1 ½ teaspoons active dry yeast
½ teaspoon white sugar
½ cup lukewarm water
2 cups sifted all-purpose flour
½ teaspoon salt
2 tablespoons olive oil
1 egg, beaten

Steps:

  • Stir yeast and sugar into lukewarm water, using a fork. Let stand in a warm place until a creamy layer forms on top of the water, about 10 minutes.
  • Mix flour and salt in a large bowl. Mix olive oil into flour and stir for 2 minutes. Pour yeast mixture and beaten egg into flour mixture and stir to make a stiff dough. Turn dough out onto a floured work surface and knead until springy and smooth, about 8 minutes. Place dough into a floured bowl and cover with a piece of plastic wrap wiped with a thin film of olive oil.
  • Let dough rise until doubled, about 1 hour. Punch down and roll out to desired shape.

New York Italian Pizza Dough image

A really wet, sticky pizza dough that bakes up to perfection! Simple ingredients and technique in this dough make your pizza crust authentic, crispy and chewy just like your favorite NY brick oven joint. This recipe makes enough for three 10- to 12-inch pizzas, two 12- to 14-inch pizzas, one 16- to 18-inch pizza, or 6 to 8 small single serving stromboli.

2 ½ cups warm water (110 degrees F/45 degrees C)
2 teaspoons salt
4 ½ cups bread flour
2 teaspoons active dry yeast
¼ cup bread flour, or more if needed
1 tablespoon olive oil

Steps:

  • Pour the warm water into the pan of a bread machine, sprinkle in the salt, and add the flour to the pan so the flour sits on top of the water. Make a hole in the top of the flour, and spoon the yeast into the hole. Let the mixture sit for 20 minutes to moisten the flour. Set the bread machine to the knead setting, and knead the dough for about 10 minutes. Turn the dough out onto a floured surface, and knead in 1/4 cup more flour or as needed, adding the flour about 2 tablespoons at a time, to make a wet, sticky, but elastic dough. The dough should be "as soft as a baby's bottom." Form the dough into a round shape.
  • Wipe the inside of a large bowl with olive oil, and place the round ball of dough into the bowl. Turn the dough over a couple of times so the dough picks up a thin coating of oil. Cover with a cloth, and refrigerate the dough for 10 hours or overnight.
  • The next day, allow the dough to come to room temperature before rolling out on a floured surface and adding toppings as desired. Roll the dough out thin with a thicker edge before adding toppings.
  • Place a pizza stone into oven, dust it with a little flour, and preheat oven to 500 degrees F (260 degrees C). Bake the pizza on the stone in the preheated oven until the bottom of the crust is browned, 6 to 8 minutes.

3 cups unbleached flour
1 tablespoon light brown sugar
1 ⅓ cups warm water (110 degrees F/45 degrees C)
1 ½ teaspoons salt
1 ½ tablespoons olive oil
1 (.25 ounce) package active dry yeast
1 egg
1 tablespoon water
2 tablespoons cornmeal

Steps:

  • Place flour, brown sugar, warm water, salt, olive oil and yeast in the pan of the bread machine in the order recommended by the manufacturer. Select dough cycle; press Start.
  • Place pizza stone in oven and preheat to 375 degrees F (190 degrees C). Oven must be preheated at least 30 minutes before baking.
  • Deflate the dough and turn it out onto a lightly floured surface. Form dough into two loaves. Place the loaves seam side down on a cutting board generously sprinkled with cornmeal. Cover the loaves with a damp cloth and let rise until doubled in volume, about 40 minutes.
  • In a small bowl, beat together egg and 1 tablespoon water. Brush the risen loaves with egg mixture. Make a single long, quick cut down the center of the loaves with a sharp knife. Gently shake the cutting board to make sure that the loaves are not sticking. If they stick, use a spatula or pastry knife to loosen. Slide the loaves onto the pizza stone with one quick but careful motion.
  • Bake in preheated oven for 30 to 35 minutes, or until loaves sound hollow when tapped on the bottom.

