1/2 teaspoon salt
1 can (14.5 oz) Muir Glen™ organic fire roasted crushed tomatoes, undrained
1 can (19 oz) Progresso™ cannellini beans, drained, rinsed
1/2 cup grated Parmesan cheese (2 oz)

Steps:

  • In 12-inch nonstick skillet, heat oil over medium heat. Add sausages; cook 4 to 6 minutes, turning occasionally, until sausages are browned on all sides. Add pasta, chicken broth, tomato paste and salt. Heat to boiling; cover, reduce heat and cook 9 to 11 minutes, stirring occasionally, until pasta is al dente and most of liquid is absorbed.
  • Remove skillet from heat. Remove sausages, cut into 1/2-inch slices, and return to skillet with crushed tomatoes and beans. Cook over medium heat 3 to 4 minutes, stirring occasionally, until hot. Stir in Parmesan cheese, and serve.

1 cup sliced onion
1 cup sliced bell peppers, any color
1 (12 ounce) package Italian-style chicken sausage links, or more to taste, casings removed
2 cloves garlic, minced
1 (26 ounce) jar marinara sauce
3 cups water
3 cups chopped fresh spinach, or more to taste
10 ounces penne pasta
1 tablespoon chopped fresh basil
1 tablespoon Italian seasoning
1 cup shredded Italian cheese blend

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Add oil and allow to heat. Add onion and peppers to hot oil; cook until they begin to get tender, 3 to 4 minutes. Add sausages and cook, breaking them up with a wooden spoon, until lightly browned, 4 to 5 minutes. Add garlic and saute for 1 to 2 minutes. Add marinara sauce, water, spinach, pasta, basil, and Italian seasoning; mix to combine. Cancel Saute function.
  • Close and lock the lid. Select high pressure according to manufacturer's instructions; set timer for 5 minutes. Allow 10 to 15 minutes for pressure to build.
  • Release pressure using the natural-release method according to manufacturer's instructions, 5 minutes. Then release pressure carefully using the quick-release method according to manufacturer's instructions, about 5 minutes. Unlock and remove the lid. Stir in 1/2 cup shredded Italian cheese until combined. Serve with remaining cheese sprinkled on top.

Steps:

  • In 8-inch skillet, melt butter over medium heat. Toast bread crumbs in butter 2 to 3 minutes, stirring frequently, until browned. Transfer to small bowl; set aside.

1 (19 ounce) can cannellini beans, rinsed and drained

1 1/2 cups shredded mozzarella cheese
1 (8 ounce) package refrigerated crescent dinner rolls

Steps:

  • Preheat oven to 425 degree F.
  • Remove sausage from casings.
  • Brown sausage in a skilled, stirring to separate meat.
  • Rinse and drain the grease off of the sausage.
  • Add the spaghetti sauce, beans and thyme to the sausage in the skillet.
  • Simmer for 5 minutes over medium heat.

1 can (14.5 oz) diced tomatoes with garlic and onion, drained
1 teaspoon dried basil leaves
1/2 teaspoon dried rosemary leaves, crushed
1 cup shredded Italian cheese blend (4 oz)
2 eggs
1 roll (1 lb) sun-dried tomato polenta

Steps:

  • Heat oven to 375°F. Spray 2 1/2-quart casserole with cooking spray.
  • In 12-inch nonstick skillet, cook sausage over medium heat about 8 minutes, stirring occasionally, until browned; drain. Add zucchini, beans, tomatoes, basil, rosemary and 3/4 cup of the cheese; stir gently. Spoon into casserole.
  • In medium bowl, beat eggs slightly with fork. Crumble polenta into eggs; mix well. Spoon polenta mixture evenly over sausage mixture; spread evenly.
  • Bake uncovered about 25 minutes or until sausage mixture begins to bubble around edges and polenta is firm to the touch.

