SAUSAGE STUFFED BELL PEPPERS



Sausage Stuffed Bell Peppers image

4 medium green bell peppers
8 ounces ground pork sausage
1 1/2 cups chopped onions
1/2 cup chopped celery
2 teaspoons minced garlic
1 1/2 cups cooked long-grain rice
1/2 teaspoon salt, plus more for seasoning
1/4 teaspoon freshly ground black pepper, plus more for seasoning
1/2 teaspoon Essence, plus more for seasoning, recipe follows
1/4 cup chopped green onions, green part only
1 tablespoon chopped parsley leaves
2 tablespoons fine dry bread crumbs
2 tablespoons grated Parmesan
4 teaspoons unsalted butter
2 1/2 tablespoons paprika
2 tablespoons salt
2 tablespoons garlic powder
1 tablespoon black pepper
1 tablespoon onion powder
1 tablespoon cayenne pepper
1 tablespoon dried oregano
1 tablespoon dried thyme

Steps:

  • Preheat the oven to 400 degrees F.
  • Cut off the top quarter of each bell pepper and reserve. Scoop the seeds and veins out from the inside of each pepper and discard. Set bell pepper shells aside. Remove and discard the stems from each bell pepper top. Dice enough of the bell pepper tops to make 1/2 cup. Set aside.
  • In a large skillet, over medium-high heat, crumble and brown the sausage until cooked through, about 4 minutes. Add the onions, 1/2 cup diced bell pepper, and the celery. Saute for 4 minutes, or until the vegetables are soft. Add the garlic and cook, stirring, for 1 minute. Add the rice and mix well. Season with salt, pepper and Essence. Cook for about 1 minute. Remove from the heat and stir in the green onions and parsley. Season the insides of the bell pepper shells with salt and pepper, to taste. Spoon the rice mixture into the bell peppers.
  • In a small bowl, combine the bread crumbs and cheese. Season with a pinch of Essence and mix well. Sprinkle the crust over each pepper. Top each crust with 1 teaspoon of butter and place the peppers into an 8-inch baking dish or pan. Add just enough water to cover the bottom, about 1/3 cup. Bake for 25 to 30 minutes, or until the tops are crusty and brown and warmed through. Serve hot.

4 large green bell peppers, cut in half lengthwise, seeds removed
1 pound ground beef sirloin
4 ounces ground Italian sausage
1 cup cooked brown rice
1 teaspoon dried Italian seasoning
½ teaspoon kosher salt
¼ teaspoon freshly ground black pepper
1 clove garlic, minced
¼ cup freshly grated Parmesan cheese
1 large egg, lightly beaten
1 (24 ounce) jar Classico® Tomato and Basil Pasta Sauce, divided
2 cups shredded part-skim mozzarella cheese
Fresh chopped parsley

Steps:

  • Preheat oven to 350 degrees F (175 degrees C). Spray a roasting pan (large enough to accommodate 8 pepper halves in a single layer) with cooking spray.
  • Combine the ground sirloin, Italian sausage, brown rice, Italian seasonings, salt, pepper, garlic, Parmesan cheese, egg, and 1/2 cup Classico® Tomato & Basil sauce in a large bowl. Mix until combined.
  • Divide meat mixture evenly among the green pepper halves; press to compress slightly. Arrange halves in prepared pan. Spoon the remaining Classico® Tomato & Basil sauce onto the tops of the meat and peppers. Cover tightly with foil.
  • Bake until the peppers are soft and internal temperature of the meat reaches 165 degrees F, about 1 1/2 hours.
  • Remove from oven. Remove foil and top each pepper with shredded cheese.
  • Turn oven to broil. Place peppers, uncovered under the broiler. Broil until the cheese is melted and bubbly, about 5 minutes. Sprinkle with parsley.

1 lb hot Italian sausage, crumbled
1 lb ground beef
1 large onion, chopped
2 garlic cloves, minced
2 cups canned tomatoes
1 cup cooked rice
2 teaspoons italian seasoning
salt & fresh ground pepper (to taste)
1/2 cup grated mozzarella cheese
1/2 cup grated parmesan cheese
1 (8 ounce) can Italian-style tomato sauce

Steps:

  • Saute beef, sausage and onion until browned.
  • Add garlic and saute 3 minutes Drain fat. Add tomatoes and seasonings.
  • Simmer to bring out flavors.
  • Add rice.
  • Stuff peppers.

This is the recipe my mom always made when I was little, in my Italian family in NJ:) It's very simple but delicious, and I find the simplest recipes are always my favorites.

1 lb ground beef
1 1/2 cups cooked white rice
1 egg
salt and pepper
garlic powder
3 medium size green bell peppers
1 (67 ounce) jar pasta sauce (I use Prego traditional or make homemade)

Steps:

  • In a large bowl mix together the cooked rice and the raw ground beef.
  • Add the egg, salt, pepper, and garlic powder to your taste, and mix very well.(I find it's best to mix it with your hands like meatloaf.).
  • Prepare the peppers by cutting them in half from top to bottom like an apple, so you have two identical halves. Take off the stem and remove the seeds.
  • Fill the pepper halves equally with the rice mixture. Set them down in a 13x9" baking pan that you have put a little of the sauce on the bottom of first.
  • Generously spoon sauce over the stuffed top of each pepper and then pour the remaining sauce around the peppers in the pan.
  • Sprinkle the top with salt, pepper, and garlic powder.
  • Bake at 350°F until the peppers are very soft and tender when tested with a knife.(depending on your oven maybe an hour or so; mine takes longer because my oven is ancient:).
  • Spoon the sauce over the peppers at least three or four times while they are cooking. The sauce will thicken slightly as you bake the peppers and get delicious and rich.
  • Enjoy!

This is a quick and versatile recipe that is one of DH's favorites. I like it because it makes enough for two dinners and a lunch for the two of us. I like to serve it over polenta, but pasta or rice are great, too. It's happy in a slow cooker as well.

5 sweet Italian sausage links
3 bell peppers, cut into strips (I never use green in this)
2 medium onions, halved and sliced
1 tablespoon chopped garlic
1 (14 ounce) can diced tomatoes, undrained (Italian style)
14 ounces water
1 tablespoon italian seasoning
salt
pepper

Steps:

  • Brown the sausage in a large skillet.
  • Add onions and saute for ~2 min.
  • Add peppers and garlic and saute 1 min.
  • Add the tomatoes with their water, fill the can with water and add that too.
  • Add Italian seasoning and salt and pepper to taste.
  • Simmer uncovered until the sausage is cooked through (I usually cut them into thirds to speed cooking time and ease serving).

3 -4 bell peppers, cut in half and seeded (red, green or yellow)
1 lb ground beef
1 (14 ounce) jar of your favorite spaghetti sauce
1/2 cup uncooked instant rice
1 1/2 cups French-fried onions, divided
1/4 cup sliced or chopped black olives
1 cup shredded cheese, any kind
2 tablespoons hot sauce

Steps:

  • Brown ground beef in large skillet and drain.
  • Stir in spaghetti sauce, rice, 3/4 cup onions, olives and hot sauce.
  • Stuff each pepper until meat sauce gone.
  • Place cut side up in lined 13x9 inch pan.
  • Bake covered for 35 minutes.
  • Remove from oven.
  • Top with the rest of fried onions, then shredded cheese.
  • Return to oven, uncovered, and bake until golden brown and cheese melted,~5 more minutes.
  • ENJOY.