For Beef:
2 1/2 - 3 lbs. chuck roast, (mine weighed 2.71 lbs.)
2 tsp. kosher salt
1 tsp. coarse ground black pepper
2 tsp. onion powder
2 tsp. garlic powder
4 tsp. dried oregano
1 (10 1/2 oz.) can beef consommé
4 large garlic cloves, grated
For 1 Italian-Style Pita Pizza:
1 - 6" pita bread round
1 1/2 Tbl. basil pesto
1/2 - 1 cup pulled beef
3 thick slices fresh mozzarella
4 semi-thin slices roma tomato
1 small piece (end piece) fresh mozzarella
pepper to taste
extra-virgin olive oil (EVOO), a light drizzling
sweet aged balsamic vinegar, a light drizzling
2 large fresh basil leaves, stacked, rolled lengthwise, and sliced thinly into chiffonade ribbons

Steps:

  • Pat one side with half of the seasonings.
  • In crock pot, add beef consommé and grate in garlic. Stir.
  • Place roast in seasoned side-down.
  • Season other side with rest of seasonings.
  • Place on lid and turn crock pot on to High for 15 minutes.
  • Reduce heat to Low, and continue cooking until fall-apart tender, about 6 hours.
  • Remove meat to a baking sheet, pour juices from crock into a large glass measuring cup, and refrigerate juices.
  • Shred meat with 2 forks, or leave in bite-sized chunks if preferred. Cover to keep moist.
  • When fat has solidified on top of juices, remove, then pour most of the juice over the meat to keep it from drying out.
  • Use what you need, and freeze the rest for later uses.
  • For 1 Italian-Style Pita Pizza:
  • Preheat oven to 375º F.
  • Warm beef a little to melt any fat left, drain, and set aside. Place pita bread round onto a small baking sheet. Spread with basil pesto almost to the edge. Pile with beef. Top with slices of fresh mozzarella, then tomato, then one last small piece of mozzarella.
  • Pop into oven and bake for 20 - 25 minutes until cheese has fully melted and just starting to brown in small patches.
  • Remove from oven and transfer pizza to a cutting board. Sprinkle with black pepper. Drizzle with EVOO and balsamic vinegar. Sprinkle with fresh basil chiffonade.
  • Cut into fourths, serve hot, and enjoy!

1 recipe basic pizza dough, recipe follows
3 tablespoons olive oil
4 cups thinly sliced yellow onions
Salt and freshly ground black pepper
4 cups thinly sliced green bell peppers
1 pound Italian sausage, crumbled
1/2-pound provolone, sliced
2 cups button mushrooms, sliced
2 cups your favorite tomato sauce
1/2-pound mozzarella, sliced
1 package active dry yeast
2 teaspoons sugar
1 cup warm water (110 degrees F)
1/4 cup lard or vegetable shortening
3 to 4 cups all-purpose flour
2 teaspoons salt
Olive oil

Steps:

  • Divide the dough in half. Roll each half into a 12-inch circle, about 1/2-inch thick. Press the dough into 2 greased 12-inch deep-dish pizza pans. Cover with a clean dish towel and let rise 30 minutes.
  • Preheat the oven to 400 degrees F.
  • In a large saute pan, over medium heat, add 2 tablespoons of the olive oil. When the oil is hot, add the onions. Season with salt and pepper and saute for 2 minutes. Add the peppers, season with salt and pepper, and continue to saute for 3 minutes. Remove from the heat. Transfer to a bowl and set aside.
  • In the same pan, over medium heat, add the sausage and render for 4 to 6 minutes. Remove and drain on paper towels.
  • Lay 1/4-pound of the sliced provolone on the bottom of each pizza. Spoon 1/2 the onion and pepper mixture over each pizza. Sprinkle 1/2 of the sausage over the onion mixture on each pizza. Scatter 1 cup sliced mushrooms over sausage. Spread 1 cup of the tomato sauce over the top of each pizza. Layer 1/4-pound mozzarella slices over top of each pizza. Drizzle with remaining olive oil. Bake the pizzas for 25 to 30 minutes or until golden brown.
  • Remove the pizza from the oven and cut into individual servings.
  • In an electric mixing bowl, whisk the yeast, sugar, water and lard together to make a paste. Add the flour and salt and mix, using a dough hook, until the dough comes away from the sides and crawls up the dough hook. Remove the dough from the bowl. Grease the bowl with olive oil and place the dough back in the bowl. Cover the bowl with plastic wrap and let the dough rise until doubled in size, about 1 hour. Turn the dough out onto a floured surface and divide dough in half. Roll the dough into balls, cover, and let the dough rest for 15 to 20 minutes. The dough is ready to be shaped.

