove from heat and stir in milk with wisk. Heat to boiling over medium heat, stirring constantly. Boil and stir for one minute.
  • 4. Remove from heat and stir in cheeses till melted. Pour sauce over cooked macaroni & stir well. If desired, pour some or all of the mac n cheese into a buttered casserole, top with bread crumbs or ritz crumb in a little melted butter and bake for about 30 minutes at 375º. ENJOY!!
  • 5. NOTES: Rarely do I get to bake the mac n cheese. My kids don't usually give me the chance. They dig in as soon as the mac is mixed into the cheese. The original recipe called for chopped onion and salt. My kids don't like the chunks and I figured with all that cheese additional salt is not necessary. Also tastes great with add ins such as tuna or chicken.

Try it, it will become your FAVORITE too!!! Please Note: The Louisiana and Crystal hot sauce just adds flavor, and is not hot in flavor like Tabasco. I put a little twist on this recipe and made it, adding in a can of Ro-tel tomatoes with mild green chilies. It was GREAT! I just posted some pictures

2 (10 1/2 ounce) cans cheddar cheese soup
1 (12 ounce) can evaporated milk
2 eggs, well beaten
1/4 lb margarine, melted (1 stick)
1 teaspoon louisiana hot sauce (Not Tabasco) or 1 teaspoon Crystal hot sauce (Not Tabasco)
1/2 teaspoon salt
1 (10 ounce) can ro-tel diced tomatoes with green chilies, puts a little Mexican twist to it (optional)

Steps:

  • Preheat oven to 350.
  • Cook macaroni according to pkg. directions.
  • Spray 9x13" pan with pam cooking spray.
  • Mix macaroni, soups, milk, eggs and melted margarine, hot sauce, salt, and pour into pan. It should be soupy when you pour it inches.
  • Cook at 350, for approximately 1 hours.
  • Macaroni is done when knife inserted in middle comes out clean.
