Dump-and-Bake Italian Sausage Recipe with Rice image

1 (10.5 ounce) can condensed cream of mushroom soup, NOT diluted
¾ cup water
1 cup uncooked long grain white rice
14.5 ounces diced tomatoes with basil, garlic and oregano, drained
1 sweet bell pepper (any color), diced
1 sweet onion, diced
12 ounces fully-cooked Italian sausage, sliced into rounds (I used Aidell's Italian Style Smoked Chicken Sausage)*
Salt and pepper

Steps:

  • Preheat oven to 375 degrees F. Spray a 3 quart baking dish with cooking spray.
  • Add cream of mushroom soup and water to the prepared dish. Whisk together until completely combined.
  • Stir in uncooked rice, tomatoes, bell pepper, and onion. Season with about ½ teaspoon salt and ¼ teaspoon pepper. Stir again.
  • Cover tightly with foil and bake for 30 minutes. Remove from oven and stir in sausage. Cover again, return to oven, and bake for 30 more minutes.
  • At this point, give the casserole a stir and check the rice for doneness. If the rice isn't completely tender, cover the dish and continue baking for 10-15 more minutes, or until most of the liquid is absorbed and rice is cooked.

1 pound bulk pork sausage
1 pound bulk Italian sausage
1 medium green pepper, chopped
1 cup sliced fresh mushrooms
1/2 cup chopped onion
2-1/2 cups onion and garlic croutons
8 large eggs
1-1/2 cups whole milk
1 cup shredded part-skim mozzarella cheese
1 cup shredded cheddar cheese
3 to 4 plum tomatoes, thinly sliced
1/2 cup shredded Parmesan cheese

Steps:

  • In a large skillet, cook sausage, green pepper, mushrooms and onion until meat is browned and vegetables are tender; drain. Place croutons in a greased 13x9-in. baking dish; top with sausage mixture. Beat eggs and milk; pour over sausage. , Cover and chill for 8 hours or overnight. Remove from refrigerator 30 minutes before baking. Bake, uncovered, at 350° for 45 min. , Sprinkle with the mozzarella and cheddar cheeses. Place tomato slices over top; sprinkle with Parmesan cheese. Bake 15-20 minutes longer or until a knife inserted in the center comes out clean. Let stand 5 minutes before cutting.

All in one dish casserole of Italian sausage, peppers and potatoes in a tomato sauce that goes together quickly and is delicious!

2 lbs Italian sausage, hot or mild
4 potatoes, cut in chunks
1 green bell pepper, seeded and sliced
2 cloves minced garlic
1 small onion, diced
1 (28 ounce) can crushed tomatoes
1 teaspoon dried basil
salt and pepper

Steps:

  • Brown sausage in saute pan, then place in 9x13 baking dish.
  • Place potatoes, peppers, onion and garlic on top of sausage.
  • Pour crushed tomatoes over and sprinkle with basil, salt and pepper to taste.
  • Cover and bake at 350 degrees for 50 minutes or until done.
  • Remove cover and bake 20 minutes more.

My Mom used to make this for us, after she was just a little too old to stand in the kitchen for too long...It was one of her favorites that was easy to make, yet tasted like good old-fashioned comfort food...Sure do miss my Mom!!!

2 cups macaroni, cooked and drained, and tossed with
2 tablespoons butter
1 lb sage sausage, browned, broken into chunks and drained of grease (Weber brand was my Mom's favorite, but I prefer Jimmy Dean's)
1 (16 ounce) jar spaghetti sauce (Classico was the only brand Mom would use for this.)
1 (6 ounce) jar sliced button mushrooms, drained
1 (16 ounce) package shredded mozzarella cheese
1/2 cup romano cheese, grated (Kraft)

Steps:

  • In a 2 quart, ungreased casserole dish, layer twice: 1/2 cooked macaroni, 1/2 cooked sausage, then 1/2 sauce, 1/2 mushrooms, 1/2 shredded cheese. Do the same layering again.
  • Sprinkle Romano cheese on top.
  • Bake in a preheated 350 degree oven for 30-40 minutes, until cheese is slightly browned and casserole is bubbly.