Pizza dough as it is made in Italy. When I first moved to Italy, I was surprised to see that deciding to eat a pizza for dinner meant whipping up pizza dough with a few common ingredients a couple of hours before. Using fresh, compressed yeast, it rises in an hour. Stretchy, chewy, and so full of flavor, there's no need to order out. This dough works for calzone as well as focaccia, and the recipe doubles perfectly!

4 cups all-purpose flour, or more as needed
2 teaspoons salt
3 ¾ teaspoons fresh, compressed yeast
1 ¼ cups water, at room temperature
2 ½ tablespoons extra-virgin olive oil

Steps:

  • Preheat the oven to the lowest setting possible.
  • Combine 4 cups flour and salt in the bowl of a stand mixer fitted with the dough hook attachment; turn mixer on low speed. Crumble yeast into small pieces and add to the flour. Slowly pour in water. Scrape the sides to make sure all flour is incorporated and mix until dough begins to pull away from the sides and form a ball. Drizzle in oil and mix until fully incorporated.
  • Knead on low speed for 5 or 6 minutes, adding 1 to 2 tablespoons extra flour if needed. Remove dough from the bowl and use your hands to form a ball. Return dough to the bowl and score the top with an "x." Cover with a damp cloth.
  • Turn oven off and place dough in the oven to rise for at least 1 hour, or up to 8 hours.
  • Remove dough from the oven and reattach the bowl to the stand mixer. Uncover and punch down dough. Knead on low speed for 5 minutes.
  • Meanwhile, place a pizza stone or tray on the bottom oven rack and preheat oven to 450 degrees F (230 degrees C).
  • Cut dough into 4 equal pieces and roll each one into ball. Dust with flour if needed. Place balls on a sheet pan and cover with a damp cloth. Roll out each ball into a 9-inch circle and top with desired toppings (no more than 1 cup sauce per pizza).
  • Place pizza on the pizza stone in the preheated oven. Immediately lower the temperature to 410 degrees F (210 degrees C) and bake for 10 to 12 minutes; actual length of time will depend on your toppings. Repeat to make remaining pizzas.

1 large bunch broccoli rabe, washed and coarsely chopped
4 tablespoons olive oil
1/4 teaspoon red chili flakes
3 cloves garlic, finely chopped
Salt and freshly ground black pepper
3/4 pound hot Italian sausage links, casings removed
2 tablespoons olive oil
2 cloves garlic, finely chopped
1 (32-ounce) can plum tomatoes coarsely chopped, no juice
2 teaspoons finely chopped fresh oregano leaves
2 tablespoons finely chopped fresh basil leaves
Salt and freshly ground black pepper
2 packages quick-rise dry yeast
2 cups warm water (90 degrees F)
1/4 cup vegetable oil
1/4 cup olive oil, plus more to oil the pans
1/2 cup yellow cornmeal
5 1/2 cups all-purpose flour
4 teaspoons kosher salt
4 tablespoons unsalted butter, slightly softened
1/2 pound aged provolone, coarsely grated
1/2 pound fontina cheese, coarsely grated
Sausage and Broccoli Rabe filling
Tomato Sauce
1/2 cup freshly grated Parmigiano-Reggiano

Steps:

