Tastes like an Italian sub.... but it's a salad! Nice for summer picnics. Best if eaten the day prepared.

8 ounces rotini pasta, cooked drained and cooled
1 cup grape tomatoes, cut in halves
1 cup diced cucumber
1/2 cup diced red bell pepper
2 cups shredded iceberg lettuce, packed
1/2 cup chopped red onion
1/2 cup sliced black olives
4 ounces diced cooked ham
4 ounces diced hard salami
4 ounces cubed provolone cheese
1/3 cup extra virgin olive oil
1/2 cup red wine vinegar
1/4-1/2 teaspoon salt
1/4-1/2 teaspoon garlic powder
1/2 teaspoon pepper
1/2 teaspoon sugar
1 teaspoon oregano

Steps:

  • Make sure your pasta has cooled completely.
  • In a large bowl, toss together pasta, tomatoes, cucumber, red bell pepper, shredded lettuce, chopped onion, sliced black olives, ham, salami and provolone.
  • In a jar or crouet, pour all the dressing ingredients. Shake very very well.
  • Pour over the salad and toss to coat evenly.
  • Serve.
  • If not eating right away, give another good mix/toss before serving.
  • Best if eaten the same day as prepared.

3 cups bread cubes
2 tablespoons extra-virgin olive oil
2 1/3 cups giardiniera (Italian pickled vegetables), drained and chopped, plus 2 tablespoons brine from the jar
3/4 cup fresh basil leaves, torn
1/2 cup sliced pitted Cerignola olives (black and green)
1/2 cup chopped jarred Peppadew peppers
1 large head romaine lettuce, shredded
2 ounces sliced mortadella, cut into thin strips
2 ounces sliced prosciutto, cut into thin strips
1 ounce sliced capicola, cut into thin strips
1 ounce sliced Genoa salami or hot soppressata, cut into thin strips
1 2-ounce piece aged provolone, shaved with a vegetable peeler

Steps:

  • Preheat the oven to 400 degrees F. Toss the bread cubes and 1 tablespoon olive oil in a bowl. Spread on a rimmed baking sheet and bake, tossing occasionally, until crisp, 8 to 10 minutes. Let cool.
  • Meanwhile, toss the giardiniera in a large bowl with the basil, olives, peppers, romaine, mortadella, prosciutto, capicola, salami, provolone and the remaining 1 tablespoon olive oil. Drizzle with the giardiniera brine and toss. Let sit about 20 minutes to let the flavors combine.
  • Add the croutons to the salad and toss. Divide among bowls.

1/2 lb. spaghetti, cooked, rinsed
2 cups chopped stemmed fresh kale
2 cups mixed red, orange, yellow and green cherry tomatoes, cut in half
1 cup chopped Italian parsley
1/2 cup each slivered red onions and chopped pepperoncini peppers
1 can (16 oz.) chickpeas (garbanzo beans), rinsed
8 slices OSCAR MAYER Hard Salami, cut into thin strips
6 slices KRAFT Provolone Cheese, cut into thin strips
1 cup KRAFT Olive Oil Vinaigrettes - Roasted Red Pepper

Steps:

  • Combine all ingredients except vinaigrette in large bowl.
  • Add vinaigrette; mix lightly.
  • Refrigerate 2 hours.
