ONE POT ITALIAN SAUSAGE PASTA



One Pot Italian Sausage Pasta image

An EASY comfort food recipe that's loaded with Italian flavors, ready in 20 minutes, made in ONE pot, and a family favorite!! No need to boil the pasta separately to save time and dishes!!

1 pound Italian sausage, casings removed (I used hot but sweet Italian sausage may be substituted)
2 to 4 tablespoons olive oil, as desired
3 to 5 cloves garlic, finely minced or pressed
1 teaspoon oregano, optional
one 14.5-ounce can petite diced tomatoes (I used Hunt's no-salt added, tomato basil oregano flavor)
2 1/2 cups water
2 cups penne pasta (another small-shaped pasta may be substituted)
1/4 cup sour cream
2/3 to 3/4 cup freshly grated Parmesan cheese
1/2 cup loosely packed fresh basil, chiffonaded
freshly ground black pepper, to taste if desired

Steps:

  • To a large skillet at least 4-inches deep or large pot, add the sausage, 1 to 2 tablespoons olive oil if desired, and brown sausage over medium high heat. Crumble sausage as it cooks; do not drain.
  • Add the garlic, optional oregano, stir, and cook for about 1 minute, or until fragrant; stir nearly constantly.
  • Add the tomatoes, water, pasta, stir, cover the skillet with a lid, reduce the heat to medium low, and simmer for about 15 minutes, or until pasta is al dente and the water has incorporated. Stir once midway through cooking, paying attention to the pasta on the bottom of the skillet so it doesn't stick (this is why I recommend olive oil, even with sausage).
  • Turn off the heat, add the sour cream, and stir to combine.
  • Add the Parmesan cheese and stir to combine.
  • Add the basil, pepper if desired (I didn't need to add salt), and stir to combine. Serve immediately.

  • add evoo to a large heated skillet. add remaining ingredients in a single layer
  • cook on low for 6-8 minutes. flip all ingredients and cook until grapes and tomatoes began to burst.
  • remove sausage from pan. slice. add sausage slices back to skillet to soak up all the juices. plate up and top with parsley

Steps:

  • Heat olive oil in a 12-inch heavy skillet over moderate heat until hot but not smoking, then cook sausages, turning over once, until well browned, about 8 minutes total. Add grapes and cook, stirring occasionally, until sausages are cooked through and grapes are softened, 10 to 12 minutes. Stir in vinegar and salt and pepper to taste.

12 ounces fully cooked Italian sausage (about 4 links), sliced into 1/4"-thick coins
2 pints cherry tomatoes
2 garlic cloves, pressed or finely chopped
4 sprigs thyme
2 bunches broccolini (about 1 pound), trimmed, halved lengthwise
1/2 teaspoon kosher salt
1/4 teaspoon freshly ground black pepper
3 tablespoons unsalted butter, cubed
Crusty bread (for serving; optional)

Steps:

  • Heat oil in a large skillet over medium-high. Add sausage and cook, stirring occasionally, until lightly browned, about 2 minutes. Add tomatoes, garlic, and thyme, stir to combine, and cook, pressing down on some of the tomatoes with the back of a wooden spoon to encourage bursting, 2 minutes. Add broccolini; season with salt and pepper. Cook, covered, 2 minutes. Remove from heat and stir in butter until melted.
  • Divide sausage mixture among plates. Serve with bread alongside, if desired.

1/2 pound hot Italian sausage, casings removed
1 large sprig fresh rosemary
1 fat garlic clove, finely chopped
1 1/2 pounds ripe plum tomatoes, trimmed and diced
1/4 cup green pitted olives, slivered
Salt to taste
1/2 pound whole-wheat pasta, like penne

Steps:

  • Warm the oil in a large skillet over medium-high heat. Add the sausage and rosemary; cook, breaking up the meat with a fork, until browned and cooked through, 5 to 7 minutes. Add the garlic, cook 1 minute. Add the tomatoes and stir occasionally until they have broken down and turned into a sauce, 10 to 15 minutes. Stir in the olives for the last 5 minutes of cooking. Add salt to taste, cover and keep warm.
  • Meanwhile, bring a large pot of salted water to a boil. Cook the pasta according to package directions. Drain well and toss with the sauce.

1 (12-ounce) wedge Brie, rind removed, cheese cut into 1/2-inch cubes (about 2 cups)
1 (12-ounce) package grape or cherry tomatoes, each halved
1/2 cup quartered pitted Kalamata olives
2 large garlic cloves, minced
1/4 teaspoon (generous) dried crushed red pepper
1 cup (packed) fresh basil leaves, coarsely chopped, plus sprigs for garnish
3/4 pound rigatoni

Steps:

  • Off heat, place cheese, tomatoes, olives, garlic, and crushed red pepper in large skillet. Stir, separating cheese pieces. Mix in chopped basil.
  • Meanwhile, cook pasta in large pot of boiling salted water until just tender but still firm to bite. Drain, reserving 1/2 cup pasta cooking liquid.
  • Add hot pasta and 1/4 cup reserved pasta liquid to skillet with cheese mixture. Place over medium heat and toss until cheese is partially melted and sauce coats pasta, adding more reserved pasta liquid by tablespoonfuls if dry, about 5 minutes. Season pasta to taste with salt. Transfer to large shallow bowl. Garnish with basil sprigs and serve.

You can use any kind of sausages in this cozy, autumnal dish, filled with roasted sweet grapes and vinegar-spiked onions. Spicy Italian sausages made from pork, chicken or turkey, fresh chorizo or merguez, will give the dish a kick, while milder sausages like chicken and apple, bratwurst or Weisswurst make for a gentler meal. Serve this on a bed of polenta or mashed potatoes, or with some crusty bread to sop up the vinegary, sausage-rich pan juices, and a green salad on the side. If you want to halve this recipe, reduce the oven temperature to 425 degrees; otherwise the smaller amount of food in the pan might get too brown.

1 teaspoon fennel, coriander, cumin or caraway seeds, lightly crushed
1 pound any sausages, poked all over with a fork
1/2 cup parsley, coarsely chopped
2 tablespoons chopped chives
2 teaspoons rice vinegar or sherry vinegar, plus more to taste

Steps:

  • Heat oven to 450 degrees. On a large (13-by-18-inch) rimmed baking sheet, toss together onion slices, 2 tablespoons oil, salt and pepper, and spread in an even layer. Roast for 8 to 12 minutes, until the onions turn translucent and the thinnest pieces take on a pale gold color at the edges.
  • After 10 minutes, add grapes, seeds and the remaining 2 tablespoons oil to pan with onions, and toss well. Spread in an even layer and nestle sausage into the mixture.
  • Roast until sausage has browned, 25 to 30 minutes, flipping sausage and tossing grapes and onions halfway through.

1 pound uncooked Italian sausage links
1/2 cup Progresso™ beef flavored broth (from 32-ounce carton)
1 medium yellow summer squash, cut lengthwise in half, then cut crosswise into 1/4-inch slices
2 cups grape or cherry tomatoes, cut lengthwise in half
1/4 cup chopped fresh or 1 tablespoon dried basil leaves
6 green onions, cut into 1/2-inch pieces (1/2 cup)
2 tablespoons olive or vegetable oil

Steps:

  • Cook and drain pasta as directed on package.
  • Meanwhile, cut sausage crosswise into 1/4-inch slices. Spray 12-inch nonstick skillet with cooking spray; heat over medium-high heat. Add sausage; stir-fry 4 to 6 minutes or until brown. Stir in broth. Cover and cook over medium heat 5 minutes.

1/2 cup prepared pesto
2 cups fresh baby spinach
2 cups spring mix salad greens