  • Bring a large pot of salted water to a boil, add the broccoli rabe and blanch for 2 minutes. Drain in a colander and run cold water over. Drain well again and squeeze out excess liquid.
  • Heat 2 tablespoons of the oil, chili flakes and garlic in a large saute pan over medium heat and cook for 1 minute. Add the broccoli rabe, salt and pepper and cook until slightly tender, about 5 minutes.
  • In a separate large saute pan, heat the remaining 2 tablespoons of oil over high heat until the oil begins to shimmer. Add the sausage links and using a wooden spoon, gently break up the meat into coarse pieces. Cook until deep golden brown. (You do not need to cook all the way because it will continue to cook in the oven.) Combine the sausage and the broccoli rabe and let cool slightly.
  • Heat the oil in a medium saucepan over high heat. Add the garlic and cook for 30 seconds. Add the tomatoes and oregano, bring to a boil and cook until the mixture thickens, about 15 minutes. Stir in the basil and season with salt and pepper. Let cool slightly.
  • Dissolve the yeast and water in the bowl of a mixer fitted with the paddle attachment. Add the oils and mix for 30 seconds. Add the cornmeal, 3 cups of the flour and salt and beat for 5 minutes. Switch to the dough hook and mix in the remaining 2 1/2 cups of flour and knead, using the dough hook for 2 minutes. Add the butter and knead until incorporated. The dough is a very moist dough so do not add more flour unless absolutely needed.
  • Place the dough in a large bowl lightly oiled with vegetable oil, cover with plastic wrap or clean kitchen towels and let rise in a warm place until doubled in size, about 45 minutes. Punch down the dough and allow to double in size again.
  • Preheat the oven to 450 degrees F. Place 2 pizza stones into the oven to preheat as well. Generously oil 2 (9 or 10-inch) deep dish pie pans with olive oil (about 2 tablespoons for each pan).
  • Divide the dough in half and press the dough out slightly on the counter top. Place the dough in the prepared pans and push out to cover the bottom and up the side of the pans. (If using the 9-inch pans, pinch a 2-inch ball off each dough to make a better fit.)
  • Combine the cheese in a bowl. Place half of the cheese of the bottom of each pie crust. Divide the sausage filling over the cheese and then top with the remaining cheese, patting the cheese firmly down over the filling. Spoon some of the sauce over the top of the cheese to cover completely. Place the pans into the oven on the pizza stones and bake in the oven until golden brown, about 40 minutes. Remove from the oven and sprinkle the top with Parmesan. Let the pizza rest on a baking sheet for 5 minutes before slicing.

1 cup warm water (105°F to 115°F)
1 tablespoon sugar
1 envelope dry yeast
3 tablespoons olive oil
3 cups (or more) all purpose flour
1 1/2 teaspoons salt
1 tablespoon chopped fresh rosemary

Steps:

  • Combine water and sugar in a food processor. Sprinkle yeast over; let stand until foamy, about 10 minutes. Add oil, then 3 cups flour and salt. Process until dough comes together, about 1 minute.
  • Turn dough out onto floured work surface. Sprinkle with rosemary. Knead until dough is smooth and elastic, adding more flour by tablespoonfuls if dough is sticky, about 5 minutes.Lightly oil large bowl. Add dough; turn to coat with oil. Cover bowl with plastic, then towel. Let stand in warm draft-free area until dough doubles, about 1 hour. To test that the dough has risen sufficiently, push two fingers into it. The depressions should remain.
  • Punch down dough. Knead dough in bowl until smooth, about 2 minutes. Divide dough into 4 equal pieces. Stretch out each piece on floured surface to 9-inch round. To prevent the dough from sticking as you stretch it, use flour sparingly; too much will result in a tough crust.
  • Toppings
  • 3/4 cup olive oil
  • 6 tablespoons balsamic vinegar
  • 3 tablespoons minced garlic
  • 2 tablespoons chopped fresh rosemary
  • 1 pound spicy Italian sausages
  • 2 yellow or red bell peppers, cored, lengthwise
  • 1 large red onion, peeled, cut through root end into 1/2-inch thick wedges
  • Whisk first 4 ingredients in medium bowl. Let vinaigrette stand 15 minutes at room temperature or refrigerate up to 2 hours.
  • Prepare barbecue (medium heat). Arrange sausages, peppers and onion on baking sheet. Brush with some of vinaigrette. Sprinkle with salt and pepper. Grill sausages until cooked through and peppers and onion until slightly charred and crisp-tender, turning and basting occasionally, about 12 minutes for sausages and 8 minutes for peppers and onion.
  • Transfer sausages and vegetables to cutting board. Cut sausages into 1/2-inch pieces and peppers into thin strips.
  • Final preparation
  • 2 cups grated mozzarella cheese
  • 1/2 cup freshly grated Parmesan cheese
  • 2 cups crumbled chilled soft fresh goat cheese (such as Montrachet)
  • 4 plum tomatoes, halved, seeded, chopped
  • 3/4 cup chopped green onion tops Add coals to barbecue if necessary. Place 2 dough rounds on grill. Grill over medium heat until top of dough puffs and underside is crisp, about 3 minutes. Turn rounds over. Grill 1 minute. Transfer to baking sheet with well-grilled side up. This side of the dough becomes the surface that will hold the toppings.
  • Repeat with the remaining 2 dough rounds. Sprinkle each with 1/4 of mozzarella and Parmesan. Top each with 1/4 of sausage, peppers and onion, then with 1/4 of goat cheese, tomatoes and green onions. Drizzle each with 1 1/2 teaspoons vinaigrette.
  • Using large metal spatula, return 2 pizzas to grill. Close grill or cover pizzas loosely with foil. Grill until cheeses melt and dough is cooked through and browned, using tongs to rotate pizzas for Transfer to plates. Repeat grilling for remaining 2 pizzas.