2 lb italian sausage, sweet
2 lb italian sausage, hot
2-3 clove garlic, minced, to your taste
4 1/2 c tomato sauce, spicy
2 c ricotta cheese
1/2 c parmesan, freshly grated
2 1/2 Tbsp oregano, dried
2 eggs
pinch pepper
4 c mozzarella cheese, shredded
1/2 c black or green olives, optional
1 can(s) refrigerated pizza dough
3/4 c parsley, chopped

Steps:

  • 1. Preheat oven to 350 degrees. In a heavy skillet saute sausages and minced garlic until brown; drain well and transfer to a bowl. Stir spicy tomato sauce into the sausages and reserve. Mix ricotta, parmesan, 1/2 cup of parsley, 2 tablespoons of oregano, 1 egg, and freshly ground black pepper to taste.
  • 2. In a rectangular ovenproof dish, about 9 by 13 inches, spread half of the sausage mixture; dot this with half of the ricotta mixture and sprinkle 2 cups of the mozzarella evenly over the entire surface. Add olives if using. Sprinkle with 1/2 of the remaining parsley and half of the remaining oregano; repeat.
  • 3. Roll out three-quarters of the dough to a thickness of about 1/3 inch, being certain the dough is about 1 inch larger than the pan all the way around; transfer dough to top of pizza and tuck in excess all around. Cut slits or designs in dough to allow steam to escape. Beat remaining egg with 1 tablespoon water and brush some of it on top of crust. Bake for 35 to 45 minutes, or until the top is golden brown and the edges are bubbling. Let pizza stand for 30 minutes before cutting.
  • 4. Roll out remaining dough and use it to form bread sticks if you like. Brush with butter and sprinkle with garlic salt. Bake for 12-15 minutes dring last part of pizza baking time. Baking time will depend on how thick you make the bread sticks so check as they bake.

2 onions
2 green peppers (optional) or 2 red peppers (optional)
2 lbs frozen spinach
1 quart spaghetti sauce (I prefer Classico)
grated parmesan cheese

Steps:

  • Brown sausages in skillet or on grill.
  • Peel and slice onions. Put in bottom of 6qt crock pot.
  • If using peppers, seed and slice vertically. Layer on top of the onions.
  • Pour frozen spinach into crock pot.
  • Arrange sausages on top of the spinach.
  • Pour spaghetti sauce evenly over top of everything.
  • Cook on high for 2 hours then on low for 3-4 hours. OR, thaw the spinach first and cook on low for 6+ hours.

Tired of the same old queso? Change things up next game day by making this one. I came up with this after craving Italian nachos from a restaurant chain I used to frequent while living in a different city. You can also make this recipe on a stove, but you need longer cook times.

1 pound hot Italian sausage (such as Johnsonville®)
1 small onion, chopped
1 (14.5 ounce) can diced tomatoes
1 (3.8 ounce) can sliced black olives, drained
¼ cup mild pickled banana peppers, diced
12 ounces whole milk, or more as needed
4 cups shredded Monterey Jack cheese

Steps:

  • Turn on a multi-functional pressure cooker (such as Instant Pot®) and select Saute function. Crumble sausage into the pot and cook for 3 minutes. Add onion and cook until sausage is browned and onion is soft and translucent, about 5 minutes. Add tomatoes, olives, and banana peppers. Stir to combine. Pour in milk and cook, stirring often, until heated through but without boiling, about 5 minutes.
  • Add Monterey Jack cheese and whisk continually until completely melted and smooth, about 5 minutes.

2 lbs Italian turkey sausage
2 yellow onions, chopped
1 green bell pepper, cut into 2-inch pieces
1 red bell pepper, cut into 2-inch pieces
1 yellow bell pepper, cut into 2-inch pieces
2 bay leaves
4 garlic cloves, minced
14 ounces diced tomatoes, undrained
6 ounces tomato paste
1/2 cup dry red wine or 1/2 cup water
1 tablespoon dried parsley flakes
1/2 teaspoon dried oregano leaves
1/2 teaspoon dried basil leaves
1/2 teaspoon salt
1/8 teaspoon pepper

Steps:

  • Cook turkey sausage in heavy skillet over medium heat until browned, turning occasionally.
  • Layer half of the onions on bottom of 3-4 quart crockpot, then add half of the peppers.
  • Add all of the browned turkey sausage, then the rest of the onions and peppers.
  • Add bay leaves and other spices.
  • Combine diced undrained tomatoes, tomato paste, and red wine in small bowl and mix well to blend.
  • Pour over mixture in crockpot.
  • Cover slow cooker and cook on low for 6 hours.

