This is such a unique Italian chicken dish. Chicken breasts are briefly sauteed, then simmered in a sauce of honey, balsamic vinegar, wine, orange and lemon juice. Toss in a few toasted pignoli, and you've got a quick and delicious dinner with risotto or cappellini.

3 boneless skinless chicken breasts
1/4 cup flour
3 tablespoons olive oil
3 cloves garlic
3 bay leaves
6 allspice berries
4 tablespoons honey
4 tablespoons balsamic vinegar
1/3 cup dry white wine
1/2 cup orange juice
4 tablespoons lemon juice
salt and pepper (about a tsp. each)
1/4 teaspoon cayenne pepper
3 tablespoons toasted pignolis (pine nuts)

Steps:

  • In a large plastic bag, combine flour and chicken breasts, toss to coat.
  • In a large skillet, saute floured chicken breasts in olive oil with the whole garlic, bay leaves and allspice berries until chicken is browned.
  • Remove chicken to a plate.
  • To the skillet, add honey, vinegar and wine; cook to reduce slightly, about 10 minutes on medium-high heat.
  • Return chicken to skillet, add orange and lemon juices, salt and pepper, and cook about another 20 minutes or until chicken is done and sauce is reduced slightly.
  • Remove garlic, bay leaves and allspice berries from sauce.
  • Add pignoli and heat through, another 5 minutes or so.
  • Delicious with angel hair pasta or a nice risotto.

Got this recipe from a roommate and have received countless compliments in dinner groups. When I'm cooking for dinner group (a lot of people), sometimes I use a 16-ounce bottle Italian dressing with an 18-ounce jar of apricot jam.

1 cup white rice
2 cups water
1 tablespoon olive oil
6 skinless, boneless chicken breast halves
1 cup apricot jam
1 cup Italian-style salad dressing (such as Wishbone®)
½ cup dried minced onion
1 (15 ounce) can diced pineapple, drained
1 yellow onion, chopped
1 red bell pepper, chopped

Steps:

  • Preheat oven to 350 degrees F (175 degrees C).
  • Bring rice and water to a boil in a saucepan over high heat. Reduce heat to medium-low, cover, and simmer until rice is tender and the liquid has been absorbed, 20 to 25 minutes.
  • Heat oil in a large skillet over medium-high heat. Brown chicken breasts on both sides, about 2 minutes per side.
  • Combine apricot jam, Italian-style salad dressing, and dried onions together in a bowl. Place browned chicken in a baking dish and pour jam mixture over the chicken; bake for 15 minutes. Add the pineapple, chopped onion and chopped red bell pepper; continue baking until chicken is cooked through and no longer pink inside, another 15 minutes. Serve over cooked rice.

1 onion, finely chopped
50 g lean smoked bacon, diced
3 garlic cloves, crushed
2 teaspoons dark muscovado sugar
8 chicken drumsticks, skinned
2 bay leaves
300 ml chicken stock
75 ml red wine vinegar
50 g sultanas
40 g chocolate, chopped
50 g pine nuts, lightly toasted
salt and pepper

Steps:

  • In a non-stick frying pan gently fry the onion, bacon and garlic for 5 minutes. Add the sugar and the chicken and fry gently for another 5 minutes, turning frequently.
  • Add the bay leaves, vinegar and stock and bring to the boil. Reduce the heat, cover and leave to simmer gently for about 35 minutes or until the chicken is tender.
  • Remove the chicken pieces and keep warm.
  • Stir the sultanas, chocolate and pine nuts into the sauce and cook for another 5 minutes.
  • Arrange the chicken on serving plates and spoon the sauce over.

10 pieces chicken
1/4 olive oil
1 large onion, chopped
2 carrots cut in small sticks
2 celery stalks dicd
8 garlic cloves peeled and chopped
1/4 c sugar
1 cup red wine
1/2 cup red wine vingar
zest and juice of 1 fresh ornge
2 T capers, drained
1/4 cup sliced almonds

Steps:

  • Season chicken with salt and pepper. Add 2 T oil and saute chicken over moderate heat until browned on all sids. Transfer the chicken to a plat and pour off excess oil. Add remaining 2 T oil to skilleet with onions, carrots, celery, and garlic. Cook over moderate heat, stir occasionally, until translucent and slightly brown, 8-10 minutes. Add sugar, wine, vinegar, orange juice and zest,capers and almonds, bring to a boil. Return chicken to the skillet. Cover partially and simmer on low heat until chicken is cooked through. Transfer chicken to a plate. Boil the sauce over high heat until thickened, about 3 minutes. Season with s and p. Return chicken to pan until warmed through. Transfer to a plate and spoon the sauce on top and serv.