ITALIAN DELI STYLE FRENCH BREAD PIZZA

One 2-foot-long French bread, cut in half lengthwise
2 tablespoons extra-virgin olive oil, plus more for drizzling
2 cups marinara sauce
8 ounces sopressata, thinly sliced
8 ounces hard salami, thinly sliced
1 1/2 cups grated Parmesan
Two 8-ounce balls smoked mozzarella, sliced
2 cups pitted Kalamata olives, chopped
8 pickled cherry peppers, drained and sliced
4 ounces ricotta salata
1 1/2 cups grated Pecorino-Romano
2 teaspoons red chile flakes
2 cups fresh basil leaves

Steps:

  • Preheat the oven to 450 degrees F.
  • Place the bread halves on a sheet tray. Drizzle the olive oil on each half of the bread, then spread on the marinara sauce evenly. Layer on the sopressata and hard salami by folding and overlapping the slices. Top with the Parmesan and smoked mozzarella.
  • Bake until the cheese is bubbling and the meat is very hot, 8 to 10 minutes. (Finish under the broiler if desired.)
  • Immediately distribute the olives and peppers evenly. Grate the ricotta salata over the top, then sprinkle on the Pecorino-Romano.
  • Sprinkle the chile flakes on top, and top with the fresh basil and a drizzle of olive oil. Cut each half into 8 slices. Serve immediately.

ok, I cannot tell a lie...I used Pillsbury ready pie crust to save time. But by all means feel free to make your own.
1 packet of active dry yeast
1 Tbsp sugar
1 tsp salt
2 c warm water
5-6 c all-purpose flour
2 Tbsp olive oil
FILLING
1/2 lb sweet Italian sausage (or hot if you prefer) removed from the casing
3 eggs, beaten
2 eggs, hard-boiled and chopped
1 lb ricotta cheese
1/3 lb fresh mozzarella, cut into bite size pieces
1/4 c grated Parmesan or Romano cheese
1/4 lb prosciutto (or American ham if you prefer), sliced and cut into 1 inch pieces
1/4 lb genoa salami, sliced and cut into 1 inch pieces
1/4 lb pepperoni, sliced and cut into 1 inch pieces
parsley flakes and pepper, to taste (you can add a little salt, to taste but remember the meats are salty so don't add too much salt)
1 egg yolk for egg wash

Steps:

  • 1. For the dough... In a large bowl, dissolve in two cups of water, yeast, sugar, and salt and gently blend.
  • 2. After the yeast has dissolved, add 5 cups of flour and 2 Tbsp olive oil. Blend with a spoon until the dough starts to form.
  • 3. Transfer dough to a floured surface and knead for about 5 to 10 minutes. (Add additional flour if the dough is too sticky.)
  • 4. Place dough in a large bowl and coat with a little olive oil. Cover and let rise for 2 hours.
  • 5. While the dough is rising, start to prep your ingredients by cutting meats and grating cheese. Brown the sausage breaking it up into small pieces with a wooden spoon.
  • 6. In a large bowl, add the three beaten eggs, ricotta, mozzarella, Parmesan, chopped eggs, meats, and seasonings. Mix well and set aside.
  • 7. After the dough has risen, punch it down and divide it into two pieces.
  • 8. Roll out one piece of the dough.
  • 9. Place the rolled out dough in a 10-inch springform pan sprayed with Pam. The dough should hang about an inch over the sides.
  • 10. Pour the filling into the pastry crust - mine filled to about an inch from the top.
  • 11. Roll the second piece of the dough and place the round crust on top of the filling. Cutaway any excess dough.
  • 12. Crimp around the edges - I used a fork. Cut two strips of leftover dough to make a cross. Place the dough cross on top of the Pizza Chena. Cut slits in dough to vent.
  • 13. Beat the egg yolk and brush on top of the Pizza Chena.
  • 14. Bake at 350 degrees for 60 - 75 minutes.
  • 15. Bake until golden brown and let cool. NOTE: Pizza Chena is best when made a day or two ahead of time. Let it cool and then store in the fridge. Bring to room temp before serving!