The pan juices from this pizza-inspired pot roast just might be the best part of the dish. Maybe oven roasted (covered) for 2 1/2 - 3 hours at 325 degrees. With adaptations from Bruce Aidell's, "The Great Meat Cookbook". Note: I added to the recipe garlic in the sauce and inserted into the roast. With a small pointed knife, stuff roast prior to cooking with slivers of garlic. Also, instead of fennel and oregano, I subbed 1 tablespoon dried Italian seasoning plus 1 tablespoon sugar.

1 (2 1/2-3 lb) trimmed boneless beef chuck roast or 1 (2 1/2-3 lb) trimmed boneless pork shoulder
1/2 teaspoon salt
2 tablespoons olive oil
1/2 teaspoon fresh ground black pepper
10 -12 ounces Italian sausage, removed from casing (hot or mild or a combination of both)
1 large red onions or 1 large yellow onion, cut into 1/2-inch pieces
1 (28 ounce) can crushed tomatoes with basil
1/2 cup red wine
2 poblano peppers or 1 large green bell pepper, cored and cut into 1/2-inch pieces
1 cup thickly sliced mushroom, such as cremini (optional)
1/2 teaspoon oregano
1/4 teaspoon fennel seed (optional)
cooked pasta, for serving
flat leaf parsley

Steps:

  • Pat beef dry. Season on all sides with salt and pepper. Heat oil in a large nonstick skillet over medium-high heat. Brown beef (or pork) in the oil until well browned on both sides, 10-12 minutes total. Transfer meat to the slow cooker.
  • Add sausage and onion to skillet. Cook, breaking up sausage with a spoon, until browned, about 10 minutes. Drain off excess fat. Stir in tomatoes, peppers, wine, chilies, mushrooms, oregano and fennel. Pour over beef in slow cooker. Cook on low until beef is fork-tender, about 8 hours. (You can use the high setting for 4 hours, but the beef won't be quite as tender). (If working in advance, the cooked dish can be refrigerate covered up to 2 days. Skim off solidified fat; reheat gently in a large saucepan on low heat.).
  • Carefully remove roast to a serving platter; tent with foil. Skim off fat from pan juices. Taste and season with salt, if necessary. Serve roast thinly sliced over the pasta. Top beef slices and pasta with tomato mixture. Garnish with parsley sprigs.

1 teaspoon Grated Parmesan cheese
Italian parsley, for garnish

Steps:

  • In large Dutch oven heat olive oil and minced garlic on medium-high heat.
  • Add sliced bell peppers and cook until they begin to soften.
  • Add Italian sausage to the pot and cook through.
  • Once cooked through, transfer sausage and peppers to a bowl (drain oil, if preferred).
  • Return Dutch oven to stove and bring 2 cups water and package of Knorr® Rice Sides™ - Chicken to a boil; reduce heat, cover and simmer 7 minutes.
  • Once rice is finished, add can of Italian-style diced tomatoes and the sausage and peppers.

This is like a lasagna in a bowl without the noodles. So cheesy. Looks cute when make in the ramekins.

8 ounce(s) sweet italian sausage
2 tablespoon(s) olive oil
2 clove(s) garlic minced
1 medium shallot diced
1/4 cup(s) dry red wine
1 tablespoon(s) italian seasoning
3 ounce(s) tomato paste
28 can(s) crushed tomatoes
- salt to taste
11/2 cup(s) ricotta cheese
3/4 cup(s) grated parmesan
1 cup(s) shredded mozzarella
1 tablespoon(s) each fresh basil and parsley minced
1 package(s) puff pastry sheets thawed
1 medium egg beaten
1 tablespoon(s) water

Steps:

  • Add oil to large skillet. Saute shallots and garlic 2 minutes. Add wine and cook until almost all evaporated. Add sausage and break up into small pieces. A potato masher works good. Add the tomato paste, crushed tomatoes, Italian seasoning and salt. Simmer about 15 minutes.
  • Stir together the ricotta cheese, parm cheese, and mozzarella cheese. Stir in the fresh basil and parsley set aside.
  • Spray 8 small ramekins. Fill each ramekin half way up with cheese mixture. Top with sausage marinara mixture.
  • Roll out the puff pastry sheets using a ramekin cut out a round piece of dough about an inch larger than the diameter of the ramekin. Place the dough over the top of the ramekin pressing carefully down the sides.
  • brush with egg and water wash. Bake at 400 degree for about 30 minutes until dough is browned and no longer doughy.