1 large sweet red pepper, halved
1/2 large red onion, cut into wedges
Salt and pepper to taste
2 prebaked Italian bread shell crusts (14 ounces each)
ADDITIONAL TOPPINGS:
1 cup (4 ounces) shredded mozzarella cheese
1/4 cup grated Parmesan cheese
1 cup crumbled goat cheese
2 plum tomatoes, halved, seeded and chopped
1/2 cup chopped green onions

Steps:

  • Combine olive oil, vinegar, garlic and rosemary. Pour half of the marinade into a small bowl, cover and refrigerate. Brush the remaining marinade over the sausages, peppers and onions. Sprinkle with salt and pepper. Discard any remaining marinade., Coat the grill grate with nonstick spray before starting. Grill over medium heat until sausages are no longer pink, about 12 minutes, and vegetables are crisp-tender, about 8 minutes., Transfer sausages and vegetables to a cutting surface. Cut sausages into 1/2-in. pieces and peppers into thin strips. Sprinkle each pizza crust with half the mozzarella and Parmesan cheeses. Top each with half the sausage, peppers and onions. Top each crust with half the goat cheese, tomatoes and green onions. Drizzle with the refrigerated marinade., Place pizzas on baking sheets. Bake at 375° for 8-10 minutes or until cheese melts and crusts are brown.

1 ¼ teaspoons salt
½ teaspoon fast-rising dry yeast
1 ½ cups ice water, or as needed
2 tablespoons olive oil
1 tablespoon granulated garlic
1 tablespoon Italian seasoning
½ teaspoon olive oil

Steps:

  • In a large bowl, mix the flour, salt, and yeast until thoroughly combined. Mix in ice water, scraping the bowl as you mix, until all the flour and water have been incorporated into a soft dough. Mix in 2 tablespoons of olive oil. Turn the dough out onto a floured work surface, and knead until the dough is firm but slightly sticky, mixing in more flour if needed. Knead the granulated garlic and Italian seasoning into the dough. (The kneading step can be done in a bread machine set on the Dough setting.)
  • Form the dough into a round, and place into an oiled bowl. Brush the top with 1/2 teaspoon of olive oil, cover the bowl with plastic wrap, and allow the dough to rise until double, 1 to 2 hours. Punch down the dough, and cut in half. Form each half into a 12-inch pizza crust, and place on pizza pans.
  • Move a rack to the bottom position in oven, and preheat oven to 450 degrees F (230 degrees C).
  • Bake the pizza crusts on the bottom rack just until firm, 3 to 7 minutes. Allow the crusts to cool for about 10 minutes before topping with sauce, cheese, or other desired ingredients and returning to oven to bake.

1 cup chopped onion
1 minced garlic clove
1/4 cup sliced mushrooms

2 cups spaghetti sauce
3/4 cup flour, divided
1 cup mixed shredded Italian cheese
1 egg
1/2 tablespoon olive oil
1/2 cup milk
1/4 teaspoon salt
1/4 cup shredded parmesan cheese

Steps:

  • Preheat oven to 400°F.
  • Brown sausage, onions, garlic, green pepper, and mushrooms in a skillet over medium high heat for 6-8 minutes until sausage is cooked, stirring frequently. Drain and return sausage mixture to warm skillet.
  • Stir 3 tablespoons flour into the sausage and vegetables and then add spaghetti sauce, mixing well. Bring to a boil stirring often. Pour into lightly greased 6x10 or 8x8 baking dish and top with shredded Italian cheese. A blend of Italian cheeses works well but use whatever you like or have on hand.
  • Beat egg and stir in milk, oil, salt until well blended. Stir in the remaining flour and parmesan cheese and mix well. It should be pourable and not a dough like biscuits so adjust with a bit more flour or milk as needed. Pour over sausage/cheese in casserole covering the entire top evenly. Sprinkle a little more shredded parmesan cheese on top if desired.
  • Bake, uncovered, 25-30 minutes until golden brown. Let stand 10 minutes before cutting into squares for serving.

½ pound bulk Italian sausage
olive oil
1 (1 pound) loaf frozen bread dough, thawed
½ pound sliced mozzarella cheese
½ pound sliced cooked ham
½ pound sliced provolone cheese
½ pound sliced salami
½ pound sliced pepperoni
1 (16 ounce) container ricotta cheese
½ cup grated Parmesan cheese
8 eggs, beaten
1 egg
1 teaspoon water

Steps:

  • Cook and stir Italian sausage in a skillet over medium heat, breaking the sausage into crumbles as it cooks, until well browned, 5 to 8 minutes. Drain excess grease; set sausage aside.
  • Preheat oven to 350 degrees F (175 degrees C).
  • Oil the bottom and sides of a 10-inch springform pan with olive oil.
  • Cut 1/3 of the dough off the loaf and set aside under a cloth. Form the remaining 2/3 dough into a ball and roll into a 14-inch circle on a floured work surface.
  • Line the springform pan with rolled dough, allowing dough to hang over the edge by 2 inches all around.
  • Layer half the cooked Italian sausage, half the mozzarella cheese, half the ham, half the provolone cheese, half the salami, and half the pepperoni into the pie crust.
  • Spoon and spread half the ricotta cheese over the layers of meat and cheeses.
  • Sprinkle half the Parmesan cheese over the ricotta.
  • Pour half the 8 beaten eggs over the layers; continue layering the remaining meats, sliced cheeses, ricotta cheese, and then Parmesan cheese.
  • Pour remaining beaten eggs over the last layer of Parmesan cheese.
  • Roll out remaining piece of bread dough to a circle about 12 inches in diameter; lay the piece over the pie to form the top crust. Roll and pinch the bottom crust overhang over the top crust to seal in the filling.
  • Beat 1 egg with water in a small bowl; brush the top of the pie with egg wash.
  • Bake pie in the preheated oven until the crust is golden brown and the filling is set, 50 to 60 minutes. A toothpick inserted into the middle of the crust should come out without raw egg.
  • Allow pie to cool in the pan for at least 25 minutes before releasing the spring and removing pie from the pan. Transfer to a serving platter and cut into wedges for serving.

1 Tbsp dried oregano
1 Tbsp nutritional yeast
1 Tbsp dried basil
2 tsp dried dill weed

2 tsp dehydrated onions crushed to a powder
1 tsp black pepper, freshly ground
1 tsp dried parsley
1/4 tsp white pepper, freshly ground
1/4 tsp salt, kosher variety, fine grind
1/4 tsp mustard powder, i prefer coleman's
OPTIONAL INGREDIENTS
1/4 c powdered milk
1 Tbsp dried marjoram
1 Tbsp dried rosemary, crushed
1 Tbsp crushed red pepper flakes

  • 2. OPTIONAL INGREDIENTS Many pizza makers add a bit of powdered milk to their dough. It mellows out the flour taste and makes for a more delicate crust. The marjoram and rosemary just give it a bit more of an Italian flavor, and the pepper flakes are for some kick.
  • 3. Storage of homemade condiments and spices Because homemade spices and condiments do not contain any preservatives, it is important to store them properly. Non-reactive (glass) containers with tight-fitting lids are a must. If I am making a dry spice, I love to use old spice bottles that I have run through the dishwasher. If I am doing homemade sauces, I love using Weck jars. They are all glass, come in all sizes and shapes, and have excellent leakproof lids. If you shop online, you can go to Amazon, and type in "Weck Jars" and you will find a ton of them. Dry spices should be kept in a cool space, away from sunlight (spice cabinet), and sauces, in most cases, should be stored in the fridge. If properly stored, this spice mix should last 6 - 8 months.
  • 4. Gather your ingredients (mise en place).
  • 5. Add all the ingredients together, and then store, as mentioned above.
  • 6. Make your pizza dough, then add a teaspoon or two of this seasoning to the dough as you are kneading it.
